Introduction. Plant raw materials can be a source of biologically active substances and increase the nutritional value of food products. The present research objective was to determine the content of biologically active substances in powdered viburnum and barberry. Study objects and methods. The study featured viburnum (Viburnum opulus L.) and barberry (Berberis vulgaris L.), dried by convection and crushed into particles of 50 microns. Results and discussion. The total content of phenolic compounds in powdered viburnum was 3114.07 mg/100 g, in powdered barberry – 2272.7 mg/100 g. The content of flavonoids in powdered viburnum was 324.52 mg/100 g, in powdered barberry – 390.00 mg/100 g. The flavonoid profile of the powders included rutin, hyperoside, quercitrin, isoquercintrin, and astralagin. The total content of catechins was 446 mg/100 g for viburnum and 506 mg/100 g for barberry. The catechins included mainly epigallocatechin and catechin. In powdered viburnum, the catechin composition was as follows: epicatechin – 196, catechin – 118, and epigallocatechin – 89 mg/100 g; in powdered barberry: epigallocatechin – 173, catechin – 111, and epicatechin – 74 mg/100 g. The antiradical activity in relation to trolox equivalent was 7560 mg/100 g in powdered viburnum and 9460 mg/100 g in powdered barberry. Conclusion. The obtained viburnum and barberry powders can fortify food with biologically active substances and expand the range of functional products.

Our country has many species in fruit and vegetable cultivation. One of them is Gilaburu fruit (Viburnum Opulus), which has spread to different regions, especially in Kayseri. Longer preservation of products in fruits and vegetables; Drying process has been applied since ancient times to prevent deterioration caused by microbial and/or biochemical changes. One of them and the most common one is convectional drying in other words drying in a drying chamber under controlled hot air stream. In this study, Gilaburu fruits were obtained from a local producer in Kayseri. Drying processes were carried out in a convectional oven at 60, 70 and 80℃ in three repetitions. The effects of different drying conditions on the drying characteristics of Gilaburu fruits were examined. Drying time for Gilaburu fruits decreased with increasing temperature. As a color parameter total color change with respective to fresh fruit (ΔΕ) was investigated. The results indicated that it remained almost identical with temperature change. Similar trend was observed for rehydration rate. Titration acidity and pH values showed compatible changes. With temperature increase, titration acidity increased, as pH decreased. As textural properties, skin-hardness and elasticity of dried fruits were measured. As hardness increased, elasticity decreased with temperature elevation. Total phenolic content and antioxidant activity of dried samples were also examined. The results showed that there were increases in both of them with an increase in temperature.

This study determined the antimicrobial and antioxidant activities of chloroform, ethyl acetate, methanol, and water extracts of the Viburnum opulus (V. opulus) plant. V. opulus (Gilaburu) was collected from Ahırdağı northern slope, Kırka Town, Afyonkarahisar region, and its leaves, branches, and fruit parts were dried and powdered at room temperature. The total phenolic content was compared with the gallic acid standard, the total flavonoid content with the quercetin standard, and the iron chelating effect with the EDTA standard. All extracts were evaluated for antimicrobial activity against Escherichia coli, Staphyllococcus aureus, and Candida glabrata strains by the agar well diffusion method. Gilaburu is widely used in Turkey, especially in alternative medicine. It has been determined that the fruit part of the plant has better antimicrobial properties, and the amount of phenolic compounds increases in more polar solvents. In conclusion, the use of Gilaburu as a medicinal drug can be achieved with new research on bioactive substances, especially in fruit extract.

Extracts and their concentrates can be considered as a source of biologically active ingredients of food products and as food additives to increase the consumption of useful substances of berries. The benefits gained from their use lead to the development of advanced technologies that can allow them to be extracted from the feedstock without significantly compromising the biological activity from the feedstock. In this paper, we studied the content of antioxidants and their activity in concentrated extracts of cranberry (Vaccinium Oxycoccus), sea buckthorn (Hippophae rhamnoides L.), blackberry (Rubus fruticosus), viburnum (Viburnum opulus L.) and mountain ash (Sorbus aucuparia L.) berries. For all extracts, the total content of phenolic compounds, flavonoids and anthocyanins, antioxidant activity according to the DPPH method and iron-reducing antioxidant activity (FRAP) were determined. Concentrated extracts of viburnum contain the largest amount of phenolic compounds (9.3±0.3 mol HA/l), flavonoids (1.96±0.08 mol K/l) and anthocyanins (0.26±0.02 mol CG/l) among the studied extracts. There is also a high total content of phenolic substances and flavonoids in blackberry and rowan extracts (5.7 mol HA/l, 1.33 mol K/l and 4.7 mol HA/l, 192 mol K / l, respectively). The antioxidant activity of the extract of viburnum berries showed a directly proportional dependence on the content of biologically active compounds in it: DPPH-method-2.4 mg / ml; FRAP-method-39.99 mmol Fe2+ / kg. Also, high levels were found in concentrated extracts of blackberries, sea buckthorn and mountain ash. It is the extracts of viburnum, blackberry and mountain ash that are recommended to be used in the production of food products to enrich them with biologically active substances and give them antioxidant properties. Cranberry and sea buckthorn extracts can be used in combination with other extracts.

Abstract Turkey's plant diversity varies considerably. Many of these plants are native and commercially grown. European Cranberrybush, which is among the fruit species grown economically in the country, is also of interest in terms of health. In this study, it was aimed to determine genetic diversity with morphological, molecular, and phytochemical markers in 24 different genotypes from Kayseri province, which has an important place in the production of European Cranberrybush in Turkey. The results show that wide variations were detected between genotypes in the morphological parameters. While the genotype G13 was the prominent genotype compared to other genotypes in leaf length (130.69 mm), leaf width (135.76 mm) and fruit length (10.01 mm), the range in fruit weights of genotypes varied between 0.16 g and 0.80 g. In ISSR marker analysis, a total of 73 scoreable bands were obtained from 11 different primers, and 44 of these bands were polymorphic bands. The average polymorphism rate in the study was 60.27%, and the similarity index of the genotypes varied between 0.77 and 0.95. Total flavonoid, total phenolic and total anthocyanin contents ranged from 106.28 mg CAE/100 g to 318.87 mg CAE/100 g, 451.23 mg GAE/100 g to 679.57 mg GAE/100 g, 21.36 mg cyn-3-gluc /100 g to 16.48 mg cyn-3-gluc /100 g, respectively. It is thought that the results of the study may be useful to plant breeders in terms of its development and preservation, as well as giving an opinion to the researchers in new studies to be carried out in the European Cranberry.
