Abstract A method has been developed for the determination of sodium benzoate in meats by gas chromatography. The meat sample is digested in acetic and perchloric acids and extracted successively in acidic, basic, and again acidic solutions. The benzoate components contained in this extract arc quantitatively determined by flamc-ionization gas chromatography with a high degree of precision and sensitivity. The minimum limit for quantitative determination is about 11 ppm sodium benzoate in meat (based on a 9 g sample).
