In this research, recipes were developed for beverages and desserts based on ”Vitalgar Cardio”, abiogelthat contains alginate, has therapeutic and prophylactic properties, and was produced from laminaria at the SPC ”Vita-Li” LLC. ”Vitalgar Cardio”, in its liquid form, as well as desserts based on it, is a source of soluble dietary fiber (alginates) and chemical elements such as potassium, magnesium and iodine, and is an adsorbent of various toxins, including radionuclides and heavy metals. The developed products have traditional appeal, with a focus on healthy nutrition, which is currently being promoted among the population. Keywords: Lamibaria, Alginate, Fucoidan

Health indicators of the population depend significantly on the food quality and nutritional value. Simple carbohydrates excess of and lack of protein, dietary fiber, vitamins, minerals, antioxidants and other physiologically active substances increase the risk of socially significant disease progress. The development and production of mass-consumed products with high nutritional and biological value, including affordable non-traditional raw materials use, are promising areas of the food industry development aimed at improving the nutritional status of the population. The article presents the research results on the developed Noodle products recipes from non-traditional raw materials that meet modern healthy nutrition requirements, intended for dietary treatment and dietary prevention of people with overweight / obesity. The research aimed at expanding the range of macaroni products with these characteristics. As the main raw material, a man selected whole-wheat flour – new spelt flour, and as additional raw materials – buckwheat flour, broccoli and celery powders. The researchers found that the introduction of macaroni products from buckwheat spelt, broccoli and celery powders into the recipe had a multidirectional effect, reducing or increasing various indicators of its nutritional value. The changes range did not affect the overall characteristics. The satisfaction degree of the average daily need for food substances and energy when consuming a portion of 100 g for each sample of developed Noodle products allows them to be classified as functional products that are protein and dietary fiber sources, according to the requirements of the TR CU 022/2011.

Introduction. Intensive exploration and processing of mineral raw materials in the Trans-Baikal territory has caused the accumulation of considerable amount of industrial mining waste with high content of chemical elements of different classes of hazard. Currently 33 tailings storage facilities (TSF) accumulating approximately 3 milliard tons of different industrial waste are located in the territory of the region. The aim of the research is the hygienic assessment of soil contamination in the residential areas adjacent to TSFs. Material and methods. Atomic absorption spectrophotometry method was used for the determination of heavy metals. The study presents the results of analyses of 444 samples of gross content of lead, zinc, copper, mercury, arsenic, and cadmium in the soil of Khapcheranga, Sherlovaya Gora, Kadaya, Vershino-Darasunsky, and Vershino-Shakhtaminsky mining villages throughout the duration of 2012 - 2015. Results. During the period of the study the total value of soil contamination with Zc calculated by the median concentrations in Khapcheranga Village amounted to 4.7 6.9, in Vershino-Shakhtaminaky - to 6.7 8.8, which corresponds to the «allowable» level of the contamination. Zc calculation by maximum concentrations has shown the soil to be referred to the category from “moderately dangerous” to “extremely dangerous”; this value in Khapcheranga Village amounted to 48.7 - 235.3, in Vershino-Shakhtaminsky Village - to 23.76 - 164.8. Discussion. In the residential areas the allowable degree of soil contamination was determined to be predominantly observed; Khapcheranga and Vershino-Shakhtaminsky villages are the exceptions. The results of the assessment give the evidence of tge increased lead, cadmium and arsenic content throughout the entire area of the villages, while the highest levels of accumulated toxic substances are registered in the areas located near the TSF Conclusion. Thus, several zones of natural and anthropogenous contamination with increased concentrations of heavy metals and arsenic have been formed in the Trans-Baikal Territory. This dictates the need to study the influence of geochemical anomalies on the health of population.

Legumes have high nutritional value and they are important sources of protein, carbohydrates, fats and dietary fiber. The contamination of legumes with pesticides and heavy metals has been reported in scientific literature. Human beings are mainly exposed to the residues of pesticides and heavy metals through the dietary route. The purpose of this review chapter is to highlight the acute and chronic health risks that human beings may be exposed to as a result of the ingestion of legumes polluted with pesticides and heavy metals. Additionally, the mechanisms through which pesticides and heavy metals engender different undesirable health outcomes in human beings were stated. Scientific literature were perused and the information contained in them were collated to derive this chapter. Pesticides cause short-term health effects including hypersensitivity and mortality, while heavy metals induce acute effects like seizures and death. Some chronic untoward effects of pesticides are congenital disabilities and neurological damage. Heavy metals elicit disorders like anemia, hypertension and cancer. It is envisaged that the findings documented in this review will create awareness of the health risks posed by the contamination of legumes with the residues of pesticides and heavy metals so that food safety measures can be enforced globally.
