Evaluation of biochemical characteristics of 8 perennial Allium species is achieved (A. ramosum, A. caeruleum, A. erubescens, A. obliquum, A. moly, A. aflatunense, A. oreophilum and A.ursinum). High nutritional significance of separate decorative species is demonstrated. A. caeruleum is shown to be a leader in the accumulation of ascorbic acid (more than 9000 mg/100 g d.w.) and polyphenols (more than 8000 mg GAE/kg d.v.). Detected ascorbic acid concentration range for 8 studies Allium species was 568 (A. ramosum) – 9980 (A. caerulum) mg/100 g d.w.; polyphenols 1392 (A. obliquum) – 8582 (A. caerulum) mg GAE/kg d.w.; water-soluble compounds 28 (A. aflatunense, A. obliguum) – 69 (A. ramosum) mg/kg d.w.; chlorophyll 0.54 (A.oreophilum) – 1.69 (A. ursinum) mg/100 g d.w.; carotene 0.07 (A. oreophilum) – 0.25 (A.ursinum) mg/100 g d.w.; selenium 72 (A. ursinum) – 245 μg/kg d.w., (A. ramosum). Adequate consumption level of vitamin C may be provides by 6.2 g of A.caerulum leaves. Antioxidant activity of Allium species alcoholic extracts composed a range from 1.5 (A. obliquum) to 6.4 (A. ursinum) mg GAE/g d.w. A. ramosum and A. oreophilum demonstrated the highest content of total soluble solids. The highest content of photosynthetic pigments happened to be typical for A. ursinum. The ratio between antioxidant activity of alcoholic and water extracts of Allium leaves was in the range between 0.89 and 2.21 depending on plant species: the highest value was registered in leaves of A. ursinum, the lowest – in leaves of A. ramosum. In a whole the highest content of antioxidants was demonstrated for leaves of A. caerulum. The highest levels of photosynthetic pigments and antioxidant activity of alcoholic extracts were indicated in leaves of A. ursinum.

The article presents the results of studies of the chemical composition, commercial qualities and taste of berries of promising strawberry varieties breeding of the All-Russian Horticultural Institute for Breeding, Agrotechnology and Nursery (Moscow) in the conditions of the Orenburg Urals. The studies were carried out in 2016-2018 on the basis of the Orenburg Experimental Station of Horticulture and Viticulture of the All-Russian Horticultural Institute for Breeding, Agrotechnology and Nursery in specific conditions, where almost annually dry and moderately dry climatic periods were observed during the formation of the yield (May-June). A comparative evaluation of varieties on the content of sugars, acids, vitamin C in berries, taste and attractiveness of appearance is given. The dependence of the studied parameters on the genotype of the variety and vegetation conditions was established. Depending on the variety and year, the content of soluble solids varied from 7.2 to 10.2 %, with an average content of 8.9 %; total acidity varied from 0.8 to 1.2 %, with an average content of 1.0 %; the content of ascorbic acid (vitamin C) was from 45.1 to 78.5 mg/100 g, with an average content of 56.4 mg/100 g. Varieties with high parameters of tasting evaluation (Darenka, Kokinskaya Zarya, Studencheskaya), soluble solids (Rosinka, Studencheskaya) and ascorbic acid (Kokinskaya Zarya, Bereginya) were revealed. They are recommended to be grown to obtain fresh consumption products and as processing products of various directions. Bereginya, Darenka and Rosinka varieties surpass control varieties in certain biochemical parameters and can be used in breeding in the Urals region to obtain new genotypes with an increased content of a specific biologically active substance. The variety Tsaritsa is selected for high commodity qualities of berries (weight, dessert taste, attractiveness of appearance) and is recommended for commercial production of berries and involvement in breeding process. It has been established that the taste of berries is determined by a complex of acids, sugars and aromatic substances. This parameter was greatly influenced by weather conditions, from which air temperature and precipitations were determining.

