This paper discussed all about seaweed utilization and management. The method that used in the form of experiments conducted by making various kinds of seaweed formulas, casava flour with a mixture of wheat flour. After that, an examination was carried out to determine the durability of the seaweed noodles by comparing the seaweed noodles placed in the refrigerator and in an open room. Seaweed (Eucheuma cottonii) and cassava flour have a lot of protein content so that they can be made into something of high value, namely seaweed noodles, because the ingredients are easy to obtain and good for consumption by the body's growth. Apart from being easy to get, seaweed (Eucheuma cottonii) and cassava are also environmentally friendly because they come from natural ingredients and do not endanger health.

Characteristic of cassava flour is relatively similar to wheat flour. Cassava flour has the potential to substitute 70-80% of wheat flour as the main ingredient for wet noodle production. Unfortunately, cassava flour has no gluten and lower protein content than wheat flour, which is important for the characteristic of a wet noodle. Therefore, transglutaminase (MTGase) is often applied in non-gluten products to improve its texture. This enzyme catalyzes the reaction between lysine and glutamine to form isopeptide cross-links. Moreover, the addition of MTGase to cassava-based wet noodle improves its texture and color. In addition, this effect gives better palatability for wet noodle. This enzyme can increase the shelf life of wet noodles and safe for our health. The present study demonstrates with patent and literature data the potential of MTGase in noodles based on cassava flour.

Cassava (Manihot esculenta Crantz) and cowpea (Vigna unguiculata L. Walp) were processed into flours and used to substitute wheat flour for preparation of cookies. The chemical, including proximate composition and anti-nutritional factors, and functional and pasting properties of the blends were determined. Cookies were produced from the blends with 100% wheat flour as a control. The anti-nutritional factors, physical properties and organoleptic attributes of the cookies were evaluated. An increase in the level of cassava flour substitution resulted in a decrease in the protein content of the composite flour. However, addition of cowpea flour resulted in an increase in the protein content. There were significant (p<0.05) reductions in the studied anti-nutritional factors after baking. Cookies from composite flours were not significantly (p>0.05) different from the control in overall acceptability. This indicates the feasibility of producing nutritious cookies with desirable organoleptic qualities from cassava, wheat and cowpea composite flour.

Abstract   Community service in Reno Basuki village, Rumbia, Central Lampung was focus to develop the group of farm women or KWT. KWT is one of the way to make a  good effect on economics situation of society and also the way to solve the problems of national economics. The biggest comodity in KWT Enggal Mukti is cassava. Product from cassava can be a solution of Indonesian’s problem. One of the problem about economics in Indonesia is about the number of using wheat flour. As we know that wheat flour was produced by using wheat and Indonesia cannot produce it. So, the Indonesian’s goverments have a decision to import it from the other country. This situation is not good for Indonesia because it can make bad impact for Indonesia. The way to solve this condition is looking for the other kind of flour, and one of them is MOCAF (Modified Cassava Flour). Finally, the community service in KWT Enggal Mukti is training about ‘how to make mocaf’. KWT sebagai salah satu tonggak perubahan perekonomian keluarga menjadi sebuah jalan untuk memperbaiki perekonomian nasional. Komoditas yang melimpah di kawasan KWT Enggal Mukti adalah singkong. Pemanfaatan singkong menjadi sebuah jalan baru untuk menyelesaikan permasalahan perekonomian di Indonesia Permasalahan yang kini terjadi adalah adanya kecenderungan masyarakat Indonesia dalam menggunakan tepung gandum, baik dibuat dalam bentuk olahan gorengan, kue, atau yang lainnya. Akan tetapi, gandum bukanlah komoditas asli dari Indonesia sehingga pemenuhan gandum dilakukan dengan cara impor. Hal ini pastilah sangat berdampak pada perekonomian nasional. Oleh karena itu, pada pengabdian masyaraakt ini akan dilakukan pelatihan pembuatan mocaf (modified cassava flour) sebagai alternatif pengganti tepung terigu. Kata Kunci: KWT, Pelatihan, Mocaf

