The fresh-cut industry supplies the food market with healthy fresh fruit and vegetables and, in that way, may contribute to improve the nutritional status of the general population. On the other hand, over the last few years increasing concerns have been raised regarding the environmental impact of the fresh-cut industry, human health risks from exposure to disinfection by-products found in fresh-cut products and chlorine-based disinfection treatments during produce processing. This review provides a comprehensive view of the main interlinked aspects related to food safety and environmental impact of processing of fresh-cut vegetables. Advantages and downsides of the mainstream disinfection strategy, based on the use of chlorine-related disinfecting agents, along with some alternative treatments close to a wide commercial application, are discussed. Limitation in the application of these strategies to processing of organic fresh-cut produce are also highlighted, examining the specific environmental and food safety problems in the organic sector. Areas where lack of available information hinders at present a clear understanding of priorities of research and action are pointed out. Innovative conceptual tools are proposed to address these multiple and interlinking issues and to overcome limitations of currently available technologies. A comprehensive and multidisciplinary approach is suggested to move toward a more safe and environmentally sustainable production of fresh-cut products.

Perennial grain crops have been proposed as environmentally sustainable alternatives to annual grain crop systems that currently dominate the world's major breadbaskets. Proponents emphasize the potential of perennial grains to mimic natural systems and thereby reduce soil erosion, nutrient losses, and degradation of soil quality although need for adequate grain yield is also recognized as a prerequisite for success. Here we assess progress since 2005 (16 y) towards development of perennial grain systems with sufficient productivity to be seen as competent alternatives to annual wheat on the prairies and plains of North America and Australia. Based on reports published in refereed journals, we see little evidence that yield of Intermediate Wheatgrass or perennial wheats have improved to the point they are viable alternatives. Slow progress is attributed to lack of minimum grain yield targets for economic viability, lack of designated target regions where perennial grains are most likely to be competitive against annuals, selection methods that focused on components of yield rather than yield per se (i.e. on an area basis), and relatively small R & D investment compared to resources given to genetic and agronomic improvement of major annual grain crops. Given current status, we conclude that perennial grains will require substantial R & D investment and several decades if they are to achieve sufficient yield potential and yield persistence to become more than a niche crop for upscale health food markets in wealthy countries.

The Murray–Darling Basin Plan is a $AU 13 billion program to return water from irrigation use to the environment. Central to the success of the Plan, commenced in 2012, is the implementation of an Environmentally Sustainable Level of Take (ESLT) and a Sustainable Diversion Limit (SDL) on the volume of water that can be taken for consumptive use. Under the enabling legislation, the Water Act (2007), the ESLT and SDL must be set by the “best available science.” In 2009, the volume of water to maintain wetlands and rivers of the Basin was estimated at 3000–7600 GL per year. Since then, there has been a steady step-down in this volume to 2075 GL year due to repeated policy adjustments, including “supply measures projects,” building of infrastructure to obtain the same environmental outcomes with less water. Since implementation of the Plan, return of water to the environment is falling far short of targets. The gap between the volume required to maintain wetlands and rivers and what is available is increasing with climate change and other risks, but the Plan makes no direct allowance for climate change. We present policy options that address the need to adapt to less water and re-frame the decision context from contestation between water for irrigation versus the environment. Options include best use of water for adaptation and structural adjustment packages for irrigation communities integrated with environmental triage of those wetlands likely to transition to dryland ecosystems under climate change.

Fermentation of food waste into 2,3-butanediol (2,3-BDO), a high-value chemical, is environmentally sustainable and an inexpensive method to recycle waste. Compared to traditional mesophilic fermentation, thermophilic fermentation can inhibit the growth of contaminant bacteria, thereby improving the success of food waste fermentation. However, the effects of sugar and nutrient concentrations in thermophilic food waste fermentations are currently unclear. Here, we investigated the effects of sugar and nutrients (yeast extract (YE) and peptone) concentrations on 2,3-BDO production from fermenting glucose and food waste media using the newly isolated thermophilic Bacillus licheniformis YNP5-TSU. When glucose media was used, fermentation was greatly affected by sugar and nutrient concentrations: excessive glucose (>70 g/L) slowed down the fermentation and low nutrients (2 g/L YE and 1 g/L peptone) caused fermentation failure. However, when food waste media were used with low nutrient addition, the bacteria consumed all 57.8 g/L sugars within 24 h and produced 24.2 g/L 2,3-BDO, equivalent to a fermentation yield of 0.42 g/g. An increase in initial sugar content (72.9 g/L) led to a higher 2,3-BDO titer of 36.7 g/L with a nearly theoretical yield of 0.47 g/g. These findings may provide fundamental knowledge for designing cost-effective food waste fermentation to produce 2,3-BDO.

