Awara, a Nigerian soft cheese analogue produced from soy milk using crude coagulant of citric acid and alum. Soybean and banjara bean were used in this study and were evaluated for their proximate composition, mineral element content, antinutritional factors, in vitro protein digestibility and vitamin content using standard procedures. Results obtained indicated that fermented banjara bean awara had a protein content of 2.15±0.01%, and fermented soybean awara had a protein content of 3.75±0.01%. Fermented banjara beans awara and soybean awara had a fat content of 5.16±0.01% and 17.13±0.01% respectively. There were significant differences in the mineral element content of both non fermented and fermented banjara bean and soybean awara. Level of antinutritional factors showed that both tannin and phytic acid were absent in fermented soybean awara. The in vitro protein digestibility of non-fermented and fermented banjara bean and soybean awara significantly increases with time. Vitamin A contents of fermented banjara and soybean awara increased when compared to non-fermented banjara and soybean awara, while a decrease was observed in non-fermented banjara and soybean awara as compared to fermented banjara bean and soybean awara. It can be concluded from this study that fermented soybean awara which is free of antinutritional factors is a more suitable source of protein and fat as a local cheese in this part of the world.

Trace minerals are extremely important for balanced nutrition, growth, and development in animals and humans. Phytic acid chelation promotes the use of probiotics in nutrition. The phytic acid-degrading strain Lactococcus lactis psm16 was obtained from swine milk by enrichment culture and direct plate methods. In this study, we evaluated the effect of the strain psm16 on mineral element content in a mouse model. Mice were divided into four groups: basal diet, 1% phytic acid, 1% phytic acid + psm16, 1% phytic acid + 500 U/kg commercial phytase. Concentrations of acetic acid, propionic acid, butyric acid, and total short-chain fatty acids were significantly increased in the strain psm16 group compared to the phytic acid group. The concentrations of copper (p = 0.021) and zinc (p = 0.017) in liver, calcium (p = 0.000), manganese (p = 0.000), and zinc (p = 0.000) in plasma and manganese (p = 0.010) and zinc (p = 0.022) in kidney were significantly increased in psm16 group, while copper (p = 0.007) and magnesium (p = 0.001) were significantly reduced. In conclusion, the addition of phytic acid-degrading bacteria psm16 into a diet including phytic acid can affect the content of trace elements in the liver, kidney, and plasma of mice, counteracting the harmful effects of phytic acid.

It is well known that trees grown on roadsides suffer from stressful environments, including poor soils, bad weather, and harmful gases from automobile exhaust. Improving the adaptability of roadside trees to adverse environments is important for urban management. An experiment was carried out with six-year-old Buxus megistophylla Levl. hedgerows, where 20 mg/L 5-aminolevulinic acids (5-ALA) solution was sprayed on the blade surface at the end of April. Three months later, plant morphology, chlorophyll fast fluorescence characteristics, antioxidant enzyme activities and the mineral element content were investigated. The results showed that leaf size and thickness were significantly greater with 5-ALA treatment, and the leaf color was also greener than those of the control. 5-ALA treatment significantly promoted the electron transfer activity of the PSII reaction center on the donor side, the reaction center itself and the receptor side. It reduced energy dissipation through the heat with increased photochemical quantum yields. The activities of antioxidant enzymes, including superoxide dismutase (SOD), catalase (CAT) and peroxidase (POD) in leaves and roots, were stimulated by 5-ALA treatment. The content of soluble sugars and free proline in leaves was significantly increased by 5-ALA treatment, as were the absorption and accumulation of several kinds of mineral nutrient elements, such as nitrogen, phosphate, calcium, magnesium, iron, copper and boron. Additionally, 5-ALA application significantly increased the content of cadmium, mercury, chromium and lead in the roots but decreased them in the leaves. This implies that 5-ALA may induce a mechanism in B. megistophylla in which toxic elements were intercepted in roots to avoid accumulation in leaves, which ensured healthy growth of the aboveground tissues. 5-ALA may regulate the absorption and utilization of mineral nutrient elements in soil with the interception of toxic heavy metal elements in roots, promote leaf photosynthetic performance, induce the accumulation of soluble sugars and free proline, and improve the antioxidant enzyme systems for plants to adapt to the stressful environment of urban roads. These results provide a basis for 5-ALA applications alongside city roads.

In modern nutrition, bioactive materials of different vegetables are especially important to be researched. The experiment was carried out on March 30, 2016 (sowing date). Mineral element content (B, Ca, Cu, Fe, K, Mg, Na, P, S, Zn) was evaluated on the 60th, 85th and the 105th day of the vegetation period. The data are presented as the mean of five varieties which can give the real state of these parameters of beetroot grown on lowland chernozem soil. In the young beetroot leaves (60 days) the mineral element content was higher than in the older ones (85 days). The calcium and magnesium content of the leaves was much more favourable (10 times higher) than in the root. The potassium content of leaves has reached the amount of 5000 mg kg-1, but at the same time more than 3000 mg kg-1 was detected in the improved root. This value is favourable for the potassium supply of the human organism. The sulphur content (1300 mg kg-1) of the leaves was the highest on the 85th day of vegetation period. Similar tendency was detected for boron content (2.45 mg kg-1), while for iron content it was higher (28.23 mg kg-1) in the younger leaves (60 days). Finally, it can be concluded that the increased element content of beetroot leaves will be a favourable source of mineral element supply of the human organism.
