The purpose of this research was to determine the used of molases as an additive in making banana jackfruit peel silage on crude fiber and crude protein. This research was conducted in Sirnaraja, Mandalasari village, Cikalongwetan district, West Bandung regency for 21 days, while the sample test carried out Balai Pengujian Mutu dan Keamanan Pakan/Bahan Pakan (BPMKP/BP) at the Cikole-Lembang. The method used was Completely Randomized Design (CRD), with four treatments (P0 : banana jackfruit peel silage with 0% molases), (P1 : banana jackfruit peel silage with 1% molases), (P2 : banana jackfruit peel silage with 3% molases), (P3 : banana jackfruit peel silage with 5% molases) and five replication. The data obtained were analyzed by ANOVA and Duncan’s multiple range test. The result show that the used of molases as an additive was significantly (P<0,05) of crude fiber and crude protein with average 8,79-31,61% and 8,79-9,55%. The used of 3% molases is the most optimal of the decrease crude fiber and increase crude protein.

An experiment with aim to study the effect of probiotics combination level and length of fermentation on qualityimprovement of rice straw had been conducted at the Laboratory of Nutrition and Feed of Animal HusbandryFaculty, Mataram University. The research was arranged in a Completely Randomized Design in factorialarrangement 3 x 3 with 3 replications. The first factor was the level of probiotics (0, 2 and 4%), the second factorwas the period of fermentation (2, 4 and 6 weeks).The variables measured were crude protein, crude fiber, NDF,ADF, cellulose, hemicellulose, lignin, and in vitro digestibility of dry matter and organic matter. Data wereanalyzed by analysis of variance and tested further by Duncan's Multiple Range Test. The result show thattreatments combination of the probiotics level and fermentation period did not affect (P>0.05) the chemicalcomposition and digestibility. The level of probiotics increased (P<0.05) the crude protein and in vitro dry matterdigestibility. Meanwhile, the lenght of fermentation increased the crude protein and in vitro digestibility of drymatter and organic matter, but decreased the crude fiber, NDF, ADF, cellulose, and hemicellulose of Amofer ricestraw.

The purpose of this research was to study the effect of catfish and young jackfruit ratio on quality and sensory nuggets.  A completely randomized design with four treatments and four replications was conducted in the research.  The treatments were PN1 (70 catfish meat: 30 young jackfruits), PN2 (60 catfish meat: 40 young jackfruits), PN3 (50 catfish meat: 50 young jackfruits), and PN4 (40 catfish meat: 60 young jackfruits).  Data obtained were statistically analyzed using analysis of variance and continued with Duncan's New Multiple Range Test (DNMRT) at a 5% level.  The results showed that the combination ratio of catfish and young jackfruit significantly affected water, ash, fat, protein, and crude fiber content, as well as descriptive sensory assessments such as color, aroma, taste, texture, and hedonic assessment of the nugget.  The best treatment was PN1 (70 catfish meat: 30 young jackfruit) which had fulfilled quality requirements of fish nuggets (SNI 7758-2013) i.e. 58.36% moisture content with a maximum value of 60%, 1.81% ash content with a maximum value of 2,5%, 4.94% fat content with a maximum value of 15%, 14.38% protein content with a minimum value of 5%, and 5.14% crude fiber content.  The overall sensory assessment of the nugget was a yellow color, flavorful of patins fish aroma, the very taste of patin fish (according to typical raw materials), and rather hard texture.

The aim of this research was to study the effect of incubation time on onggok fermentation with enrichment N, S, P by Trichoderma reesei on nutrient value. The materials of this research were onggok, T. Reesei and N, S, P element. This research used completely randomized design with 4 treatments different incubation time with 5 replication; T0: 0 day, T1: 2 days, T2: 4 days and T3: 6 days. The parameters observed were crude protein, crude fat, crude fiber, and nitrogen free extract of fermented onggok. Data analysis was used by Analysis of Variance (ANOVA) and continued by Duncan’s Multiple Range test if they were significantly different. Results of this research showed that there were haven’t effect (P>0.05) of the treatment on nutrient value. The conclusion of this research was incubation time on onggok fermentation with enrichment N, S, P by Trichoderma reesei have not been able to decrease crude fiber.Keywords : Onggok, fermentation, T.reesei

Availability of forage in the dry season is less than the rainy season, one of the local grasses that has heat resistance, namely clumps of palungpung (Phragmites karka). This grass is hard textured so ammonia technology is carried out. This study was to determine the right concentration of urea in ammonia of palungpung grass (Phragmites karka), and to increase the nutritional value of palungpung grass (Phragmites karka) after ammoniation. The design in this study used a Completely Randomized Design (CRD). In this design there are four (4) treatments and three (3) replications. Treatment P1 = Palungpung Grass (Phragmites karka) + Urea 0%, P2 = Palungpung Grass (Phragmites karka + Urea 4%, P3 = Palungpung Grass (Phragmites karka) + Urea 8%, P4 = Palungpung Grass (Phragmites karka) + Urea 12 %. The parameters observed were crude fiber (SK), crude protein (PK), crude fat (LK). The results of variance analysis showed that the effect of urea level on ammoniation of palumpung grass (Phragmites karka) was not significantly different (P> 0.05 ) on crude fiber and crude fat content, while significantly affecting crude protein at 12% level of 17.10%.