Cassava leaves are abundant green leaves and affordable. This research uses cassava leaves of sleedlings type with white, pink stalk with light green leaf colour made into flour to be processed food products. The purpose of this research was to analyze the physical properties and chemical content of brownies steamed by the addition of cassava leaf flour based on a mineral test (Ca, P, Fe), water content, ash content, protein content, fat content, carbohydrate and crude fibre content. A panellist assessment of brownies steamed based on organoleptic test results and determining the formulation of good brownies cake products from the ratio of wheat flour and cassava flour used. This research was designed using Completely Randomized Design (RAL) with three replications such as  A0 (100% wheat flour: 0 (control)), A1 (85% wheat flour: 15% cassava flour), A2 (70% wheat flour: 30% cassava flour) and A3 (55% wheat flour: 45% cassava flour). The parameters observed were proximate tests which included (water content, ash content, protein content, fat content, carbohydrate content), mineral tests (Ca, P, Fe), crude fibrecontent, organoleptic test. The best treatment was A3 which has water content 20,83%, ash content 2,88%, protein content 9,48%, fat content 23,68%, carbohydrate 42,13% and fiber content 1,12%, content mineral calcium 12.56 g / kg, phosphorus 2.06 g / kg, iron 61.06 ppm. The result of the panellist's assessment of the level of preference to steamed brownies was A0 with the average value of organoleptic score is texture 4.08 (like), colour 4,1 (like), taste 4.04 (like), and flavour 4 (like)

Wheat flour and rice flour mostly used to produce local food — nutrition content in cassava flour the same as wheat flour. Cassava flour can substitute wheat flour. Green bean flour has a high protein content as 22,9%. Mixing green bean flour (Phaseolus radiatus) in cassava brownies steamed can increase the protein content. This research was aimed to determine the effect of variation mixing green bean flour (Phaseolus radiatus) in cassava brownies steamed on physical properties, organoleptic characteristics and protein content. This research used semi experiment design with the random design group. Kruscal walls and Anova one way were used for organoleptic data characteristics. LSD test was used for protein content. Physical properties were done by the researcher, the organoleptic characteristic was done by semi-trained panellists and protein content was done in the laboratory. The result was variation mixing green bean flour (Phaseolus radiatus) gives effect on physical properties (taste and flavour) and protein content (p<0,05). Mixing green bean flour in cassava brownies steamed did not give effect on organoleptic characteristics (p>0,05). The conclusion was variation mixing green bean flour (Phaseolus radiatus) gives effect on physical properties and protein content but did not give an effect on organoleptic characteristics.

This aims of this research was to know the effect of comparison between green bean flour and wheat flour on characteristic of analogue meatball and to know the right comparison of green bean flour and wheat flour to produce analogue meatball with the best characteristics. The design used in this research was completely randomized design (CRD) with the comparison between green bean flour and wheat flour i.e. (70 g :30 g), (60 g :40 g), (50 g :50 g), (40 g :60 g), and (30 g :70 g). Data were analysed by analysis of variance, followed by Duncan test. The result of this research showed that the comparison between green bean flours and wheat flour had no real effect on water content and aroma of analogue meatball, but significant effects were found on ash content, protein content, fat content, crude fiber content, texture, sensory characteristic such as color, flavour, texture, and overall acceptance of analogue meatball. The best characteristic of analogue meatball was comparison between green bean flour and wheat flour 30 g : 70 g i.e. 59.00 percent of water content, 1.34 percent of ash content, 6.88 percent of protein content, 1.77 percent of fat content, 1.77 percent of crude fiber content, level of elasticity 6.38 N, color (liked), aroma (neutral), texture (liked) with chewy characteristics, with the taste is rather not typical of green beans and liked, and overall acceptance (liked).

