The technologies for developing food products for people with type 2 diabetes involve enrichment with polyphenolic compounds that have hypoglycemic and/or hypolipidemic properties. The production of ingredients for introduction into such food products should involve the techniques of concentration of natural polyphenols on certain food-grade protein matrices. In this study, a technology was developed for the production of a functional food ingredient, which was a complex of polyphenols (mostly anthocyans) from cranberries with coagulated egg albumen. The optimal parameters of sorption of anthocyans from cranberry juice on the albumen during the coagulation of the latter were determined. The contents and profile of anthocyans within the resulting food ingredient were assessed. The concentration of total anthocyans (recalculated to equivalents of cyanidin-3-glucoside) was determined by pH-differential spectrophotometry; the profile of individual anthocyans was determined by highperformance liquid chromatography. Sensory evaluation of the resulting ingredient (through a taste panel test) evidenced the possibility of including the product in the functional foodstuffs. The technology developed can be used in the design of functional food ingredients for subsequent introduction into anti-diabetic food products. Abstract The continued exploration of novel synthetic memristive materials with multifunctional properties is critical for future synapse-emulating circuits and electronic devices in the field of next-generation neuromorphic computing applications. In this work, the silver nanowires (AgNWs)-Egg albumen composites have been integrated as a resistive switching layer in the Ag/AgNWs-Egg albumen/Ag planar structure and exhibits both unipolar (memory) switching and threshold switching functions. The device in unipolar switching regime demonstrates an ON/OFF ratio above 105, a low resistance state of about 1.2 KΩ and a high resistance state of about 120 MΩ. Finally, a mechanism in combination with the conductive filament theory and a tunnelling conduction mechanism is proposed to explain the resistive switching behavior. The devices are prepared by simple and low-cost techniques, which make such devices appealing for future electronic applications.

The solution to the problem of reducing the use of antibiotics in the production of edible eggs is possible through the development and use of alternative bactericidal preparations, including those based on nanosilver. Obtaining biocompatible and biodegradable polymer/inorganic carriers of nanosilver provides for the study of its cumulative qualities which determine the safety of edible chicken eggs. The study investigated the mineral composition of edible eggs when feeding Hy-Line W36 laying hens solutions of the nanosilver preparation in carriers based on polymer/inorganic hybrids (AgNPs/SPH) given in the concentrations of 0, 1.0, and 2.0 mg/L of water (0, 0.2 and 0.4 mg/hen per day) three times at 10 day intervals. Oral administration to laying hens of an aqueous solution of silver nanoparticles in carriers based on polymer/inorganic hybrids at doses of 0.2 and 0.4 mg per hen per day in a dose-dependent manner increased the silver content and did not significantly affect the content of copper, zinc, iron, and lead in the eggshell. The preparation of silver nanoparticles did not affect the content of silver, copper, zinc, iron and lead in the albumen and yolk of chicken eggs after the first and second application, and after the third treatment of laying hens contributed to an increase in the silver content in the egg albumen and yolk but did not affect the content in them of copper, zinc, iron and lead. A single feeding of a solution of a preparation of nanosilver in carriers based on polymer/inorganic hybrids to hens at doses of 0.2 and 0.4 mg per hen per day after 10 days, contributed to a significant increase in the yolks of chicken eggs due to a decrease in the albumen and eggshell. The second and third application of nanosilver to poultry in the indicated doses contributed to a decrease in its proportion in the albumen and in the yolk due to a significant increase in its proportion in the shell. Selective accumulation of in-shell silver can be a promising means of improving the safety and security of chicken eggs when they are microbially contaminated. The results of using nanosilver based on polymer/inorganic hybrids in laying hens can be the basis for the development of methods for increasing the bactericidal properties of the shell and the safety of edible eggs.

Feed efficiency (FE) is an important measure of productivity in the layer industry; however, little is known about how FE differs between individual hens during the egg-laying cycle and the implications for egg quality parameters. Individual 25-week-old ISA Brown hens were observed for 42 days, ranked into three FE groups (n = 48 per High (HFE), Medium (MFE) and Low (LFE) FE groups and then monitored later in the laying cycle from 35–40 weeks. The groups exhibited different feed to egg conversion ratios (p < 0.001) from 35–40 weeks. Average daily feed intake and body weight were highest (p < 0.001) in the LFE group compared to the MFE and HFE groups, while albumen height, Haugh unit and amino acid concentrations of the albumen were significantly higher in the HFE groups compared to the LFE cohort (p < 0.001). This study concludes that FE status established in early lay is a stable variable until at least 40 weeks of age, and overweight, mid-laying hens that had poor FE produced inferior egg albumen quality measurements and composition. The distinct traits of the highly efficient hens and the poor feed efficient hens may provide important information to improving productivity in egg production.