ABSTRACTThis study aimed to determine the effect of adding ginger juice on the organoleptic and chemical values of soy fiber dodol products. This study used a completely randomized design consisting of the addition of ginger extract (F), namely treatment F0 (0%), F1 (1%), F2 (2%), F3 (3%), and F4 (4%). Data were analyzed using Analysis of Variance and continued with Duncan's Multiple Range Test (DMRT) at a 95% confidence level (α=0.05). The addition of ginger juice had a very significant effect on the parameters of aroma, texture, color, and significantly different on taste. Based on the results of the organoleptic assessment, the most preferred treatment was F2 treatment (addition of 2% ginger juice) with color, aroma, and texture rating scores reached 3.89 (like), 3.80 (like), and 3.56 (like), respectively. The chemical analysis results show that the selected treatment had 17.53% water, 1.60% ash, 12.25% protein, 31.37% fat, 10.52% fiber, and 9.79% crude fiber. Among the five parameters, parameters of water, fat, protein, and crude fiber contents met the national standard but the ash content did not.Keywords: lunkhead, soybean dregs, gingerABSTRAKPenelitian ini bertujuan untuk menentukan pengaruh penambahan sari jahe terhadap nilai organoleptik dan nilai kimia produk dodol serat kedelai. Penelitian ini menggunakan Rancangan Acak Lengkap yang terdiri atas penambahan sari jahe (F) yaitu perlakuan F0 (0%), F1 (1%), F2 (2%), F3 (3%) dan F4 (4%). Data dianalisis menggunakan Analisis ragam (Analysis of Varian) dan dilanjutkan dengan uji Duncan’s Multiple Range Test (DMRT) pada taraf kepercayaan 95% (α=0,05). Penambahan sari jahe berpengaruh sangat nyata terhadap parameter aroma, tekstur, warna dan berbeda nyata pada rasa. Berdasarkan hasil penilaian organoleptik diperoleh perlakuan terpilih yaitu perlakuan F2 (penambahan sari jahe 2%) dengan skor penilaian warna 3,89 (suka) aroma 3,80 (suka), tekstur 3,56 (suka).dengan nilai analisis kimia meliputi analisis kadar air 17,53%, kadar abu 1,60%, kadar protein 12,25%, dan kadar lemak 31,37%, kadar serat 10,52%, serat kasar 9,79%. dari 5 parameter ada 4 parameter kadar air, kadar lemak, kadar protein dan kadar serat kasar telah memenuhi SNI dan 1 parameter yaitu kadar abu tidak sesuai standar SNI.Kata kunci: dodol, ampas kedelai, jahe

Abstract. The purpose of this study was to determine the increase in protein content and decrease in crude fiber in complete feed silage based on rice straw and lamtoro leaves as ruminant feed. This study used a completely randomized design (CRD) with 4 treatment levels and 3 replications namely J0 = 100% rice straw (control), J1 = 60% rice straw and lamtoro leaves 40% J2 = 70% rice straw and lamtoro leaves 30% J3 = 80% rice straw and lamtoro leaves 20%. The results showed that the combination of rice straw and lamtoro leaves had a very significant effect on the value of crude protein and crude fiber in complete feed silage. The highest average to the lowest protein content was J1 (11.45), J2 is equal to (9.50), J3 is equal to (8.44), and J0 is equal to (6.60). The average value of the highest crude fiber content to the lowest is (35.19), J3 is equal to (33.82), J2 is equal to (32.35), and J1is equal to (30.55). From the results of the study it is known that the best treatment that can be recommended is J1 treatment with a combination of 60% rice straw and lamtoro leaves 40%. This study was aimed to examine the influence of drying temperature on phytochemical compounds and chemical characteristic of matoa (Pometia pinnata) peels. This study used a completely randomized design with the drying temperature treatments which was divided into P0 = freeze drying (control), P1 = 50Ë%C, P2 = 60Ë%C, and P3 = 70Ë%C, each treatment was dried for 48 hours. Variables observed were phytochemical compounds, water content, ashes content, crude protein, crude fat, crude fiber, IC50, malondialdehide/MDA and phenol. This study used analysis of variance followed by Duncan Multiple Range Test when the results showed significance dierence. It was calculated through Statistical Package for Social Science (SPSS) version 21.0. The results showed that the drying temperature influenced water content and IC 50. The phytochemical compounds of matoa peels were observed through qualitative screening included flavonoids, saponins, and tannins. The best results on the drying treatment of matoa peels was P1 (50Ë%C) which presented 9.47±0.14% water content, 3.74±0.07% ashes content, 4.89±0.03% crude protein, 0.46±0.04% crude fat, 34.42±2.16% crude fiber, 30.92±10.25 IC50, 12.85±1.49 mg/g MDA, and 0.85±0.23% phenol.

