Rice bran (RB) is a nutrient-rich by-product of the rice milling process. It consists of pericarp, seed coat, nucellus, and aleurone layer. RB is a rich source of a protein, fat, dietary fibers, vitamins, minerals, and phytochemicals (mainly oryzanols and tocopherols), and is currently mostly used as animal feed. Various studies have revealed the beneficial health effects of RB, which result from its functional components including dietary fiber, rice bran protein, and gamma-oryzanol. The health effects of RB including antidiabetic, lipid-lowering, hypotensive, antioxidant, and anti-inflammatory effects, while its consumption also improves bowel function. These health benefits have drawn increasing attention to RB in food applications and as a nutraceutical product to mitigate metabolic risk factors in humans. This review therefore focuses on RB and its health benefits.

“Sandesh” a traditional dairy product was restructured with addition of bran (rice, wheat, oat) for dietary fiber and oregano extract as a natural antioxidant source. The product was analyzed for physicochemical, rheological, sensory and functional characteristics. The dietary fibers increased significantly upon fortification of basic ingredients with bran. Texture profile analysis indicated that hardness and gumminess of Sandesh increased where as cohesiveness and springiness decreased significantly as a result of cooking. Chewiness was higher in wheat and oat bran added Sandesh which deceased their acceptability as per sensory evaluation scores.The color played an important role in oregano extract added Sandesh acceptability as it appealed more as compared to other sensory parameters. Sandesh with oregano extract and rice bran together scored highest in sensory evaluation which clearly augmented the acceptability of Sandesh with rice bran and oregano extract. The sample containing oregano extract showed more DPPH scavenging activity than that of rice bran alone but the presence of both rice bran and oregano extract showed a synergistic effect. Concluding Sandesh with rice bran and oregano extract may be marketed commercially having high therapeutic value with increased antioxidant activity.

Natural antioxidants are widely used in food additives, application in functional foods or also known as ingredients that offer health benefits that extend beyond their nutritional value, and pharmaceutical. These natural antioxidants such as carotenoids, vitamins, and polyphenol can be obtained from fruit, vegetables, and traditional herbal medicines. However, there have several issues regarding the conventional extraction method to extract natural antioxidants compounds from food and medicinal plants such as require a large volume of solvent and long extraction time. Therefore, new green extraction methods such as microwave-assisted, ultrasound-assisted, pulsed electric field, enzyme-assisted, supercritical fluid, and pressurised liquid, technologies were studied to overcome these constraints. Thus, different types of extraction and their mechanism in natural antioxidant compounds extraction was further discussed in this study. Besides, the main classes, source of natural antioxidants and their health benefits also were presented in this paper.
