Thua-nao, or Thai fermented soybeans, is a traditional Lanna fermented food in Northern Thailand. It is produced by using a specific bacterial species called Bacillus subtilis var. Thua-nao. We investigated the antioxidant activity and cytotoxic effect of isoflavones from Thua-nao. The phenolic compound contents and total flavonoid contents were determined by spectrophotometry. The antioxidant activity was examined using the ABTS, FRAP, and DPPH assays. The isoflavone contents and phenolic compositions were examined by the high-performance liquid chromatography (HPLC) and liquid chromatography-mass spectrometry (LC-MS) techniques. The ability of isoflavones to inhibit human cancer cell growth was assessed by the MTT assay. The total phenolic content, total flavonoid content, and antioxidant activities of the isoflavones were 49.00 ± 0.51 mg GAE/g of dry extract (DE), 10.76 ± 0.82 mg QE/g of DE, 61.03 ± 0.97 µmol Trolox/g of DE, 66.54 ± 3.97 µM FeSO4/g of DE, and 22.47 ± 1.92% of DPPH inhibition, respectively. Additionally, the isoflavone extracts from Thua-nao had high isoflavone contents and polyphenolic compound compositions, especially daidzein and genistein. The isoflavone demonstrated a weak inhibition of MCF-7 and HEK293 cancer cell growth. It has a high antioxidant component, which is beneficial and can be developed for new therapeutic uses. However, further studies on the benefits of Thua-nao should be performed for realizing better and more effective uses soon.

Abstract Objectives Cauliflower is one of the cruciferous vegetables and contains various physiologically active substances such as glucosinolates, polyphenols, and flavonoids. Unlike ordinary vegetables, cruciferous vegetables are often consumed by cooking through heat treatment. The purpose of this study was to investigate the effects of different heating procedures, in particular steaming and boiling, on glucosinolate, total polyphenol, and total flavonoid concentrations in cauliflower. In addition, antioxidant activity was compared between fresh uncooked, steamed, and boiled cauliflower, which are the main methods of preparing cauliflower before consumption. Methods Glucosinolates in uncooked, steamed, and boiled cauliflower were subjected to high-pressure liquid chromatography. Total phenolic and total flavonoid content and antioxidant activities in cauliflower extracted in both water and 80% ethanol were determined. Results Eight glucosinolate peaks were detected in cauliflower representing glucoiberin, progoitrin, glucoraphanin, sinigrin, gluconapin, glucoiberverin, glucobrassicin, and gluconasturtiin. Boiling cauliflower significantly decreased the glucosinolate, total polyphenol, and total flavonoid concentrations compared to those of uncooked or steamed cauliflower. The results clearly indicated that health-promoting compounds in cauliflower are significantly affected by different cooking methods, showing that uncooked > steamed > boiled. The amounts of total polyphenols and total flavonoids contained within uncooked cauliflower extracted by 80% ethanol were higher than those in the steamed and boiled extracts. The highest antioxidant activity was observed in uncooked cauliflower extracted in 80% ethanol compared to that of water extracts at the same concentration. Steamed and boiled cauliflower extracts showed lower antioxidant activity. Conclusions Based on these results, fresh uncooked cauliflower is optimal in terms of the content of health-promoting compounds and antioxidant activity. It may be desirable to use steaming rather than boiling to minimize the loss of glucosinolates when storing, pretreating, processing, and cooking cruciferous vegetables. Breast cancer is one type of cancer that causes the highest death in women in Indonesia. Alternative herbal-based cancer treatments have been developed, one of which is using fruits. Dacryodes rostrata, a fruit commonly consumed by residents in Kalimantan, is rich in antioxidants such as flavonoids and phenolics. The purpose of this study was to determine the value of antioxidant and cytotoxic activity of water and ethanol extract of D. rostrata peel against T-47D breast cancer cell lines. The fruit extraction was carried out by using maceration method. Antioxidant activity test using 2,2-diphenyl-1-picrylhydrazyl (DPPH) method and cytotoxic test using MTT method (3-(4,5-dimethylthiazole-2-yl)-2,5-diphenitetrazolium bromide) assay. The results showed that D. rostrata water and ethanol extract had antioxidant activity with IC50 values 121.7 ppm and 59.27 ppm, respectively. While cytotoxic effect on T-47D cells with IC50 values of 322.55 ppm and 143.02 ppm, respectively. This study showed that D. rostrata peel water extract had moderate antioxidant activity and moderate cytotoxic effect against T-47D breast cancer cells in vitro which could be used as a chemo preventive to prevent and inhibit cancer cell growth.

