The objective of the present study was to determine if animals who were genetically divergent in the predicted tenderness of their meat actually produced more tender meat, as well as what the implications were for other organoleptic properties of the meat. The parental average genetic merit for meat tenderness was used to locate 20 “Tough genotype” heifers and 17 “Tender genotype” heifers; M. longissimus thoracis steaks from all heifers were subjected to sensory affective analysis (140 consumers) and sensory profiling using two trained sensory panels. All sample steaks were treated identically regarding pre- and post-mortem handling, storage, cooking and presentation (i.e., randomised, blind coded). For the affective consumer study, eight steaks were sectioned from the same location of the striploin muscles from each of the heifers. In total, 108 steaks from the Tender genotype and 118 from the Tough genotype were tested in the consumer study to determine the preference or liking of these steaks for appearance, aroma, flavour, tenderness, juiciness and overall acceptability. The consumer study found that the Tender genotype scored higher (p < 0.0001) for liking of tenderness, juiciness, flavour and overall acceptability compared to the Tough genotype. Similar results were generally found for the separate consumer age cohorts (18–64 years) with lower sensory acuity in the 65+ age cohort. For the descriptive analysis, the Tender genotype scored numerically more tender, juicy and flavoursome, although the differences were only significant for one of the panels. The critical outcome from this study is that parental average genetic merit can be used to pre-select groups of animals for tenderness, which, in turn, can be detected by consumers.

ABSTRAKTujuan dalam penelitian ini adalah menganalisis preferensi konsumen yakni masyarakat kota Jambi terhadap kopi lokal dan menganalisis hubungan usia terhadap preferensi masyarakat kota Jambi dalam mengkonsumsi kopi lokal. Adapun hipotesis dalam penelitian ini adalah terdapat hubungan antara usia konsumen kopi dengan preferensi dalam mengkonsumsi kopi lokal Jambi.Penelitian ini dilakukan di Kota Jambi dengan mengumpulkan data primer dan sekunder. Penelitian ini dilaksanakan pada bulan Februari sampai Juni 2020. Data yang digunakan adalah data cross section. Data konsumen dikumpulkan dari 3 kedai kopi yang terdapat di Kota Jambi yakni Hello Sapa, Camp Coffee, dan Kopi Juaro. Penarikan sample dilakukan dengan metode simpel random sampling. Penghitungan sampel dengan rumus Slovin. The hypothesis in this study is that there is a relationship between the age of consumers and preferences in consuming local Jambi coffee. This research was conducted in Jambi City by collecting primary and secondary data. This research conducted from February to June 2020. The data used is cross section data. Consumer data was collected from 3 coffee shops in Jambi City, namely Hello Sapa, Camp Coffee, and Juaro Coffee. The sampling method was simple random sampling. Sample calculation using the Slovin formula. The results showed that the majority of coffee consumers prefer local coffee than non-local coffee and the relationship between consumer age and coffee consumption preference is not significant. Keywords: Local Coffee, Preference, Age of Consumer

Functional foods are the foods that provide health benefits beyond the basic nutrition. Dairy products have a prominent position in the functional food market. However, market share for functional dairy products in Sri Lanka is low compared to most of the countries in the world. Awareness of consumers and attitude towards a healthy life is essential for market success of functional dairy products. Therefore, a study was conducted to investigate the status of awareness of and attitudes towards functional dairy products among consumers from Western Province of Sri Lanka. The study was conducted using a pre-tested structured questionnaire during June to November 2018, with the participation of 307 purposively selected consumers. Information on consumers’ tendency towards a healthy life style, awareness and perception on health benefits of functional foods and dairy products, confidence on different information sources etc. were recorded. SPSS statistical software package was used for the data analysis. The empirical findings showed that the consumers still concern about taste and cost rather than health when buying food products. Along with animal production factors, it is important to understand whether demographic factors influence untrained consumer perceptions of eating quality. This study examined the impact of demographic factors and sheepmeat consumption preferences on eating quality scores of American, Australian and Chinese untrained consumers. M. longissimus lumborum (LL) and m. semimembranosus (SM) were grilled according to sheep Meat Standards Australia protocols and evaluated by 2160 consumers for tenderness, juiciness, flavour and overall liking. Linear mixed effects models were used to analyse the impact of demographic factors and sheepmeat consumption habits on eating quality scores. Consumer age, gender, number of adults in a household and income had the strongest effect on sensory scores (P ≤ 0.05), although, the impact was often different across countries. Frequency of lamb consumption had an impact on sensory scores of American, Australian and Chinese consumers but larger sample sizes in some underrepresented subclasses for Australian and Chinese consumers are needed. Results suggest it is important to balance sensory panels for demographic factors of age, gender, number of adults and income to ensure sensory preferences are accurately represented for these particular populations.
