The current review investigates how whitefish quality is affected by capture at sea, on board handling, freezing, double freezing, frozen storage, thawing, and chilled storage. Packaging of fillets in MAP and vacuum are also covered. The main goal was to evaluate the freeze-chilling concept as a possible method for the fishing industry for all-year-round marketing of fish captured during the relatively short fishing period. The review covers both the effect of each processing step in the supply chain as well as the combined effect of all steps in the chain from sea to consumer, including post-thawing chilled storage, defined as the freeze-chilling method.

<p align="center"><strong><em>ABSTRACT</em></strong></p><p><em>Designing and managing Industrial capture fisheries Supply Chain is complex and its faces socially bound uncertainties such as poor collaboration, communication and information sharing. Such complexity cannot be reduced through quantitative supply chain design and management techniques.  The aim of this study was design an industrial capture fisheries supply chain in Maluku Province using Soft System Methodology. </em><em>Multi Dimensional Scaling (MDS)and SCOR was applied in analyzing situational conditions related to the sustainability and performance of industrial capture fisheries. Analysis on capture fisheries shows in less sustainable category (43.91)and </em><em> </em><em>the performance of both fishermen and company indicate an excellent and good grade. </em><em>S</em><em>SM analysis generated root definitions:</em><em> </em><em>Ministry of Marine Fisheries, Department of Marine, regional institution and stakeholder of the supply chain (O) realize the sustainable fishing industry and implementation of reliable activities in the fisheries sector and competitive globally (W) which integrates all the units along supply chain and coordinate the flow of materials, information and finance ranging from such aspects : production, downstream industries (handling and processing), up to marketing (T) of the Fishermen, industries processing (C) on the entire supply chain through  effective and efficient mechanism (E) as well as coordination both center and regional institution (A) related to quality and standardization of fishery products, distribution, infrastructure, data and information on fisheries (T)". Penelitian ini bertujuan mendisain model manajemen rantai pasok industri perikanan tangkap yang ideal di Propinsi Maluku. <em>Soft System Methodology</em> (SSM) digunakan sebagai pendekatan kajian yang didukung oleh <em>Multi Dimensional Scalling</em> (MDS) untuk mengukur keberlanjutan industri perikanan tangkap dan <em>Supply Chain Operation Reference</em>(SCOR) untuk menganalisis kinerja industri perikanan tangkap.  Hasil penelitian menunjukkan bahwa keberlanjutan industri perikanan tangkap berada pada kategori kurang berkelanjutan dan kinerja<p class="Abstrakisi">nelayan dan perusahaan berada pada kategori sangat baik dan baik. Analisis SSM menghasilkan <em>root definition</em> “Kementerian Kelautan Perikanan, Dinas Kelautan, PEMDA dan pelaku rantai pasok (O) mewujudkan industri perikanan tangkap yang berkelanjutan dan terselenggaranya aktivitas  di sektor perikanan yang andal dan mempunyai daya saing secara global (W) yang mengintegrasikan  semua unit dalam rantai pasok dan mengkoordinasikan  aliran material, informasi dan keuangan mulai dari aspek produksi, industri hilir (<em>handling dan processing</em>), hingga ke pemasaran (T) dari para Nelayan, industri-industri pengolah (C) pada seluruh rantai pasok  melalui mekanisme yang efektif dan efisien (E) serta koordinasi kelembagaan pusat dan daerah (A) terkait mutu dan standardisasi produk perikanan, distribusi, sarana prasarana, infrasrtuktur serta data dan informasi perikanan (T)”. Model manajemen rantai pasok industri perikanan tangkap di Propinsi Maluku dibangun atas 20 aktivitas. The objectives of this research were to find the porang glucomannan-xanthan optimum ratio on composite gelation and its stability after chilled and frozen storage. Porang glucomannan sol was mixed with xanthan sol in ratio 20/40; 40/60; 50/50; 60/40 and 80/20. The composites were heated for 45 minutes at 90 °C with agitation for 5 minutes, molded, tempered, and stored at 5 °C dan -8 °C for 24 days. Before dan after storage, the texture profile, WBC and sineresis of the gel were analyzed. The composite gel microstructure was analyzed using SEM. The composite gel with ratio 20/80 had the optimum interaction synergy on gelation and stability. The GP-X intermolecular association resulted in long high density junction zones which had highest hardness, chewiness and gumminess with the smallest deformation degree and sineresis as well as medium cohesiveness. Despite of no sineresis after chilled storage, the smaller gel pores indicated that the composite gel began to contract and degrade which resulted in cohesiveness, chewinees, hardness and gumminess decrease. The WBC increase on the higher GP-X ratio composite gel made the gel to be more stable in frozen storage compared to chilled storage. However, the bigger gel pores from entrapped water volume increasing during frozen storage crystal ice formation resulted in sineresis increase. The gel became more compact with higher cohesiveness, hardness, chewiness, gumminess and deformation degree. ABSTRAKPenelitian ini bertujuan untuk menentukan proporsi komposit glukomanan porang dan xantan (GP-X) yang bersinergi optimal dalam pembentukan gel yang stabil setelah penyimpanan dingin dan beku. Sol glukomanan porang 1% dan sol xantan 1% dicampur dengan proporsi GP-X 20/40; 40/60; 50/50; 60/40; dan 80/20. Campuran tersebut dipanaskan pada suhu 90-95  °C selama 45 menit disertai pengadukan selama 5 menit, dicetak, didinginkan dan disimpan pada suhu dingin (5 °C) dan beku (-8 °C) selama 24 hari. Profil tekstur, water binding capacity (WBC), dan sineresis dianalisis di awal dan setelah penyimpanan. Morfologi gel komposit sebelum penyimpanan dan morfologi gel yang paling optimum setelah penyimpanan dianalisis dengan Scanning Electron Microscope (SEM). Sinergi pembentukan gel komposit GP-X paling optimal didapatkan dengan ratio 20/80. Asosiasi intermolekul GP-X pada proporsi tersebut membentuk zona hubung yang panjang dan densitas tinggi sehingga  menghasilkan hardness, chewiness, dan gumminess paling tinggi dengan derajat deformasi dan sineresis paling rendah serta daya kohesif yang sedang. Meskipun belum mengalami sineresis selama 24 hari penyimpanan dingin, pengecilan ukuran jaringan tiga dimensi (pori) gel komposit tersebut menunjukkan gel mulai kontraksi dan mengalami penurunan mutu dengan indikasi penurunan daya kohesif, chewiness, hardness, dan gumminess. Peningkatan WBC pada proporsi yang lebih tinggi menyebabkan gel nampak lebih stabil pada penyimpanan beku dibandingkan dengan penyimpanan dingin. Pembesaran pori gel akibat pengembangan volume air yang terperangkap selama pembentukan kristal es menyebabkan peningkatan sineresis, pemadatan gel, dan peningkatan hardness, chewiness, gumminess, dan persentase deformasi.