The nutmeg (Myristica fragrans) flesh extract has a strong antioxidant activity. Therefore, M. fragrans flesh can be developed for functional drinks which are sources rich in antioxidants good for the prevention and treatment of diseases such as cancer and cardiovascular diseases. However, the tannins' content can cause a bitter and sour taste. Therefore, the tannins content should be reduced by the addition of egg white. The purpose of this study is to find out the comparison of antioxidant activity between a combination of M. fragrans flesh extract with various concentrations of egg white and to correlate its antioxidant activities with tannin, total flavonoid, and total phenolic contents. The antioxidant activities were conducted on M. fragrans flesh extract by using DPPH and ABTS radicals. Tannin, total flavonoid, and total phenolic contents from M. fragrans flesh extract were also tested. The M. fragrans flesh extracts without addition egg white have a strong antioxidant in scavenging the stable free radical ABTS (89.980±0.480 µg/mL) and intermediate antioxidant in scavenging the stable free radical DPPH (105.669±0.102 µg/mL). It is followed accordingly by tannin, total flavonoid, and total phenolic contents, namely 14.034±0.100 %w/w TAE, 26.929±0.129 %w/w QE, and 53.164±0.129 %w/w GAE, respectively. Correlation of tannin, total flavonoid, and total phenolic contents, which inhibited DPPH and ABTS radicals had R2 values of about 89.23-97.63%. It showed that antioxidant activity is strongly influenced by the tannin, total flavonoid, and total phenolic contents. Therefore, precipitation from the tannin-protein bond caused antioxidant activities were decreased.

Two hull-less barley varieties were roller-milled, and breaks (B) and reduction flours (C), shorts, and bran were collected. Shorts, which mainly originate from endosperm cells with a smaller amount of the outer layers, had the largest yield (48.87–51.54%). Ash (0.82–3.10%) and protein (9.95–14.8%) increased from flours toward shorts and bran, while starch decreased (82.31–48.69%). In contrast to clear distribution differences in protein content (bran > shorts > C > B), albumins/globulins content was lowest in bran (0.78–0.90 g/100 gdw), and their distribution between fractions was uneven and genotype dependent. Distribution of hordeins (6.69–10.49 g/100 gdw) was more distinct and generally decreased in order from bran > B > shorts > C. The proportion of nutritionally poor C-hordeins in total hordeins varied from 28.33% to 30.24%, without significant differences between fractions. The β-glucan content varied from 0.80% to 7.49% with decreasing content in the order bran, shorts > C > B. Shorts and bran could be classified as moderate and high β-glucan flour (5.70–7.22%). The total phenolic and antioxidant activities ranged from 0.91 to 2.21 mg GAE/gdw and 28.81–72.06%, respectively. Ferulic and sinapic acids determined by high-performance liquid chromatography (HPLC) were major contributors to the antioxidant activity (45.16–1026.91 ug/gdw and 18.93–206.52 ug/gdw), respectively. The yield and high content of phytonutrients make hull-less barley shorts suitable for the production of health-promoting food and food supplements.

Antioxidants can neutralize free radicals that can affect biological systems in the body that can cause degenerative diseases. Antibacterial active molecules have been identified from plants, and these chemicals are being utilized to develop new and promising treatments. The Mobe plant (Artocarpus lacucha Buch-Ham.) is a species of Artocarpus member of the Moraceae family. Includes a high proportion of phenolic compounds (flavonoids and phenolic acid). This research obtained to know about the biological activity of Artocarpus lacucha Buch-Ham and their total flavonoid and total phenolic content. The extract was prepared using the soxhletation technique using ethanol as the solvent. Antibacterial activity was determined using minimum inhibitor concentration. Propionibacterium acne can be inhibited at concentrations ranging from 300 ppm to 25 ppm. The DPPH technique was used to assess antioxidant activity. The samples’ total flavonoid and phenolic content were measured colorimetrically. The DPPH test revealed an antioxidant activity of 23.33 g/mL, which was used to compute the IC50. The extract’s total phenolic (117.44 mg GAE/g) and flavonoid (3.54 mg QE/g) content were determined to be high.

Background: Polygonum odoratum is an indigenous vegetable that has been used as a favoring agent and also used as a Thai traditional medicine to treat flatulence. </P><P> Objective: To analyze active ingredients, total phenolic and total flavonoid contents, antiinflammatory and antioxidant activities from leaf and stem extracts of P. odoratum. </P><P> Methods: Leaves and stems were dried and extracted by using methanol, dichloromethane and water for obtaining Methanolic Leaf Extract (MLE), Methanolic Stem Extract (MTE), Dichloromethane Leaf Extract (DLE), Dichloromethane Stem Extract (DTE), Water Leaf Extract (WLE) and Water Stem Extract (WTE). The extracts were quantified for total phenolic and total flavonoid contents by spectrophotometry and active compounds were analyzed by using GC-MS. Antioxidant activity was determined by ABTS and DPPH radicals scavenging assays. Anti-inflammatory activity was tested by the inhibition of nitric oxide production in RAW 264.7 macrophage cells induced by lipopolysaccharide. </P><P> Results: The DLE exhibited the most potent anti-inflammatory effect by inhibiting nitric oxide production in a concentration-dependent manner (IC50 = 53.75&#177;0.72 &#181;g/mL). MLE exhibited strong antioxidant activity and contained the highest concentration of phenolic compounds (52.59&#177;0.58 mg gallic acid equivalent/g extract) and flavonoid (19.97+0.11 mg quercetin equivalent/g extract). E-15-Heptadecenal and 3, 7, 11, 15-tetramethyl-2- hexadecen-1-ol were found predominantly in the methanol extracts. </P><P> Conclusion: The leaf extract of P. odoratum showed potent anti-inflammatory and antioxidant activities, mediated by DLE and MLE, respectively.