Abstract The aim of this study was to evaluate the influence of organic and conventional cultivation systems and the cultivars on the postharvest quality, antioxidant activity and acceptability of strawberries. Strawberries of the cultivars Albion, Monterey and San Andreas were analysed with respect to the soluble solids content (SS), titratable acidity (TA), SS/TA ratio, fruit colour, vitamin C content, antioxidant activity by the DDPH method, mineral composition and acceptability. The cultivation systems and cultivars had different influences on the SS, TA, pH, SS/TA and colour of the strawberries. The vitamin C content of cv. Monterey was higher (78.68 mg ascorbic acid 100 g-1) than that of cv. San Andreas (70.28 mg ascorbic acid 100 g-1) in the conventional system, while in the organic system, the cultivars did not differ. Differences were not observed amongst the cultivars and cultivation conditions for antioxidant activity and the cultivation systems and cultivars had no effect on the P, Cu and Mg mineral contents. The conventionally cultivated strawberries of cv. Monterey obtained the highest value for acceptance (7.51) while the organically cultivated strawberries of cv. San Andreas received the lowest value (6.58).

Abstract The objective of this work was to evaluate the influence of the use of UV-C radiation at an intensity of 0.53 KJ m-2, during strawberry (Fragaria x ananassa) cultivation, on the physicochemical and phytochemical parameters of the fruits. The used experimental design was completely randomized, in a single-factor arrangement with 11, 19, 29, and 39 UV-C applications and without UV-C application. The hue of the fruits was smaller at the end of the study period. pH varied in strawberries that received 39 applications of UV-C, and the soluble solids content differed with 19 applications. Antioxidant activity was lower in fruits with 11, 19, and 29 UV-C applications, whereas vitamin C content was lower only in fruits that received 29 applications. The use of UV-C radiation at an intensity of 0.53 KJ m-2, during strawberry cultivation, affects the physicochemical and phytochemical parameters of the fruits, but does not cause losses in their quality.

This research was aimed at investigating the concentration of Ascorbic Acid (Vitamin C) in some commercial fruits juices: ‘5’ Alive, Hollandia yoghurt, Nutri milk, Ribena, Lacasera, Happy hour, Viju milk, Chi exotic and Chi vita sold in Ugbokolo, Benue State, Nigeria by titrimetric method using 2,6-dichlorophenolindophenol (DCPIP) as titrant. The ascorbic acid (AA) content in milligram per 100ml of the various juices investigated is in the order: ‘5’ Alive (11.25) > Ribena (5.47) > nutri milk (5.31) > Happy hour (4.38) > Hollandia yoghurt (1.25) > Lacasera (0.47) ≈ Chi exotic (0.47) >Viju milk (0.31) > Chi vita (0.16). It was observed that half a litre of ‘5’ Alive (56.25 mg AA) a day is suitable for adults and pregnant women, a liter each of Ribena  (54.70 mg AA) and Nutri milk (53.10 mg AA) per day for adults, while a litre of Happy hour (43.80 mg AA) per day is suitable for adolescents. It can be concluded that commercial fruits juices when taken in large amount will add to the daily human dietary intake of the vitamin.