This study was aimed to determine the effect of wheat flour comparison with red bean sprout flour on the characteristics of pancakes and to determine the exact concentration of red bean sprout flour that was able to produce pancakes with the best characteristics. This study used a randomized block design with the ratio of flour and red bean sprouts (100%: 0%, 60%: 40%, 50%: 50%, 40%: 60%, 30%: 70%), repeated three times to obtain 15 units of experiment. The data obtained were then analyzed by variants and if there was any effect on the treatment, then continued with Duncan test. The variables observed were moisture content, ash content, protein content, fat content, carbohydrate levels, coarse fiber content, and sensory characteristics. The results showed that the addition of red bean sprout effected moisture content, ash content, protein content, fat content, carbohydrate content, crude fiber content, colour, aroma, taste, texture, and overall acceptance of pancake. The best characteristic of pancake substitution was 50% wheat flour and 50% red bean sprout flour that produced moisture content 36.14%, ash content 1.86%, fat content 24.15%, protein content 8.31%, carbohydrate content 29.53 %, crude fiber content 16.81%, light brown colour (liked), typical aroma of red beans (liked), soft texture (liked), flavour of red beans (liked), and overall acceptance (liked). The nutrient composition and the acceptability of biscuit from composite flours of wheat, Bambara groundnut (Vigna subterranea), Ground bean seed (Macrotyloma) and Moringa seed (Moringa oleifera) were evaluated. Bambara groundnut (Vigna subterranea), Ground bean seed (Macrotyloma) and Moringa seed (Moringa oleifera) were dried, and processed into flour. The flour blends developed was used as a substitute for wheat flour as composite flour. The resulting mixtures were then used to produce biscuits at different ratios of wheat flour to flour blends; 100:0, 90:10, 80:20 and 70:30 level of the flour blends. The pasting properties, proximate composition, minerals, physical (spread ratio, weight, thickness and colour) and sensory properties of the composite biscuit were evaluated. The pasting properties of the flours showed that pasting temperature ranged from 68.50°C - 70.0°C and the peak viscousity range from 101.17 RVU – 207.17 RVU, while Break down (43.0 RVU) was highest in 90% wheat: 10% (Bambara- groundnut-ground bean seed- moringa seed flour) (WFF1). The protein content increased from 12.50% in the control (100% wheat flour) to a range of 14.40% - 16.19% in the biscuits; crude fibre decreased from 2.83 to 2.40 - 1.84%, ash content increased from 1.26% to a range of 1.53 - 2.01%, while carbohydrate and energy value reduced from 69.20 to 65.54 - 63.36% and 384.04 Kcal/100 g to 391.34 - 391.55 Kcal/100 g respectively. As the ratio of blends level increase, the thickness, diameter and weight increased but the spread ratio decreased. In conclusion incorporation of bambara groundnut, ground bean seed and moringa seed flour blends played important role in enhancing the nutritional properties of biscuits through improving their protein content, energy value and mineral elements especially calcium and potassium.

Effect of Acquisition of Cassava Flour With Differentcontributions to The Quality of Liquid Silage From The Heads of Vaname Shrimp (Litopenaeus vannamei) ABSTRACT         Silage is a liquid product from the process of fermentation of grass, fish or waste that is used as a mixture of feed. Generally, silage is made from fish or fish waste. Fish silage is a liquid product made from the remnants of processed fishery products that are not utilized by humans without any other treatment except by acid or by bacterial inoculation. The purpose of this study was to determine the effect of the use of cassava flour on sensory values (color and aroma) and proximate composition (water content, ash content, protein content, and pH) on the liquid silage of shrimp head. This study used a Completely Randomized Design (CRD) consisting of four treatments with a ratio of cassava flour and shrimp heads respectively: 10: 90% (P1), 20: 80% (P2), 30: 70% (P3) and 40: 60% (P4) and repeated three times. Data from observations were analyzed using ANOVA (Analysis of Variance) and DMRT (Duncan Multiple Range Test) tests, each at a 95% confidence level. The results obtained indicate that the use of cassava flour has a significant influence on the sensory value which includes the color and aroma of liquid shrimp silage. The P1 treatment showed a brownish-orange color and a typical silage aroma/odor without additional odor. Proximate composition of silage includes: water content 74.2% -82.6%, ash content 1.9% -3.2%, protein content 7.4% -11.9% and pH ranges from 4.3-5.4. Keywords: Silage, Vaname shrimp head (Litopenaeus vannamei), cassava flour, Sensory Test, Proximate Composition. ABSTRAKSilase merupakan produk cair hasil proses fermentasi rerumputan, ikan ataupun limbahnya yang digunakan sebagai campuran pakan. Umumnya silase terbuat dari ikan atau limbah ikan. Silase ikan adalah suatu produk cair yang dibuat dari sisa-sisa olahan hasil perikanan yang tidak dimanfaatkan oleh manusia tanpa perlakuan lain kecuali dengan asam atau dengan inokulasi bakteri. Tujuan penelitian ini adalah untuk mengetahui  pengaruh penggunaan tepung gaplek terhadap nilai sensori (warna dan aroma) dan komposisi proksimat (kadar air, kadar abu, kadar protein dan pH) pada silase cair kepala udang. Penelitian ini menggunakan Rancangan Acak Lengkap (RAL) yang terdiri dari empat perlakuan dengan perbandingan tepung gaplek dan kepala udang berturut-turut: 10:90% (P1), 20:80% (P2), 30:70% (P3) dan 40:60% (P4) dan ulangan sebanyak tiga kali. Data hasil pengamatan dianalisa menggunakan ANOVA (Analysis of Variance) dan uji DMRT (Duncan Multiple Range Test) masing-masing pada taraf kepercayaan 95%. Hasil penelitian yang diperoleh menunjukkan bahwa penggunaan tepung gaplek memberikan pengaruh yang nyata terhadap nilai sensori yang meliputi warna dan aroma silase cair kepala udang. Perlakuan P1 menunjukkkan warna jingga kecoklatan dan aroma/bau asam khas silase tanpa bau tambahan. Komposisi proksimat silase meliputi: kadar air 74,2%-82,6%, kadar abu 1,9%-3,2%, kadar protein 7,4%-11,9% dan pH berkisar 4,3-5,4.Kata kunci: Silase, Kepala udang vaname (Litopenaeus vannamei), Tepung gaplek, Uji Sensori dan Komposisi Proksimat