Abstract This research was conducted in August-October 2020 in Rokan Hilir Regency, the largest central of the fishing industry in Riau Province, Indonesia. The research objective to analyse the effect of trust on the fishing industry supply chain performance in the regency. Respondents were set 270 fishing companies based on the Slovin formula. They were taken purposively in four fishing centres, namely Panipahan (Pasir Limau Kapas district), Bagansiapiapi (Bangko), Kubu Babussalam, and Sinaboi. Collecting data using a closed questionnaire, containing a number of statements measured by a 7-point Likert scale. The data collected includes trust (credibility, top management capability, and government support), and supply chain performance (smooth of goods flow, financial flow, and information flow). Data analysed using the Structural Equation Modeling-Partial Least Square (SEM-PLS) method with the help of SmartPLS 3.3 software. The results showed that the trust has a positive and significant effect on the fishing industry performance in Rokan Hilir. This happens because the relationship between fellow entities of fishing industry supply chain occurs based on trust. The relationship between fishing companies (fisherman) and tauke (fish collectors, agents, and exporters) is based on patron-client ties, while the relationship between fellow tauke is based on family/blood ties. Both types of relationships have existed for years.

To match the current life-style, there is a huge demand and market for the processed food whose manufacturing requires multiple steps. The mounting demand increases the pressure on the producers and the regulatory bodies to provide sensitive, facile, and cost-effective methods to safeguard consumers’ health. In the multistep process of food processing, there are several chances that the food-spoiling microbes or contaminants could enter the supply chain. In this contest, there is a dire necessity to comprehend, implement, and monitor the levels of contaminants by utilizing various available methods, such as single-cell droplet microfluidic system, DNA biosensor, nanobiosensor, smartphone-based biosensor, aptasensor, and DNA microarray-based methods. The current review focuses on the advancements in these methods for the detection of food-borne contaminants and pathogens.

Abstract The objective of this study was to determine the influence of supplementations with 3.5 or 7.5 mg dihydroquercetin (experimental groups D1 and D2) or with 0.255 or 0.545 g dry distilled rose petals (experimental groups R1 and R2)/kg/d added as to pig's combined feed on the parameters of lipolysis expressed by acid value; lipid hydroperoxides expressed by peroxide value, lipid oxidation secondary products expressed by 2-tiobarbituric acid reactive substances (TBARS), pH and L*, a*, b* colour characteristics in m. Longissimus lumborum et thoracis, m. Semimembranosus, backfat and leaf fat stored 24 h and 7d at 2±1°C, or 315 d at -18±1°C. A total of 120 pigs were randomly divided to five groups - a control (C) and four experimental (D1, D2, R1 and R2) each fed 45 d prior to harvest with shown above levels of phytonutrients enriched diets. More pronounced effects were determined (P ≤ 0.05) at frozen storage compared to chilled storage. The oxidative and colour stabilities of chilled (2±1°C) and frozen (-18°C) pork are comparatively higher when pig's diet was supplemented with 3.5 mg dihydroquercetin or 0.255 g dry distilled rose petals/kg/d. The conclusion was made can the supplementation of pig's combined feed (finisher) with 3.5 mg dihydroquercetin or 0.255 g dry distilled rose petals/kg/d is a promising strategy to increase the oxidative stability of lean pork or fat and stabilized pork meat colour without deleterious changes of meat acidity.

This paper aims to assess the aquaculture potential and the orientation for building aquaculture supply chain in Tra Vinh Province. In order to summarize and discuss the development of the aquaculture supply chain, this paper employed desk research method to make comparisons of the secondary data on fishing in Tra Vinh Province. The research results showed that the potential of Tra Vinh Province in aquaculture was competitive with other provinces such as Ben Tre and Soc Trang. The analysis indicated that the capacity of fishing industry in Tra Vinh Province has gradually changed but has not really abandoned the near-shore exploitation practice, with the output of 78,257 tons, and the production value of 9,456 billion VND (in 2018). On that basis, the policy makers need to discuss and assess the positive levels of contribution of aquaculture supply chain into the marine economic development of Tra Vinh Province.
