Purpose – Investigating the drivers of consumers’ behaviour towards purchasing in short food supply chains (SFSCs) and clarifying their relationships, the purpose of this paper is to test the theory of planned behaviour (TPB) in order to predict the intention and the behaviour under investigation. Design/methodology/approach – The research includes a literature review of SFSCs. To investigate all the variables (attitudes, subjective norms (SN), perceived behavioural control (PBC) and intention) underlying consumers’ behaviour towards buying in SFSCs, an exploratory survey with a TPB questionnaire and a principal component analysis have been carried out among university students in Italy. Using a system of simultaneous equations, the relationships among variables have been measured. Findings – Findings illustrate that both attitudinal variables (i.e. sustainability, typicality and loyalty), SN and PBC play a key role in the consumers’ intention, that has a predictive effect on behaviour instead of PBC. Originality/value – This paper fulfils the purpose to explain and predict post-modern consumers’ preferences towards SFSCs, in order to orient policy strategies to support SFSCs.

Purpose The aim of this paper is to study the influence of quality standards on contract arrangements in food supply chains. Design/methodology/approach A qualitative double case study was conducted on the dairy and citrus sectors in Uruguay. A transaction cost theoretical framework was used. All current public and private quality standards applied by processors were studied in relation to contract arrangements between processors and upstream producers as well as downstream buyers for each sector. Findings Quality standards complement contract arrangements for upstream transactions, leading to hierarchy-type contract arrangements. Quality standards substitute contract arrangements for downstream transactions, leading to market- or hybrid-type contract arrangements. Research limitations/implications Longitudinal studies that measure changes in contract arrangements over time are recommended. Practical implications Supply chain actors can reduce transaction costs by aligning quality standards with appropriate contract arrangements – further supported by public instruments. Originality/value Quality standards have differential influence on underlying transaction characteristics, and therefore on contract arrangements, depending on the location of the transaction in the supply chain.

Purpose The purpose of this paper is to investigate the manifestations and interactions at work between the ecological, environmental and social dimensions of sustainable development and the development of short food supply chains (SFSCs) in French fruit production. Design/methodology/approach The methodology is based on the theoretical framework associated with SFSCs and each pillar of sustainability. The authors use an original database of 176 surveys of peach and apricot producers from the major French production regions. Three composite indicators, one for each traditional pillar of sustainability, are calculated to evaluate a degree of sustainability at farm level. A simultaneous equations model is estimated on the basis of the calculated indicators. Findings The results show that in the choice of a supply chain design in the agricultural sector, the search for economic sustainability is opposed to a rationale of environmental and social sustainability, the latter appearing to be independent of one another. Originality/value This paper complements the previous studies on the issue of sustainability in agriculture and more specifically the relationship between the adoption of SFSCs and the pillars of sustainable development. The model reveals significant interdependencies, thus emphasizing an issue in reconciling economic imperatives with social or environmental requirements.

Purpose Despite the increasing consumers’ intent to support short food networks, the expansion of short food supply chains (SFSCs) remains limited. The purpose of this paper is to identify potential antecedents of farmers’ willingness to participate in SFSCs. Design/methodology/approach Using data from a sample of Greek farmers the authors examined whether farmers’ citizenship behaviour, the levels of their perceived competencies and the degree to which they feel accepted by their communities affect their willingness to engage in SFSCs. Findings Results indicate that producers’ citizenship behaviour does indeed have a positive impact on willingness to participate in SFSCs, whereas their perceptions of the acceptance they enjoy within their communities also significantly predict this willingness. On the contrary, self-perceived lack of communication and collaboration competencies diminishes this willingness. Originality/value To the best of our knowledge, this study is one of the first attempts to explore the role of farmers’ competencies in their willingness to participate in SFSCs. In addition, by integrating concepts derived from multiple disciplines, our work adds new factors in the wide spectrum of forces that impel or suppress farmers’ willingness to take part in alternative food distribution networks.

Whereas population is showing increasing distrust rates in the regular agri-food system, Alternative Food Networks (AFN) are gradually gaining space. This paper analyses the role of a specific kind of AFN, Short Food Supply Chains (SFSCs) and its contribution to the restoration of consumers’ trust in Spain. An online survey (n= 423) focus on trust and concern over food safety was conducted. The survey was addressed to very concerned and active consumers, which are interesting because they represent a powerful consumers’ profile from the policies point of view. Principal Component Analysis (PCA) studied consumers’ preferences on the different SFSC categories. This paper draws a map that signals which of SFSC attributes (such as labelling, common values or direct contact with producers) are more relevant in order to build consumers’ trust. In addition, this paper offers a classification of SFSC consumers according to their priorities. The information provided by the article offers ideas to policy makers and producers for designing their marketing strategies according to different consumers’ demands.