ABSTRAK  Pengabdian ini mempunyai tujuan untuk  memberikan pengetahuan dan pengajaran mengenai pembuatan tepung mocaf dan penggunaannya sebagai bahan dasar pengganti tepung terigu dalam pembuatan mie sehingga dapat membantu ibu-ibu di Desa Jaya Sakti dalam memenuhi kebutuhan mereka membuat mie dari tepung mocaf dengan harapan hasil produk dapat dijual sehingga dapat menambah income bagi keluarga mereka. Khalayak sasaran adalah Ibu-ibu PKK dan warga sekitar Desa Jaya Sakti. Pelatihan ini di laksanakan dalam satu kali pertemuan, Pertemuan dilakukan di rumah Kepala Desa Jaya Sakti Muaragembong Bekasi Pertemuan diawali dengan pembukaan kemudian memberikan materi dan praktek pembuatan tepung mocaf, dan pembuatan mie dari tepung mocaf. Untuk bahan dasar mie tepung mocaf digunakan yang telah siap pakai. Tepung  Mocaf  (Modified  Cassava  Flour),  adalah produk tepung  dari ubi kayu/singkong yang diperoses menggunakan prinsip memodifikasi sel ubi kayu dengan cara fermentasi. Mikroba yang tumbuh menyebabkan perubahan karakteristik pada tepung yang dihasilkan, yaitu naiknya viskositas, kemampuan gelasi, daya rehidrasi, dan kemudahan melarutkan. Mikroba   juga   menghasilkan   asam-asam   organic,   terutama   asam   laktat   yang   akan terimbibisi dalam tepung, dan ketika tepung itu diolah akan menghasilkan aroma dan citra rasa khas, yang dapat menutupi aroma dan citra rasa ubi kayu yang cenderung tidak menyenangkan konsumen. Tekstur dan warna tepung mocaf ini lebih halus dan lebih putih dari tepung terigu. Untuk   pengembangan   lebih   lanjut,   maka   tepung   mocaf   diaplikasikan   untuk membuat mie, selain nilai jualnya lebih baik lagi karena menghasilkan produk yang lain dan langsung bisa di konsumsi. Dari hasil kegiatan pengabdian ini terlihat antusias dari para peserta, karena mereka senang mendapatkan pengetahuan baru yang dapat mereka praktekkan di rumah masing- masing.   ABSTRACTThis dedication aims to provide knowledge and teaching about making mocaf flour and its use as a substitute of wheat flour in making noodles so it can help mothers in Jaya Sakti Village in fulfilling their need to make noodles from mocaf flour in the hope that the product can be sold so that can increase income for their families.Target audiences are PKK mothers and residents around Jaya Sakti Village. For basic materials used mocaf flour noodles that have been ready to use.Mocaf Flour (Modified Cassava Flour), is a flour product of cassava / cassava that is processed using the principle of modifying cassava cells by fermentation. Increased microbes cause characteristic changes in the resulting flour, namely increased viscosity, gelability, rehydration, and ease of dissolution. Microbes also produce organic acids, especially lactic acid which will be added to the flour, and when the flour is processed it will produce a distinctive flavor and taste image, which can mask the flavor and taste of cassava that tend to discomfort the consumer. The texture and color of the mocaf flour is finer and whiter than wheat flour.For further development, then the mocaf flour is applied tomaking noodles, in addition to the selling price is better because it produces other products and can directly in consumption.From the results of this devotional activity look enthusiastic from the participants, because they love to get new knowledge that they can practice in their homes.
