The oxidation of eight 3(or 6)-substituted-2-nitroanilines with iodosobenzene diacetate, in both benzene and acetic acid solution, has been investigated. Benzo-furazan oxides and azo compounds were produced in varying yields. Certain of these amines have also been oxidized with iodosobenzene diacetate in other solvents, and with sodium hypochlorite in ethanolic potassium hydroxide. Six of these 3(or 6)- substituted-2-nitroanilines have been oxidized with lead tetra-acetate, in both benzene and acetic acid solution, and varying yields of azo compounds were obtained. Benzaldehyde was isolated from the oxidation of benzylamine with iodosobenzene diacetate, in either benzene or acetic acid solution. The mechanisms of these reactions are discussed. New methods of synthesizing 6-methoxy-2-nitroaniline and 3-methoxy-2-nitroaniline are described.

Certain polysaccharides, such as starch and glycogen, do not give consistently positive or negative reactions with all lead tetra-acetate/Schiff techniques. This depends upon the conditions under which the oxidant is used. A simple glacial acetic acid solution of lead tetra-acetateis least active but most specific. Added potassium acetate acts as a catalyst. Dilution with water not only increases the activity of the reagent but also decreases the specificity of the test.

The bacteriology of boneless pork loins that were either spray-washed (SW) with water, spray-washed and sanitized with a 200 ppm sodium hypochlorite solution (SSCL) or spray-washed with water and sanitized with a 2% acetic acid solution (SSAA) before being vacuum packaged and stored for up to 28 d at 4.0°C was studied. Aerobic, anaerobic and lactobacilli bacterial counts immediately after treatment and at 14, 21 and 28 d were significantly lower on loins receiving the SSAA treatment than loins receiving the SW and SSCL treatment. SSCL loins had lower bacterial counts than untreated controls during 14 d of storage. SW loins had significantly lower bacterial counts than control loins only immediately after treatment. The SSAA treatment resulted in some discoloration. If this discoloration can be prevented, this treatment should be useful in extending the storage life of fresh pork.

Some ways of estimating the values of the intrinsic viscosity of chitosan were analyzed. It was shown that the method of Irzhak and Baranov for estimating the current value of the intrinsic viscosity allows to adequately estimates the conformational state of the macromolecular coil and its degree of swelling.