PurposeThe purpose of this paper is to identify major research topics and propose future research directions for the short food supply chains (SFSCs) by conducting a comprehensive bibliometric analysis.Design/methodology/approachA step-by-step literature review was performed. A total of 684 scientific papers were retrieved from Scopus, dated between 2000 and 2020. Then, content analysis was conducted based on 162 articles selected from the co-citation analysis. Bibexcel and Gephi software were employed to analyse, integrate and visualize the data.FindingsThe results of the descriptive analysis provided insights into publication trends, prominent countries, institutions and journal sources, which had not been fully captured or evaluated by previous reviews. In the citation analysis, the authors determined the highly cited papers based on the global citation. Additionally, in the co-citation analysis, the authors derived six research clusters, identified research gaps in each of six clusters and then suggested possible future research directions.Originality/valueAlthough several reviews have focused on certain aspects of SFSCs, a comprehensive review has been lacking. This study is among the first to comprehensively examine the knowledge structure of SFSCs research by using rigorous bibliometric analysis. More importantly, the future lines presented here offer potential insights for SFSCs researchers and policymakers.

Purpose The purpose of this paper is to get a consumer’s cross-cultural insight on the potential of using social networking sites as short food supply chains. Design/methodology/approach A qualitative approach, using free listing tasks and sentence completion techniques, was adopted in this research. The research group decided to apply the study in three countries with different cultural backgrounds, namely, Mexico, Spain and Egypt. The final sample consisted of 424 respondents in total, including 209 Spanish, 111 Mexicans and 104 Egyptians, all of them actual users of social networks. Findings The most significant result that emerges from this study is that a high percentage of consumers within the three countries might be interested in these new short food chains. Also, the study offers food companies the most relevant motivations and barriers of consumers for their engagement to this initiative. Also, the study provides categories of foods that consumers would purchase via these chains in each country. Originality/value The multicultural perspective of this study might open new opportunities for food businesses around the world, especially for SMEs, to develop new short food supply chains enabling them to increase sale levels and, therefore, increase profitability and reduce costs.

ZusammenfassungShort Food Supply Chains (SFSC), also kurze Wertschöpfungsketten im Lebensmittelbereich, sind ein verbreiteter Ansatz in der Regionalentwicklung – im ländlichen wie auch im städtischen Kontext. Aufgrund der Breite des Konzeptes sind empirische Belege für die regionalen Auswirkungen von kurzen Ketten jedoch uneindeutig und ihrem konkreten Aufbau stehen teilweise große Herausforderungen gegenüber. Im vorliegenden Text werden Direktvermarktung, Regionalvermarktungsinitiativen und regionalisierte vertikale Wertschöpfungsketten behandelt. Der Text fasst Ergebnisse einzelner Fallstudien zusammen, die zwischen 2015 und 2019 in 6 ländlichen Kreisen durchgeführt wurden. Im Text werden Herausforderungen für die Entwicklung dieser kurzen Ketten skizziert und mögliche Chancen aufgezeigt. Der Ausbau von alternativen Vermarktungswegen kann beispielsweise durch Infrastruktur im Bereich der Lagerung und Logistik unterstützt werden. Ein weiteres zentrales Ergebnis stellt die Notwendigkeit von Netzwerkvermittlern dar, die Kooperationen zwischen Produzenten innerhalb einer Region entlang vertikaler Wertschöpfungsketten begleiten bzw. initiieren.

In Romania, there is an emerging market of dairy products delivered through short food supply chains. Although this distribution system has existed since the communist period, and even though more than three decades have passed since then, the market fails to be mature, subject to taxation, or achieve a high diversity in terms of dairy categories, with a consolidated marketing culture that has significant effects on the regional socio-economic environment. The aim of this study was to observe whether the Corona Virus Disease of 2019 (COVID-19) crisis has influenced consumer behavior regarding dairy products delivered directly from producers in Suceava County, Romania. The research is based on a survey conducted between April and May, 2020, and the analysis relies on both quantitative and qualitative methods (namely, anthropological and ethnographic). From the provided responses, it a change was observed in the future buying behavior on short food supply chains, in a positive sense. One of the key findings was that family represents the main environment for passing on the values that influence the buying behavior. Another key finding was that the behavioral changes on the short food supply chains exert pressure on their digital transformations.

PurposeThe purpose of this study is to explore food producers' motivations and challenges whilst participating in short food supply chains (SFSCs). This paper compares findings with previous literature and investigates the topic in the context of producers' motivations.Design/methodology/approachThe paper includes a literature review concerning producers' motivations to engage in SFSCs. A case study was designed to investigate motivations underlying producers' engagement in SFSCs, as well as the challenges that they face. Semi-structured interviews were conducted in a farmers' market located in Mexico. Thematic analysis is used to identify the principal issues for producers'. Propositions based on findings are presented.FindingsFindings suggest that small, large, part-time and full-time producers are willing to engage with farmers' markets for diverse primary economic and non-economic motivations. Individual and collective challenges were also identified.Originality/valueThis research helps to explain producers' motivations and challenges within SFSCs in an under-researched context, namely a focus on producers' and in the Global South.