AbstractThe global trade in cephalopods is a multi-billion dollar business involving the fishing and production of more than ten commercially valuable species. It also contributes, in whole or in part, to the subsistence and economic livelihoods of thousands of coastal communities around the world. The importance of cephalopods as a major cultural, social, economic, and ecological resource has been widely recognised, but research efforts to describe the extent and scope of the global cephalopod trade are limited. So far, there are no specific regulatory and monitoring systems in place to analyse the traceability of the global trade in cephalopods at the international level. To understand who are the main global players in cephalopod seafood markets, this paper provides, for the first time, a global overview of the legal trade in cephalopods. Twenty years of records compiled in the UN COMTRADE database were analysed. The database contained 115,108 records for squid and cuttlefish and 71,659 records for octopus, including commodity flows between traders (territories or countries) weighted by monetary value (USD) and volume (kg). A theoretical network analysis was used to identify the emergent properties of this large trade network by analysing centrality measures that revealed key insights into the role of traders. The results illustrate that three countries (China, Spain, and Japan) led the majority of global market movements between 2000 and 2019. Based on volume and value, as well as the number of transactions, 11 groups of traders were identified. The leading cluster consisted of only eight traders, who dominated the cephalopod market in Asia (China, India, South Korea, Thailand, and Vietnam), Europe (the Netherlands, and Spain), and the USA. This paper identifies the countries and territories that acted as major importers or exporters, the best-connected traders, the hubs or accumulators, the modulators, the main flow routes, and the weak points of the global cephalopod trade network over the last 20 years. This knowledge of the network is crucial to move towards an environmentally sustainable, transparent, and food-secure global cephalopod trade.

This article studies trade-offs of farms in terms of economic sustainability (proxied here by technical efficiency), environmental sustainability (proxied here by farmers’ commitment towards the environment) and social sustainability (proxied here by farmers’ contribution to on farm well-being and communities’ well-being). We use the latent class stochastic frontier model and create classes based on three separating variables, representing farms’ environmental sustainability and social sustainability. The application to a sample of Spanish crop farms shows that more environmentally sustainable farms are likely to have lower levels of technical efficiency. However, improvements in social concerns, both towards own farm and the larger community, may lead to improved technical efficiency levels. In general, our study provides evidence of trade-offs for farms between economic sustainability and environmental sustainability, but also between environmental sustainability and social sustainability.

Equestrian grazing management is a poorly researched area, despite potentially significant environmental impacts. This study explored keepers’ use of alternative grazing systems in the care of UK horses, donkeys and mules through an internet survey. The survey was available during the summer of 2020 and comprised closed and open questions, which were analysed with descriptive statistics and iterative thematic analysis, respectively. A total of 758 responses was incorporated into the analysis; the most popular system used were tracks (56.5%), Equicentral (19%), “other” (e.g., non-grass turnout) (12.5%), rewilding (7.5%) and turnout on either moorland (0.7%) or woodland (2.5%). The thematic analysis highlighted that equid keepers across the systems were highly engaged in exploring sustainable practices. Their approaches varied according to each system, yet all aimed to fulfil practices in three major categories, i.e., supporting diverse plant life (usually through restricting equid access to certain areas), supporting wildlife (through the creation of biodiverse environments) and sustainably managing droppings and helminths. Additionally, proponents of the Equicentral systems declared to be aiming to support soil health. These data provide a promising insight into equid keepers’ behaviour and attitudes to sustainability.

Environmentally sustainable cement mortars containing wheat straw (Southern Italy, Apulia region) of different length and dosage and perlite beads as aggregates were prepared and characterised by rheological, thermal, acoustic, mechanical, optical and microstructural tests. A complete replacement of the conventional sand was carried out. Composites with bare straw (S), perlite (P), and with a mixture of inorganic and organic aggregates (P/S), were characterised and compared with the properties of conventional sand mortar. It was observed that the straw fresh composites showed a decrease in workability with fibre length decrease and with increase in straw volume, while the conglomerates with bare perlite, and with the aggregate mixture, showed similar consistency to the control. The thermal insulation of the straw mortars was extremely high compared to the sand reference (85–90%), as was the acoustic absorption, especially in the 500–1000 Hz range. These results were attributed to the high porosity of these composites and showed enhancement of these properties with decrease in straw length and increase in straw volume. The bare perlite sample showed the lowest thermal insulation and acoustic absorption, being less porous than the former composites, while intermediate values were obtained with the P/S samples. The mechanical performance of the straw composites increased with length of the fibres and decreased with fibre dosage. The addition of expanded perlite to the mixture produced mortars with an improvement in mechanical strength and negligible modification of thermal properties. Straw mortars showed discrete cracks after failure, without separation of the two parts of the specimens, due to the aggregate tensile strength which influenced the impact compression tests. Preliminary observations of the stability of the mortars showed that, more than one year from preparation, the conglomerates did not show detectable signs of degradation.

Cycling is an environmentally sustainable social practice that contributes to liveable cities and provides affordable and healthy transport. People with lower education could particularly benefit from cycling, as they tend to fare worse regarding finances and health. However, in bivariate analyses, those with lower education cycle less. This article discusses the social meaning of cycling and investigates whether the education–cycling association holds after accounting for (1) confounders and (2) factors that determine decision leeway between different transport modes. I analyse approximately 80,000 short-distance trips (0.5–7.5 km) reported by 28,000 working-age individuals from cities in Germany using multilevel linear probability regression models. Results support that higher education systematically and substantially increases the propensity to cycle. This education gap implies major untapped potential for environmental sustainability, that current pro-cycling policies in cities disproportionally favour the highly educated and that cycling patterns contribute to inequalities in finances and health.
