Zhenba bacon (ZB), a type of Chinese traditional bacon with a long history, has attracted considerable attention in the Southwest of China for its unique flavor. To elucidate the changing course of aroma components during the process of ZB, four stages of process stages were assessed by GC–MS and GC–IMS coupled with multivariate data analysis. A total of 44 volatile compounds were identified by GC–IMS, including 5 esters, 8 alcohols, 12 aldehydes, 3 ketones, 1 furan and 2 sulfides; 40 volatile compounds were identified by GC–MS, 4 ketones, 7 phenols, 8 alcohols, 6 esters, 6 aldehydes, and 6 other compounds were detected. During the curing period, the amount and content of esters in Zhenba bacon gradually increased. Phenols appear in large quantities during the smoking period. The VOCs (volatile organic compounds) in the gallery plots were the most diverse in YZ samples, which are mainly esters. POV (peroxide value) and TBARS (thiobarbituric acid reactive substance) showed that lipid oxidation played an important role in the formation of volatile flavor components of bacon. This study provides valuable analytical data to explain the flavor formation of Zhenba bacon.

Bulgur is enjoyed and rediscovered by many people as a stable food because of its color, flavor, aroma, texture, and nutritional and economical values. There is more than one type of bulgur overall the world according to production techniques and raw materials. The volatile compounds of bulgur have not been explored yet. In this study, Headspace Solid Phase Microextraction (HS-SPME) and Gas Chromatography–Mass Spectroscopy (GS-MS) methods were used to determine the volatile flavor compounds of bulgur (Antep type, produced from Durum wheat). Approaching studies were used and the results were optimized to determine the ideal conditions for the extraction and distinguish the compounds responsible for the flavor of bulgur. Approximately, 47 and 37 important volatile compounds were determined for Durum wheat and bulgur, respectively. The study showed that there was a great diversity of volatiles in bulgur produced using Durum wheat and Antep type production method. These can lead to a better understanding of the combination of compounds that give a unique flavor with more researches.

This study tested three types of Solid-Phase Microextraction fibers in developing a method to extract volatile organic compounds present in the diet of immature Centris analis. Samples were placed in glass vials with metal lids and added with 3g NaCl and 8 ml deionized water. Extraction and characterization were carried out using a Headspace – Solid Phase Microextraction (HS-SPME) with Gas Chromatography – Mass Spectrometry, and the three types of fibers were polydimethylsiloxane (PDMS), divinylbenzene/ carboxen/ polydimethylsiloxane (DVB/CAR/PDMS) and carboxen/ polydimethylsiloxane (CAR/PDMS). Each type of fiber was exposed to volatiles for 30 min and analyzed in a chromatograph Agilent GC-MS equipped with a quadrupole detector (MSD 5977A), containing a HP-5MS (30 m x 0.25 mm x 0.25 µm) column and Helium as the carrier gas (1 ml.min-1). The CAR / PDMS fiber favored the extraction of volatile compounds to semi-volatile compounds, followed by DVB / CAR / PDMS, while PDMS presented a lower number of extracted compounds, which can be attributed to its apolar nature. The volatile compounds identified in the diet included alcohols, aldehydes, esters, ketones, and terpenes. The SPME technique has proven effective in the extraction of volatile organic compounds from immature of Centris analis diet, being the CAR/PDMS the most suitable fiber for this.

The study aimed to evaluate the effect of 14-day vacuum aging on the volatile compounds (VOC) profile, oxidative profile, antioxidant enzymes activity, and sensory evaluation in the Longissimusthoracis muscle of foal meat under vacuum aging. Longissimusthoracis (LT) was sampled in 20 mm thick slices, vacuum packed, and stored at 4 °C. Samples were randomly assigned to different aging times (1, 6, 9, 14 days after slaughtering). VOCs, thiobarbituric acid reactive substances (TBARs), hydroperoxides, carbonyl proteins, superoxide dismutase, catalase, and glutathione peroxidase were analyzed, and a sensory test was performed. A nested one-way analysis of variance (ANOVA) was performed for aging time as an independent variable. Significance was set at p < 0.05. The main VOCs originating from cooked steaks were aldehydes, (from 47.18% to 58.81% of the total volatile compounds), followed by hydrocarbons (from 9.32% and 31.99%). TBARs and hydroperoxides did not show variations due to aging (p > 0.05), instead, protein carbonyls showed higher values at the 14th day (p < 0.01). Catalase, superoxide dismutase, and glutathione peroxidase showed increasing values during aging time (p < 0.01). Vacuum aging slowed down lipid oxidation, and protein oxidation was shown to be present. However, the best vacuum aging duration is in the range of 6–9 days from slaughtering, with an improvement of sensory evaluation.

The Galium verum herb, (Rubiaceae family) is well represented in the spontaneous Romanian flora. She is one of the most used plants in traditional medicine. Our research aimed to investigate the chemical volatile profile in fresh, dried and essential oil of Gallium verum using SPME and hydrodistillation techniques, followed by GC-MS analysis. Characterization of volatile compounds composition by SPME �GC-MS technique presented din this paper is the first study on fresh and dried of Galium verum plant to our knowledge. Galium verum fresh flower floral bouquet is given by monoterpenes (73,5%), sesquiterpenes (10,16%), esters (10,26%) and others(5.87%). The floral bouquet of Gallium verum dried flower, contains mainly: aldehydes (35.48%) monoterpenes (35.48%), alcohols (11.96%), sesquiterpenes, (3.71%), esters (3.14%) and others (10.11%). Sixty components were identified in the galium essential oil.

Resistance of erythrocytes from Brown trout (Salmo trutta m. trutta L.) affected by ulcerative dermal necrosis syndrome In the present work we evaluated the effect of ulcerative dermal necrosis (UDN) syndrome on resistance of erythrocytes to haemolytic agents and lipid peroxidation level in the blood from brown trout (Salmo trutta m. trutta L.). Results showed that lipid peroxidation increased in erythrocytes, as evidenced by high thiobarbituric acid reactive substance (TBARS) levels. Compared to control group, the resistance of erythrocytes to haemolytic agents was significantly lower in UDN-positive fish. Besides, UDN increased the percent of hemolysated erythrocytes subjected to the hydrochloric acid, urea and hydrogen peroxide. Results showed that UDN led to an oxidative stress in erythrocytes able to induce enhanced lipid peroxidation level, as suggested by TBARS level and decrease of erythrocytes resistance to haemolytic agents.
