We investigated fruit physical traits and nutritional value in both seed and flesh in eight Moroccan date palm varieties. The greatest values of weight for whole fruit, flesh, seed, and flesh percentage were found in “Boufgous,” “Agondari,” and “Bouskri.” These two later varieties displayed also their superiority with respect to proximate composition. For fruit flesh, proximate composition, energy value, and reducing capacity ranged as follows: proteins (1.60–3.53%), moisture (5.31–17.31%), ash (2.08–2.50%), lipids (0.32–1.09%), carbohydrates (76.69–90.18%), energy value (338.30–385.89 kcal/100 g), and reducing capacity (100.14–1607.12 mg GAE/100 g). Corresponding values in seeds were as follows: proteins (3.20–5.00%), moisture (1.42–4.14%), ash (1.14–1.50%), lipids (6.30–7.40%), carbohydrates (83.39–85.55%), energy value (417.06–429.51 kcal/100 g), and reducing capacity (1427.71–6843.84 mg GAE/100 g dry weight). Among all minerals (K, Ca, Mg, B, Fe, Cu, Mn, Na, and Zn) found in both fruit parts, K had the highest records for both flesh (12047 mg/kg) and seed (6127.6 mg/kg), followed by Mg and Ca. Seeds lipidic fraction was dominated by monounsaturated fatty acid C18 : 1 (47.5%), followed by saturated fatty acids mostly C12 : 0 (18.0%), C14 : 0 (10.5%), and C16 : 0 (10.6%) and finally polyunsaturated fatty acid C18 : 2 (8.8%). It could be concluded that investigated varieties presented a great importance from a nutritional point of view, and seeds could present important opportunities of valorization.

The scope of this work was to reduce the level of the biogenic amine ‘histamine’ in White wine. Different concentrations of 100 ml wine samples were prepared by incorporating various concentrations Bromelain; Quercetin and Ascorbic acid. A spectrophotometric based histamine analysis method was carried out to determine histamine concentrations. The histamine concertation reduced in 200mg/L Bromelain, 50mg/L Quercetin and 400mg/L Ascorbic acid treated samples by 62.34%, 61.64% and 46.41% respectively. The percentage DPPH scavenging activity was found to be 83.93%, 93.54%, 133.08% respectively against normal wine 86.93%. No significant changes observed in physicochemical properties of wine like functional groups; particle size analysis; effect on amino acids; turbidity; colour analysis; pH and sensory analysis in bromelain treated wine samples as compared to other samples. Reduction of histamine can be carried out by Bromelain (200mg/L) effectively than Quercetin and Ascorbic acid; based on the reducing capacity and the sensory parameters.

Plants produce a diverse array of secondary metabolites that are generally nonessential but facilitate ecological interactions. Fruits, vegetables, seeds and nuts can accumulate bioactive secondary metabolites with health-promoting properties, including the potent antioxidant activities of phenolic compounds. Several in vitro assays have been developed to measure the polyphenol content and antioxidant activity of plant extracts, e.g., the simple and highly popular Folin-Ciocalteu (FC) assay. However, the literature contains a number of different descriptions of the assay and it is unclear whether the assay measures the polyphenol content or reducing capacity of the sample. To determine the influence of phenolic structures on the outcome of the FC assay, we tested phenols representing different subgroups (phenolic acids, flavonols, flavanols, dihydrochalcones and flavanones). We observed different results for each reference substance and subgroup. Accordingly, we concluded that the FC assay does not measure the polyphenol content of a sample but determines its reducing capacity instead. Assigning the substances to five structural classes showed that the FC results depend on the number of fulfilled Bors criteria. If a molecule fulfills none of the Bors criteria, the FC results depend on the number of OH groups. We did not find a correlation with other single electron transfer assays (e.g., ABTS and DPPH assays). Furthermore, the FC assay was compatible with all five subgroups and should be preferred over the DPPH assay, which is specific for extracts rich in dihydrochalcones or flavanones.

ABSTRACT Objective: To evaluate the effect of pasteurization on antioxidant and oxidant properties of human milk. Methods: 42 samples of milk before and after pasteurisation were used to evaluate the antioxidant activity by the ferric reducing capacity and by scavenging the 2,2’-azino-bis 3-ethylbenzthiazoline-6-sulfonic acid radical. Lipid peroxidation was estimated by the concentration of malondialdehyde product using the thiobarbituric acid reactive substances assay and by the evaluation of advanced oxidation protein products. Results: No significant difference was observed in fresh human milk and after pasteurization in relation to antioxidant properties determined by the ferric reducing capacity (50.0±3.4% and 48.8±3.0%, respectively) and by scavenging the 2,2’-azino-bis 3-ethylbenzthiazoline-6-sulfonic acid radical (28.9±1.5% and 31.2±1.3%, respectively). The results of malondialdehyde (62.6±4.1 and 64.3±3.6 µM/mg) and protein oxidation products (59.4±3.4 and 54.2±3.8 µM/L) of fresh and pasteurized milk, respectively, did not exhibited any significant difference. Conclusions: This data showed that human milk has an important antioxidant activity and that the pasteurizing process does not influence the antioxidant capacity, avoiding the peroxidation of breast milk lipids and the formation of advanced protein oxidation products.