Stem and stump of bananas have potential to be used as an alternative for ruminant feed. However, one of the problem is its rapidly decomposing which affect high of water content. The alternative way to solve this matter by using silage. The aim of this study was to determine the nutritional quality of banana waste silage (stems and stump) with the addition of molasses with different levels. The experimental design was a Completely Randomized Design in factorial 3 × 3 with two replications. The first factor (A) was the composition of the substrate, A1: stump 100% + stem 0%, A2: stump 50% + stem 50%, and A3: stump 0% + stem 100%, while the second factor (B) was the levels of molasses (0; 2.5; and 5%). The parameters measured were dry matter, crude protein, crude fiber, extract ether, ash and BETN. The results showed that the composition of the substrate has significant effect (P<0.05) increased content of dry matter, crude protein, crude fiber, BETN, but did not significant (P>0.05) on extract ether and ash content. There was an interaction (P<0.05) between the substrate composition and the addition of molasses on the content of the ash. The best composition for increasing the nutrient content was stump 100% + stemps 0%. It is conclude that the compostion of stump and stemps may affect the nutrient quality of silage.

The purpose of this study was to determine consumtion, weight gain, and conversion of super-native chicken rations feed with fermented sago pulp. Sago pulp is a potential local resource for alternative poultry feed as well as an energy source, this can be seen from the metabolic content of sago pulp reaching 2340 kcal / kg, crude protein 3.40%, and crude fiber 11.61%. The purpose of this study was to determine consumption, weight gain, and conversion of super native chicken rations fed with fermented sago pulp. The research method is an experiment using a completely randomized design. The treatment ration used was T0 = (0% ASF), T1 = (10% ASF), T2 = (20% ASF) T3 = (30% ASF), Each treatment was repeated five times. Variables observed were ration consumption, weight gain, and ration conversion. The results of the study there were consumption, weight gain T3 (30% ASF), T2 (20% ASF), and T1 (10% ASF) significantly higher than treatment T0 (0% ASF). The lowest avarage ration conversion results are found in treatment T1 which is 2,40. The conclusion that fermented sago pulp (ASF) can be used in super native chicken rations to the level of 30%.

ABSTRAKTujuan penelitian ini adalah mengetahui proses fermentasi yang tepat digunakan untuk meningkatkan kualitas protein kasar dan serat kasar pada biji kecipir dan menentukan level terbaik penambahan jamur Trichoderma viride yang mampu meningkatkan kualitas protein kasar dan serat kasar pada biji kecipir sehingga mampu meningkatkan kualitas dan tingkat kecernaan. Produk yang akan dihasilkan pada penelitian ini adalah alaternatif pakan fermentasi biji kecipir (Psophocarpus tetragonolobus) untuk peternak unggas. Penelitian ini menggunakan rancangan acak lengkap dengan empat perlakuan yaitu P0 = biji kecipir dengan 10% tepung jagung tanpa fermentasi; P1 = Biji kecipir dengan 10% tepung jagung + 0,1% jamur Trichoderma viride (Tv); P2 = biji kecipir dengan 10% tepung jagung + 0,2% Tv; dan P3 = biji kecipir dengan 10% tepung jagung + 0,3% Tv. Materi yang digunakan adalah biji kecipir yang dihaluskan digunakan sebagai substrat dan dihomogenkan dengan cara diaduk. Masing-masing sampel perlakukan ditimbang sebanyak 100 g, kemudian dimasukkan ke dalam kantong plastik dengan ketebalan 2 cm  dan dilubangi agar tercipta suasana aerob. Selanjutnya diinkubasikan dalam ruang fermentor pada suhu 30oC selama 7 hari. Masing-masing perlakuan diulang sebanyak 3 kali. Peubah yang diamati pH, suhu, protein kasar dan serat kasar. Berdasarkan penelitian ini dapat disimpulkan bahwa terjadi perubahan suhu, penurunan pH, serta kenaikan pada protein kasar dan penurunan serat kasar.Kata kunci: biji kecipir, Trichoderma viride, pH, suhu, protein, serat kasar ABSTRACTThe purpose of this study was to determine the proper fermentation process used to improve the quality of crude protein and crude fiber in winged beans and the best level of addition of Trichoderma viride fungus which could improve the quality of crude protein and crude fiber in winged beans to improve feed quality and digestibility. The result product of this study is an alternative fermented winged bean (Psophocarpus tetragonolobus) feed for poultry farmers. This study utilized completely randomized design with four treatments. P0 = Unfermented winged beans with cornstarch, P1 = winged beans with 10% cornstarch + 0,1% Trichoderma viride fungus (Tv), P2 = winged beans with 10% cornstarch + 0,2% Tv, P3 = winged beans with 10% cornstarch + 0,3% Tv. The material used were powdered winged beans as substrate then homogenized by stirring. Each sample was weighed 100 g, then put into a plastic bag with a 2 cm thickness and perforated to create an aerobic atmosphere. Subsequently, the sample was incubated in a fermenter room at 30oC for 7 days. Each treatment was repeated 3 times. Variables observed for pH, temperature, crude protein, and crude fiber. The result of this study concluded that there were change in temperature, decrease in pH, increase in crude protein, and decrease in crude fiber.Keywords: winged beans, Trichoderma viride, pH, temperature, protein, crude fiber
