Mie merupakan makanan siap saji paling diminati di Indonesia, Namun, mengkonsumsi mie terlalu sering sangat tidak baik bagi kesehatan karena mie mengandung banyak bahan pengawet yang membahayakan tubuh. Berbagai upaya telah dilakukan untuk membuat mie yang sehat, oleh kaena itu peneliti tertarik melakukan inovasi dengan melakukan uji organoleptic kulit buah naga merah (Hylocereus polyrhizus) sebagai pewarna alami mie. teknik pengumpulan data menggunakan kuesioner uji organoleptik dengan skala likert yang terdiri dari 3 indikator yaitu warna, rasa, dan tekstur. selanjutnya dilakukan analisis data menggunakan analisis Bivariat dengan uji friedman. hasil uji friedman menunjukkan  P=0,000, artinya ada pengaruh pemanfaatan kulit buah naga merah (Hylocereus polyrhizus) sebagai pewarna alami terhadap organoleptik.   Kata Kunci: kulit buah naga merah, pewarna alami, mie, organoleptik.   ABSTRACT   Instant noodles constitute the food favorite in indonesia, but, consume noodles too often are better for health due noodles containing many preservative bodily harm.Various efforts have applied by healthy to noodles, by kaena that researchers interested do carry out innovation with organoleptic rind red polyrhizus dragon hylocereus ( natural ) as a dye noodles. Technique using a questionnaire the data collection of organoleptik likert consisting of indicators, the color 3 the, and texture. Next data analysis was conducted using analysis bivariat by test friedman. The the friedman show p = 0,000, that is influence rind dragon of red ( hylocereus polyrhizus ) as a dye to organoleptik natural.   Keywords: the rind of the fruit red dragon, a natural dye, noodles, organoleptik.

Mumbai was one of the 1st cities in India to go into total lockdown in March 2020. The lockdown was expected to have an influence on eating habits specially the snacking patterns. The main objective of this study was to access the change in snacking patterns of participants living in Mumbai city, India during lockdown. Data was collected in 256 Mumbai residents (60 males, 196 females) using Google forms. Information regarding number of meals consumed, meals at which snacks were consumed, change in snacking pattern, reasons for increase or decrease in snacking, and type of snacks consumed during lockdown as compared to before lock was collected. Around 20% reported a decrease, 31% reported no change and 49% reported an increase in snack consumption during lockdown. Participants consumed higher number of meals during lockdown (p<0.05). Significantly higher percentage of participants did not consume store brought snacks during lockdown (30.9% vs 13.7%) (p<0.05). Significantly higher percentage of participants consumed snacks at mid-evening (50.4% vs 33.6%), late evening (48% vs 32%) and late night (32% vs 16.8%) during lockdown as compared to before lockdown (p<0.05). Significantly change in lemon-water (57.8% vs 43.4%), coffee (47.3% vs 40.6%) and carbonated beverages (14.8% vs 23.4%) was observed during lockdown as compared to before lockdown (p<0.05). Significant increase in nuts (74.2% vs 65.6%), instant noodles (69.5% vs 60.9%) and biscuits (78.5% vs 68%) was observed during lockdown as compared to before lockdown (p<0.05). Significant decrease in South Indian (61.75 vs 69.1%), Frankie (32.8% vs 51.6%), bhel (50.4% vs 69.1%), Chinese bhel (21.5% vs 35.5%) and usal (32% vs 40.2%) was observed during lockdown as compared to before lockdown (p<0.05). To conclude, snacks were consumed at more number of meals during lockdown in comparison to before lockdown. A change in type of snacks consumed was observed during lockdown. Ready and easy to eat snacks such as nuts, instant noodles and biscuits showed an increase whereas snacks that require elaborate cooking procedure showed a decrease in consumption. With partial lockdown still persisting in many parts of the country and many still working from home it is imperative to circulate more accurate information on appropriate snacking habits.

Edible starch-based film was developed for packaging seasoning applied in instant noodles. The edible film can quickly dissolve into hot water so that the seasoning bag can mix in the soup of instant noodles during preparation. To meet the specific requirements of the packaging, such as reasonable high tensile properties, ductility under arid conditions, and low gas permeability, hydroxypropyl cornstarch with various edible additives from food-grade ingredients were applied to enhance the functionality of starch film. In this work, xylose was used as a plasticizer, cellulose crystals were used as a reinforcing agent, and laver was used to decrease gas permeability. The microstructures, interface, and compatibility of various components and film performance were investigated using an optical microscope under polarized light, scanning electron microscope, gas permeability, and tensile testing. The relationship was established between processing methodologies, microstructures, and performances. The results showed that the developed starch-based film have a modulus of 960 MPa, tensile strength of 36 Mpa with 14% elongation, and water vapor permeability less than 5.8 g/m2.h under 20% RH condition at room temperature (25 °C), which meets the general requirements of the flavor bag packaging used in instant noodles.

