Mangkokan soap (Nothopanax Scutellaium Merr) is made from extract of mangkokan leaf and the material making of soap there are oil, NaOH, alcohol and glycerin. This research is to find out the quality of microbiology and chemical soap of mangkokan leaf extract (Nothopanax Scutellaium Merr) with 90% concentration of mangkokan leaf extract . This research is an experimental research with descriptive of data analysis. The results of this study were microbiological quality of Mangkokan extract soap(Nothopanax Scutellaium Merr) has antibacterial activity to Escherichia coli bacteria and there is no microbial contamination. Chemical quality of Mangkokan Extract Soap (Nothopanax Scutellaium Merr) was tested on free alkali level test 0%, pH value 11,03 and water content value 0,4668%.   Keywords: Escherichia coli, Mangkokan Leaf, Soap.

Microbial contamination of poultry carcasses can be influenced by many factors during transport and slaughtering. The aim of this study was to evaluate the impact of four processing steps (plucking, evisceration, washing and chilling) on the total viable counts (TVC), counts ofEscherichia coli,Salmonellaspp. andListeriaspp. incidence on broiler carcasses. A total of 160 broiler carcasses originating from one farm were collected during one year period at a Czech slaughterhouse and examined. Both TVC andE. colicounts decreased during processing from 4.6 log cfu/cm2and 3.5 log cfu/cm2to 3.7 log cfu/cm2and 1.8 log cfu/cm2, respectively, with a major impact of washing on TVC and washing and chilling onE. colidecrease (P< 0.001). BothSalmonellaspp. (6 strains) andListeriaspp. (12 strains, none ofL. monocytogenes) were found sporadically in all processing steps followed. However, a decreasing trend was observed inSalmonellacounts andListeriaspp. incidence during the processing. Thus, this study brings new valuable information on the dynamics of microflora during modern poultry processing.

This study aims to determine the effect of giving levels of turmeric flour and storage time on microbiological quality, sensory quality and chemical quality of mackerel fish sausages. The method used in this research is descriptive research used to observe the total number of bacterial colonies and molds, while experimental research using Factorial randomized block design (RBD) for analyzing sensory tests. Completely Randomized Design (CRD) factorial pattern for analyzing water content and pH tests. The results showed the administration of turmeric flour can inhibit bacteria and mold for 12 hours. Sensory testing showed an interaction between the level of turmeric flour treatment and storage time. Chemical testing shows the storage time can cause fluctuations in water content. The pH test shows the level of turmeric flour can increase the pH value, and the pH value will decrease during storage. The conclusion of the study is that the level of turmeric flour and storage time affect the quality of sausage microbes. The interaction between the level of turmeric flour and the length of storage has an influence on the taste and texture of fish sausages during storage by inhibiting the growth of microbes so as to maintain quality degradation. levels of turmeric flour and storage duration affect the chemical quality of sausages

In this pilot study loin muscles (M. longissimus dorsi) from six reindeer calves (aged 4 months) were used to determine shelf life of fresh, chilled reindeer meat stored at +4 °C, measured as microbiological quality (aerobic microorganisms and Escherichia coli). The loins were collected at boning 3 days post slaughter and divided in five pieces that were randomly assigned to five different storage times; sampling directly after packaging and after chilled storage for 2, 3, 4 and 5 weeks at +4 °C. Samples were vacuum packaged and transported chilled to Hjortens Laboratory in Östersund, Sweden (accredited by SWEDAC according to SS-EN ISO/IEC 17025:2005 for food analysis) where the storage, microbiological sampling and analysis took place according to the protocols of Nordic Committee on Food Analysis (NMKL). The total amount of aerobic microorganisms at the first sampling directly after packaging (three days post slaughter) was 3.4 ± 0.3 log10 CFU/g. After two and three weeks of vacuum packaged chilled storage at +4°C the microbiological quality of the samples was on the border-line to poor (6.8 ± 0.3 log10 CFU/g). At four and five weeks of chilled storage the levels of aerobic microorganisms were significantly highest (P≤0.05) and the limit for acceptable quality of 7 log10 CFU/g aerobic bacteria had been passed (7.3 ± 0.3 log10 CFU/g and 7.8 ± 0.3 log10 CFU/g, respectively). Very few of the reindeer meat samples were contaminated with Escherichia coli bacteria. The results from the present pilot study suggest that storage time for vacuum packaged fresh, chilled reindeer meat should not exceed 3 weeks at a temperature of +4 °C.

