Defining Food Supply Chain Management — A Study Based on a Literature Survey

There is a need to understand food supply chain management (FSCM) with the help of a process-oriented comprehensive definition and consider complex tasks involved therein. The study identifies FSCM and supply chain management’s basic definitions and focuses on a systematic literature review. None of the identified previously proposed definitions of FSCM has comprehensively covered all the significant operational issues in FSCM. Thus, the study further undertook the mapping of identified definitions with six key focusses in FSCM identified through the literature survey. This study systematically proposes a comprehensive definition of FSCM. Findings suggested that “Quality management” includes safety and traceability of the food product and “Sustainable Management,” including proper waste management as the most critical focus in FSCM. This study proposes a comprehensive FSCM definition comprising key managerial that focuses on the food supply chain (FSC). The literature survey is done with 160 selected papers and has subjectivity in mapping and analysis. This definition seems essential for theory building, as none of the available definitions has included all the dominant characteristics of FSCM. A comprehensive definition of FSCM would act as a reference point for supply chain-based research on the food sector.

Sustainability is the important factor in the food sector, due to the large demand worldwide. Sustainability in food sector is not accepted globally as per the growing demand of food. Because of business risks, uncertainty, government policy, technology, innovation, etc. So, in this article we will discuss about the risks in adoption of sustainable food supply chain management (SFSCM) and ranking the risks by using Fuzzy Analytic Hierarchy Process (FAHP) technique. We acknowledged various SFSCM related risks and suitable correlation among the identified risks. Ranking the risks by using Fuzzy AHP approach based on their priorities. Nine risks were identified from literature survey and expert's views. Risks like safety, technology, and legal and monetary of food, etc., are barriers in successful adoption of sustainability in the food sector. The risks related some terms which were found according to Indian culture and lifestyle of Indians.

Corporate social responsibility (CSR) has witnessed remarkable attention in academic studies as well as being widely conducted in different industries globally. This specific case was chosen as one of the biggest dairy companies that may be represented for Vietnam dairy supply chain management. This research aims to integrate CSR initiatives into food supply chain management to clarify the optimal replenishment policy, paying close attention to the relationship between midstream manufacturers and final customers. The classical economic production quantity model has been employed, relying on the two-stage assembly production system. The three parameters that contribute to the total profit formulation that have been considered consist of the social charity amount for per unit selling, the unit wholesale price of the manufacturer, and the return rate of used goods from the customer. The study has stressed that there is a significant impact from implementing CSR initiatives on the enterprise’s inventory policy that leads to enhance the firm’s financial performance.

Making the right decisions for food supply chain is extremely important towards achieving sustainability in agricultural businesses. This paper explores that knowledge sharing to support food supply chain decisions to achieve lean performance (i.e. to reduce/eliminate non-value-adding activities, or “waste” in lean term). The focus of the paper is on defining new knowledge networks and mobilisation approaches to address the network and community nature of current supply chains. Based on critical analysis of the state-of-the-art in the topic area, a knowledge network and mobilisation framework for lean supply chain management has been developed. The framework has then been evaluated using a case study from the food supply chain. Analytic Hierarchy Process (AHP) has been used to incorporate expert's view on the defined knowledge networks and mobilisation approaches with respect to their contribution to achieving various lean performance objectives. The results from the work have a number of implications for current knowledge management and supply chain management in theory and in practice.