Background:  Distributing Food Supplies for andalas university students that wander in Padang who are affected by the Covid-19 Pandemic is essential.  Methodology: The distribution of basic food packages consisting of rice, eggs, cooking oil, milk and instant noodles has been carried out in 2 stages. This package can feed students for 1 week and help them to survive this difficult time. This program was directly supervised by the Dean of the Faculty of Agricultural Technology, Andalas University and implemented jointly with all members of the Faculty of Agricultural Technology, Andalas University. Conclusion: This activity can increase solidarity with the care of others affected by Covid-19 and also encourage understanding and interest in community empowerment, especially in tackling the spread of coronavirus

This study aims to identify the training transitions and dietary habits of volleyball athletes' before and during Ramadan in the Covid-19 pandemic. The research design used is descriptive quantitative with a sample of 12 male junior volleyball athletes in the academy Sidoarjo volleyball. The results showed that most athletes experienced a decrease in the frequency of exercise during the month of Ramadan, especially during the COVID-19 pandemic. A total of 33.3% of athletes maintained their exercise frequency, and 66.7% experienced a decrease in exercise frequency. Furthermore, during Ramadan and Covid-19, there was an increase in the frequency of eating 1-2 times a day (58.4%), snack consumption (50%), fruit and vegetables (75%), fried foods 4-7 times a week (8.4%), instant noodles 1-3 times a week (25%) and fast food 1-3 times a week (8.4%) in athletes. Concerning this, it is imperative to revitalize the program and monitor the athlete's training periodically, which is adjusted to the conditions of the COVID-19 pandemic and provide a dietitian to regulate the athlete's diet to obtain a balanced nutritional intake following the exercise portion.Assessmen transisi latihan dan pola makan atlet sebelum dan saat ramadan di masa pandemi Covid-19AbstrakTujuan dari penelitian ini adalah untuk mengidentifikasi transisi latihan dan pola makan atlet bola voli sebelum dan saat ramadan di masa pandemi Covid-19. Desain penelitian yang digunakan yaitu deskriptif kuantitatif dengan sampel 12 atlet laki-laki bola voli junior yang masih aktif dalam menjalani pemusatan latihan di Akademi Bola Voli Indomaret Sidoarjo. Hasil penelitian menunjukkan bahwa mayoritas atlet mengalami penurunan frekuensi latihan saat ramadan khususnya di masa pandemi covid-19. Sebanyak 33,3% yang mampu mempertahankan frekuensi latihan dan 66,7% mengalami penurunan frekuensi latihan. Selanjutnya, saat ramadan dan Covid-19 terjadi peningkatan frekuensi makan 1-2 sehari (58,4%), konsumsi camilan (50%), buah dan sayuran (75%), gorengan 4 – 7 kali dalam seminggu (8,4%), mie instant 1 – 3 kali dalam satu minggu (25%)  serta makanan cepat saji  1 – 3 kali dalam seminggu (8,4%) pada atlet. Berdasarkan hal ini, maka sangat penting untuk melakukan revitalisasi program dan pemantauan latihan atlet secara berkala yang disesuaikan dengan masa pandemi covid-19 dan menyediakan dietisien untuk pengaturan makan atlet agar dapat memperoleh asupan gizi seimbang sesuai dengan porsi latihannya.

PT. XYZ is a manufacturing company that produces processed food. Instant noodles is one of the type product that produced by PT. XYZ, which contains raw material for spice as one of the main complementary material. This research focused on the waste of raw material for instant noodles seasoning. The purpose of this research is to reduce the waste and to determine which factors that cause waste. This study using Plan Do Check Action method which is expected to reduce waste that occurs within the company. The highest waste within 18 days of production was 15.28%, the lowest was -2.3% and there was no waste, and the average waste during that period was 3.2%. the result of the highest and dominant factor in the waste of raw material was the lack of skill of the operator was just moved from screw division, thus they didn’t know how to operate machine. While the second factor was the lack of maintenance of the machine by quality control departement for pitch standardization. And the third factor was the cutter knife didn’t really cut because of the cutter block.

The goal of this study was to determine the effect of rice and hemp protein addition together with transglutaminase on the quality and fat content of fried instant noodles. The following parameters have been analyzed during this research: the amount of water, fat content, hydration time, color and texture parameters. The evaluation of sensory parameters before and after cooking of instant noodles has been performed. It can be concluded that the addition of TGase significantly decreased the fat content; the recipe with a 3% hemp protein addition with TGase in an amount of 2% was the most promising solution to obtain a low-fat product. On the other hand, the better consumer acceptance levels were observed for the rice protein addition (1%) with 2% TGase. It seems that the most promising product is the sample with a 5% addition of rice protein with 2% TGase-a reduction in the fat content by 30% (from 25% to 16%). The addition of rice protein, hemp protein and TGase reduced the fat content of the instant noodles in comparison to the control sample. The additives used had an impact on the L*, a* and b* color parameters. All instant noodles obtained during the research process were characterized by a short hydration time, which did not exceed 5 min. During the sensory evaluation, analyzed samples of the instant noodles obtained scores higher than 4.2 points on a five-point scale.