Telah dilakukan penelitian yang bertujuan untuk mengidentifikasi senyawa metabolit sekunder  dari ekstrak daun kaf menggunakan tiga jenis pelarut yakni n-heksan, etil asetat, dan metanol. Ekstrak yang diperoleh diuji aktivitas antibakterinya dengan metode difusi yang menggunakan bakteri Staphylococcusaureus dan Escherichia coli. Dari hasil pengujian fitokimia, ketiga ekstrak tersebut menunjukan bahwa sampel mengandung senyawa; alkaloid, saponin, steroid, flavonoid dan tanin. Pengujian aktivitas antibakteri  dengan metode difusi menunjukan hasil yang paling tinggi aktivitas antibakteri adalah  estrak etil asetat dengan zona hambat 35,75 mm terhadap bakteri  Staphylococcus aureus, sedangkan pada ekstrak metanol memiliki zona hambat 23,75 mm terhadap bakteri Escherichia coliResearch has been carried out aimed at identifying secondary metabolites of kaf leaf extract using three types of solvents, namely n-hexane, ethyl acetate, and methanol.The obtained extracts were tested for antibacterial activity by diffusion method using Staphylococcus aureus and Escherichia coli bacteria. From the results of phytochemical testing, the three extracts showed that the sample contained compounds; alkaloids, saponins, steroids, flavonoids and tannins. Antibacterial activity testing with diffusion method showed the highest antibacterial activity was estracethyl ethyl acetate with 35.75 mm inhibition zone against Staphylococcus aureus bacteria, whereas methanol had 23.75 mm inhibitory zone against Escherichia coli bacteria

The Quality of Rebon Shrimp Paste (Acetes Indicus) Traded in Some Markets of Kendari CityABSTRACT         The aim of this study was to determine the sensory quality, chemical quality, and microbiological quality of rebon shrimp paste traded in several traditional markets in Kendari City. Data analysis of the research used descriptive analysis. samples are taken at Mandonga market and Kendari City Central Market. Based on the sensory analysis (appearance, smell, taste, texture), it shows that the Mandonga market is the highest. The highest chemical analysis of rebon shrimp paste are water P2: 43.73%, ash P1: 23.79, and protein p1: 23.75%. Pengambilan sampel yang dilakukan ialah Pasar Mandonga dan pasar sentral Kota kendari. Berdasarkan analisis sensori (Kenampakan, Bau, Rasa, Tekstur) menunjukan bahwa pasar mandonga yang tertinggi. Analisis kimia kadar air tertinggi P2:43,73%, kadar abu tertinggi P1:23,79, dan kadar protein tertinggi p1:23,75%. Analisis total bakteri berkisar 1,73 Log CFU/gr-3,33 Log CFU/gr.Kata kunci: Udang Rebon, Terasi, Pasar Kendari

The discovery of new antibiotic drugs is getting more and more reactive. The plant of the peria laut leaf is one of the drugs that is often used as a traditional medicine and contains bioactive compounds of polyphenols, flavonoids, and saponins, which can inhibit antibacterial growth. Purpose of this study was to determine the antibacterial activity of ethanol extract of peria laut leaves (Colubrina asiatica L.) against Staphylococcus aureus and Escherichia coli bacteria. Method the experimental, of the sample used was concentrated marine peria laut leaf extract of 25mg/ml, 50mg/ml, 75mg/ml, 100mg/ml, 200mg/ml, 300mg/ml, 400mg/ml, and 500mg/ml, positive control of amoxicillin tablet 500 mg, negative control of dimethylsulfoxide with the method of disc diffusion testing using media Nutrient Agar. Results the showed thet the peria laut leaf extract positively contained bioactive alkaloid compounds, flavonoids, saponins, steroids, and tannins, and had inhibitory effects on Staphylococcus aureus and Escgerichia coli bacteria with various concentrations which had been tested on the average area of the highest inhibition zone of 18,6 mm in Staphylococcus aureus bacteria, and 10,2 mm in Escherichia coli bacteria. Conclusion peria laut leaf extract (Colubrina asiatica L.) has antibacterial activity against Staphylococcus aureus and Escherichia coli bacteria in the most inhibitory zone at a concentration of 500mg/ml with a diameter of 18,6 in Staphylococcus aureus bacteria and 10,2 in Escherichia coli.