<b>The aim of study was to analyze the impact of the utility type, age and rearing system of hens on egg quality traits and the enzymatic activity of egg albumen lysozyme (LA). The material consisted of 120 eggs from two genotypes of hens: Hy-Line Brown and parent stock of Ross 308. Laying-type hens were reared divided into 2 systems: intensive (litter, balanced feed) and extensive (open runs, farm fodders). The second source of material was hens age (29, 33, 41, 53 and 70 wks) of the parent stock.. Stocks were differentiated in terms of the hens age (29, 33, 41, 53 and 70 wks). Eggs quality traits and LA were evaluated. The LA of was higher in eggs from laying than from broiler breeder hens. It decreased with the hens’ age and increased with albumen mass, it was also positively correlated with albumen height and Haugh's units. The rearing system considerably modified mass of egg and albumen and the dense albumen height, but does not affect the LA.

Background: Egg albumen paneer (EAP) is a novel food product simulating the popular milk based paneer. The study was conducted to develop binders incorporated egg albumen paneer (EAP) and to find their effects on its quality characteristics. Methods: Binders used were glutinous rice flour (GRF), Joha rice flour (JRF), wheat flour (WF) and oat flour (OF) in different formulations. EAP cubes were analysed for proximate composition, sensory qualities, texture profile and colour profile. Microbiological studies of the cubes stored at refrigeration temperature were enumerated for Total Viable Plate Count (TVPC), Total Psychrophilic Count (TPC) and Yeasts and Mould Counts at regular interval upto 90 days. Result: Study revealed highest yield percentage in T3 formulation. The proximate compositions for moisture, protein, fat and ash differs significantly among the different formulations. Analysis of Texture Profile found T3 group with the highest value for hardness, chewiness and resilience quality while T2 group was found for springiness and cohesiveness, while no significant difference was found for colour profile for any of the formulations. The microbial counts were within the acceptable range. It can be concluded that Egg Albumen Paneer could be prepared satisfactorily by incorporating different combinations of cereal flours.

In this paper, a tuneable multilevel data storage bioresistive memory device is prepared from a composite of multiwalled carbon nanotubes (MWCNTs) and egg albumen (EA). By changing the concentration of MWCNTs incorporated into the egg albumen film, the switching current ratio of aluminium/egg albumen:multiwalled carbon nanotubes/indium tin oxide (Al/EA:MWCNT/ITO) for resistive random access memory increases as the concentration of MWCNTs decreases. The device can achieve continuous bipolar switching that is repeated 100 times per cell with stable resistance for 104 s and a clear storage window under 2.5 × 104 continuous pulses. Changing the current limit of the device to obtain low-state resistance values of different states achieves multivalue storage. The mechanism of conduction can be explained by the oxygen vacancies and the smaller number of iron atoms that are working together to form and fracture conductive filaments. The device is nonvolatile and stable for use in rewritable memory due to the adjustable switch ratio, adjustable voltage, and nanometre size, and it can be integrated into circuits with different power consumption requirements. Therefore, it has broad application prospects in the fields of data storage and neural networks.

Morinda lucida Benth (Rubiaceae) is a versatile plant used in traditional medicine for the treatment of a variety of ailments and the claims of its efficacy are particularly remarkable in the treatment of infections and immuno-inflammatory disorders. This study evaluates the anti-inflammatory properties of methanolic stem bark extract and fractions of M. lucida and also identifies the phytochemicals responsible for its anti-inflammatory activity. The crude extract was subjected to liquid- liquid partitioning successively with n- hexane, ethylacetate, butanol and water. High performance liquid chromatography (HPLC) of the four fractions and Vacuum Liquid Chromatography fraction (VLC) of the promising fraction was evaluated. The effect of the fractions on egg albumen induced rat paw oedema were also evaluated. Anti-inflammatory activity of the fractions was further screened using xylene induce ear oedema models and human red blood cell membrane stabilization test. Ulcerogenic test on the normal stomach mucosa was also evaluated. The result of the egg albumen induced rat paw oedema showed that the butanol fractions maximally inhibited egg albumen induced effect at 400 mg/kg (70%) and 200mg/kg (67.5%) after 180 minutes compared to the positive control, ibuprofen (20mg/kg) with 100% inhibition after 180 minutes. The result of the xylene induced ear oedema showed that the inhibition produced by 100 µg/ear of the Butanol fraction (BF) was 56.67 % and was greater than inhibition produced by 200 µg/ear of ibuprofen (38.89 %). HPLC analysis of the fractions revealed the following phytocompounds; Cytreo- a-pyrone, Cytosporin- J and Waol A. Ulcerogenic test was negative at the doses of 200 mg/kg and 400 mg/kg of the fractions when compare with the indomethacin (positive control) at dose of 50 mg/kg. Human red blood cell membrane stabilization assay showed that BF-VLC 2 (Dichloromethane: methanol (8:2) VLC of Butanol fraction) exhibited concentration dependent inhibition of heat-induced haemolysis while other extract showed a non- concentration dependent inhibition of haemolysis when compared to the standard, ibuprofen. These findings suggest that the stem bark of M. lucida possess promising anti-inflammatory phytocompounds which justify its use in ethno-medicine.