Quality parameters of 5 table root varieties were tested on 3 sowing dates with different cultivation methods: open field on 15 April and 9 July 2010 and under plastic tents on 19 August. The highest red pigment content (betanin) was measured in the varieties Akela and Mona Lisa (~ 80 mg 100 g-1) of the second (July) crop. This crop is in general use in Hungary. In comparison, in the late sown varieties (August, under plastics) a further pigment increase (10–20 mg 100 g-1) was observed in the same varieties as related to the earlier sowing dates. Yellow pigments (vulgaxanthins) showed similar trends. Roots of the late sowing date (with harvest in December) contained the highest vulgaxanthin values (103.3–124.18 mg kg-1).Varieties reacted differently to temperature changes during the production period and thus to sugar accumulation. In the second crop (July) higher water soluble solids content was measured on the average of varieties (10.12%) in comparison to the April sowing (7.76%). Beetroots of the spring sowing are recommended for fresh market while the second (July) crop with autumn harvest can satisfy industry requirements. Late sowing under unheated plastic tents supply us with fresh beetroot in late autumn and early winter and prolong the usability of plastic tents. Six lettuce species/subspecies were tested in the open field and under plastic tents in 3 repetitions for nitrate nitrogen, vitamin-C, polyphenol (gallus acid equivalent – mg GAE 100 g-1) and mineral element (Ca, K, Mg, Na) contents. Our measurements showed lower nitrate nitrogen values under plastic than in the open field (89.10± 8.13 and 127.06±14.29 mg kg-1) on the average of genotypes. Lettuce grown in the field had higher vitamin-C content (1.4 mg%) which is nearly 50% more than in plants under plastic. The highest polyphenol content was found in samples from the field with a conspicuous value of 804.17±56.47 mg GAE 100 g-1 in Piros cikória. Samples grown under plastic were richer in mineral elements (Ca, K, Mg, Na) which can be explained by the higher nutrient content of the soil. In this environment superior Mg content was observed in Edivia (4616.33±311.21 mg kg-1).  Besides the well- known headed lettuce, Piros cikória (Red chicory),the red leaved Lollo Rossa and Tölgylevel (Oak leaf lettuce) should bementioned which well deserve further testing in order to supply us with nourishing, healthy food.

The article presents data on the study of the effect of foliar water-soluble mineral fertilizer NOVATEK Solub K-Max 10-5-30 on the biochemical composition and commercial quality of apple fruits. A rise in vitamin C from the introduction of NOVATEK at a rate of 2.5 kg/ha indicates the effectiveness of this drug for optimizing the content of ascorbic acid in fruits. An increase in the content of monosaccharides and a decrease in disaccharides were found for all the studied rates of consumption of agrochemicals. The use of mineral fertilizer “Novatek Solub K-Max” contributed to increase the dry weight of fruits. The application of this mineral fertilizer is recommended for inclusion in the industry regulations for Apple cultivation as one of the elements of the technology.

This study aims to determine the effect of boiling time to the characteristics of loloh don piduh (Centella asiatica L.) and the appropriate boiling time to produce loloh don piduh with the best characteristics. The experimental design used was a complete randomized design with 6 treatment levels: T1 (25 minutes), T2 (40 minutes), T3 (55 minutes), T4 (70 minutes), T5 (85 minutes) and T6 (100 minutes). The treatment was repeated 3 times to obtain 18 units of experiment. The data obtained were analyzed by variance and if the treatment had an effect on the observed variable then continued with Duncan test. The boiling time had a very significant effect on antioxidant activity, vitamin C levels, and the level of panelist preferences for taste and overall acceptance of loloh don piduh. Boiling time had a significant effect on total soluble solids (TSS) of loloh don piduh. Boiling time had no significantly affect on panelist preferences for the color and flavor of loloh don piduh. 25 minutes boiling time had produced loloh don piduh with the best characteristics of: antioxidant activity 90,82%, vitamin C levels  0,11%, total soluble solids (TSS) of 2o brix, panelist preferences for color, flavor, taste, and overall acceptance was preferred.

