Abstract Chicken meat is a source of animal protein that is very popular with all people, especially in Indonesia. The meat also contains nutrients that are good for the body. However, broiler meat also has a weakness because it is a food that is easily damaged; most of the damage is caused by poor handling, thus providing opportunities for growth microbes. Broiler meat is easily contaminated by various microorganisms that are in the environment. This study aimed to determine the level of microbial contamination in broiler chicken meat in the Ambon city market. The study used a random sampling technique and used 12 samples from the market in Ambon city. Parameters of microbiologic status observed total plate count and E. coli. Data were described descriptively. The result showed that total plate count (TPC) and E-coli was not more than the standard. The microbial contamination of broiler chicken meat markets in Ambon city was not in excess with the National Standardization Agency (NSA, 2009). Thus, broiler meat is safe for consumption.

We surveyed Staphylococcus aureus contamination in 110 pork samples from 12 fresh meat markets in Nongchok district, Bangkok, Thailand, and performed antimicrobial susceptibility testing with the disk diffusion method. The prevalence of S. aureus was 28.18%, and 52 strains were isolated. Antimicrobial susceptibility testing using the disk diffusion method revealed that 80.77% of the isolates were resistant to tetracycline and 76.92% to ampicillin. All strains were 100% susceptible to cloxacillin, cefoxitin, gentamicin, and cefazolin. The high percentage of antibiotic resistance to tetracycline and ampicillin was attributed to their use in treating infections in farmed animals and their addition to animal food for disease prevention. Interestingly, the present study revealed the intermediate resistance of S. aureus (13.46% of S. aureus-positive pork samples) to vancomycin which is a common medicine for treating severe infection in humans, suggesting that the trend of resistance might increase and becoming a serious problem of public health for both humans and animals.

In the article it was determined that significant changes have taken place in the meat market of Ukraine as a result of the reformation processes in the country and in the agricultural sector. The dynamics of meat production in general and by main types were analyzed. The comprehensive analysis of the balances of beef, pork and poultry meat has been carried out. Meat producers are increasing their production volumes with a decline in certain branches of animal husbandry, and, accordingly, the structure of production is changing. The share of pork meat and beef meat decreased significantly, while the share of poultry meat production increased. The structure of the meat market was considered and the features of its functioning were revealed. It has been determined that the poultry meat market is competitive and efficient among other meat markets. The poultry industry has consistently maintained positive production dynamics over the past years. The pork market is fluctuating due to outbreaks of African swine fever and competition from the poultry market. The beef market is at a loss. It was argued that an increase in the poultry population, production volumes and the share of poultry meat in the structure of the meat market is a modern global trend. This was justified by affordability, cultural aspects, increased attention to the environment and personal health. Further development of the meat market depends on the prioritization of development and mechanisms of state support.