ABSTRACT Objective of this research was to find out the quality of y Sumbawa wild horse milk yogurt added with cinnamon extract at various concentrations. This research used a single factor completely randomized design (CRD) with a concentration of cinnamon extract (P) consisting of 6 treatments, i.e. P1 (0%), P2 (2%), P3 (4%), P4 (6%), P5 (8%) and P6 (10%). The parameters observed were chemical quality (antioxidant activity, protein content and pH value), physical quality (viscosity and color), microbiological quality (total LAB) and organoleptic quality (color, aroma, taste, and thickness). The data from the observations were analyzed using Anova with a real level of 5% using Costat software. If there was a significant difference, a further Orthogonal Polynomial test carried out for chemical quality, HSD at a significant level of 5% for organoleptic quality, and microbiological quality were analyzed descriptively. The results showed that the addition of cinnamon extract affected the quality of the yogurt. The higher the concentration of cinnamon extract, the higher the antioxidant activity, protein content, viscosity, color, total LAB and the lower the pH value. The best quality of yogurt is produced with the addition of 10% cinnamon extract with 35.76% of antioxidant activity, 3.85% of protein content, 4.65 of pH value, 4,746.67 mPa.s of viscosity, color 62o of oHue value and 43,88 of lightness value, 8,2 x 109 CFU/ml of LAB total in accordance with the quality requirements of yoghurt based on SNI 2981: 2009 as well as organoleptics acceptable to the panelists.   ABSTRAK Penelitian ini bertujuan untuk mengetahui mutu yoghurt susu kuda liar Sumbawa yang ditambahkan dengan ekstrak kayu manis pada berbagai konsentrasi. Rancangan penelitian menggunakan Rancangan Acak Lengkap (RAL) faktor tunggal adalah konsentrasi ekstrak kayu manis (P) yang terdiri atas 6 perlakuan, yaitu P1 (0%), P2 (2%), P3 (4%), P4 (6%), P5 (8%) dan P6 (10%) yang diulang sebanyak 3 kali. Parameter yang diamati yaitu mutu kimia (aktivitas antioksidan, kadar protein dan nilai pH), mutu fisik (viskositas dan warna), mutu mikrobiologi (total BAL) dan mutu organoleptik (warna, aroma, rasa, dan kekentalan). Data hasil pengamatan dianalisis menggunakan Anova dengan taraf nyata 5% dengan menggunakan software Costat. Apabila terdapat perbedaan nyata, maka dilakukan uji lanjut Polynomial Orthogonal untuk mutu kimia, uji lanjut BNJ pada taraf nyata 5% untuk mutu organoleptik, dan mutu mikrobiologis dianalisis secara deskriptif. Hasil penelitian menunjukkan bahwa penambahan ekstrak kayu manis mempengaruhi mutu yoghurt. Semakin tinggi konsentrasi ekstrak kayu manis, maka semakin meningkat aktivitas antioksidan, kadar protein, viskositas, warna, total BAL serta semakin rendah nilai pH. Mutu yoghurt terbaik dihasilkan dengan penambahan 10% ekstrak kayu manis dengan aktivitas antioksidan 35,76%, kadar protein 3,85%, nilai pH 4,65; viskositas 4746,67 mPa.s; warna dengan nilai ˚Hue 62˚ dan nilai lightness sebesar 43,88; total BAL 8,2x109 CFU/ml yang sesuai dengan persyaratan mutu yoghurt berdasarkan SNI 2981:2009 serta organoleptik yang dapat diterima oleh panelis.

Malang is a rich culinary city of livestock products such as pasteurized milk. The purposes of this study were analyzed total microbes, contamination of Escherichia coli and pH of pasteurized milk produced by milk store, village unit cooperation milk house and STMJ cafe in Malang. The method of this research were survey and experiment. The samples were took from milk store (P1), village unit cooperation milk house (P2) and STMJ café (P3)  in Malang during 4 days. The data analysis of total microbial and pH using one-way analysis of variance (ANOVA) and continued by Duncan Multiple Range Test (DMRT) while Escherichia coli data was analyzed by descriptive analysis. The results showed that there were a real influence (P<0,05) of milk producers on total microbes and pH. Escherichia coli contaminant from three producers were showed the same results which were less than 3 apm/ml. The conclusions of this study were total microbes and contamination of Escherichia coli original pasteurized milk produced by milk store, village unit cooperation milk house and STMJ cafe under the limit of microbial contamination on food. Microbiological quality in terms of total microbes, and contamination of Escherichia coli pasteurized milk by milk store in Malang City were classified to national standard of pasteurized milk in Indonesia. Keywords: Total Microbes, Escherichia coli, pH, Pasteurized Milk, Malang City

In Germany the application of procedures such as flocculation and filtration in the preparation of drinking water results in the annual production of an estimated 500,000 t of sediments and sludges. Some of these residues have a potential for being reused, for example in agriculture, forestry, brickworks or waste water treatment. To assess the microbiological quality of residues from waterworks methods for the detection of enterobacteria, Escherichia coli, Salmonella, Pseudomonas aeruginosa, Legionella, poliovirus, Ascaris suis eggs and Cryptosporidium have been evaluated regarding their detection limits and were applied to various residues from German waterworks. Results show that sediments and sludges may contain pathogenic bacteria, viruses and protista. When residues from waterworks are intended to be reused in agriculture or forestry the microbiological quality should therefore be considered.