Background: This study is designed to discover a method for delivering an efficient potent pheophytin a (pheo-a) into more absorbed and small polymeric ethyl cellulose (EC) microparticles. Methods: Silica gel and Sephadex LH-20 columns were used to isolate pheo-a from the chloroform extract of the edible plant, Suaeda vermiculata. Pheo-a was incorporated into EC microparticles using emulsion-solvent techniques. The antioxidant activity of pheo-a microparticles was confirmed by the level of superoxide radical (SOD), nitric oxide (NO), and reducing power (RP) methods. Meanwhile, the cytotoxic effect of the product was investigated on MCF-7 cells using MTT assay. Results: Pheo-a was isolated from S. vermiculata in a 12% concentration of the total chloroform extract. The structures were confirmed by NMR and IR spectroscopic analysis. The formulated microparticles were uniform, completely dispersed in the aqueous media, compatible as ingredients, and had a mean diameter of 139 ± 1.56 µm as measured by a particle size analyzer. Pheo-a demonstrated a valuable antioxidant activity when compared with ascorbic acid. The IC50 values of pheo-a microparticles were 200.5 and 137.7 µg/mL for SOD, and NO respectively. The reducing power of pheo-a microparticles was more potent than ascorbic acid and had a 4.2 µg/mL for IC50 value. Pheo-a microparticles did not show notable cytotoxicity on the MCF-7 cell line (IC50 = 35.9 µg/mL) compared with doxorubicin (IC50 = 3.2 µg/mL). Conclusions: the results showed that water-soluble pheo-a microparticles were prepared with a valuable antioxidant activity in a wide range of concentrations with a noteworthy cytotoxic effect.

Reactive oxygen species (ROS) are physiologically involved in functions like sperm maturation, capacitation and acrosome reaction, but their excess is involved in male infertility. Antioxidants in seminal plasma (SP) are an important factor balancing physiologic and harmful ROS activities. In this study, we determined and compared the full profiles of the water- and fat-soluble antioxidants in SP and serum of 15 healthy fertile subjects (ranging between the ages of 35 and 42 years). Ejaculates were obtained after 2–5 days of sexual abstinence. After liquefaction and withdrawal of an aliquot for the sperm count, samples were centrifuged to obtain SP. Thirty min after semen donation, a venous blood sample was collected from each subject. Donors with lower SP concentrations of ascorbic acid (n = 5) or α-tocopherol (n = 5) received a 4 week oral administration of either vitamin C (100 mg/day) or vitamin E (30 mg/day). They were then re-assayed to determine the SP and serum levels of ascorbic acid and α-tocopherol. SP and serum samples were properly processed and analyzed by HPLC methods suitable to determine water (ascorbic acid, glutathione (GSH) and uric acid) and fat-soluble (all-trans-retinoic acid, all-trans-retinol, α-tocopherol, carotenoids and coenzyme Q10) antioxidants. Data demonstrate that only ascorbic acid is higher in SP than in serum (SP/serum ratio = 4.97 ± 0.88). The other water-soluble antioxidants are equally distributed in the two fluids (GSH SP/serum ratio = 1.14 ± 0.34; uric acid SP/serum ratio = 0.82 ± 0.12). All fat-soluble antioxidants are about 10 times less concentrated in SP than in serum. In donors treated with vitamin C or vitamin E, ascorbic acid and α-tocopherol significantly increased in both fluids. However, the SP/serum ratio of ascorbic acid was 4.15 ± 0.45 before and 3.27 ± 0.39 after treatment, whilst those of α-tocopherol were 0.11 ± 0.03 before and 0.10 ± 0.02 after treatment. The results of this study, by showing the peculiar composition in water- and fat-soluble antioxidants SP, indicate that it is likely that still-unknown mechanisms allow ascorbic acid accumulation in SP against a concentration gradient. SP mainly relies its defenses on water- rather than fat-soluble antioxidants and on the mechanisms ensuring their transfer from serum.

Nowadays, the number of studies about fruit conservation as well as the benefits of consumption of foods rich in antioxidant compounds was increased. This study aimed to quantify antioxidant compounds and their activity and to evaluate the physical and chemical changes during the post-harvest storage of Eva's apple cultivars that were subjected to gamma irradiation at doses of 0; 0.5; 1.0 and 1.5 kGy. The antioxidant activity was measured by the 2.2-diphenyl-1-picrylhydrazyl (DPPH) and the β-carotene/linolenic acid methods. Levels of total phenolics, ascorbic acid, color, and soluble solids were evaluated. The results showed that, regardless of the irradiation dose, there was an increase in % SRL during post-harvest storage of Eva's apples. Low irradiation doses were able to preserve the phenolic compounds, maintain the ascorbic acid levels and avoid an increase in the soluble solids content.
