Caffeine is an active ingredient of coffee (Nescafe) as one of the major sources of dietary antioxidant compounds which counteract the action of reactive oxygen species (ROS) which are the main contributors to oxidative stress. This research is carried out to investigate the role of caffeine in modulating superoxide dismutase and caffeine’s contribution to aging. Forty five sexually matured albino rats with weights ranging from 120-200g were purchased from the animal house of the Department of Anatomy, University of Port Harcourt. These animals were divided into five groups according to their weights and were housed in fifteen well ventilated cages containing sawdust which serves as beddings for the comfort of the animals and for easy removal of their feaces. They were fed daily with animal feed, water ad libitum and allowed to acclimatize for a period of one week, after which their weights were taken and caffeine administration commenced.The results obtained showed a significant (p<0.05) increase in the body weight of the animals on days 14 and 21 following the administration of 20mg/kg of the extract when compared with day 0 and a significant (p<0.05) increase in serum superoxide dismutase activity for 100mg/kg on day 14 when compared to the control. The findings of this study suggests that caffeine (NESCAFE) may have little or no significant effect on the activity of superoxide dismutase.

The extraction of phenolic compounds from olive leaves was optimized using three glycerol-based deep eutectic solvents (DESs) with lysine, proline, and arginine. A three-level Box–Behnken design was used to examine the influence of the liquid/solid ratio, concentration of DESs, and extraction temperature on the yield of the extraction process. A second-order polynomial model was used for predicting the polyphenol extraction yield. The optimal predicted conditions were used for extractions and they provided the highest total phenol yields with the glycerol–lysine exhibiting the best performance. Quantification of tyrosol, hydroxytyrosol, oleuropein, luteolin-7-O-glucoside, and rutin in the extracts showed high content in tyrosol in all DESs, particularly with glycerol–lysine and relatively similar contents with other studies for the other phenolic compounds. Finally, a linear relationship between tyrosol content and the total phenolic content of the extracts was observed.

More than 35% of the world sorghum seed production is a human food source. The main ingredient of fully ripe sorghum grains is starch. Sorghum does not contain gluten, and it is also a rich source of antioxidant compounds other than vitamins or macro- and microelements, including phenolic acids, flavonoids, and sterols. The aim of this study was to determine the antioxidant activity and the content of selected bioactive compounds, i.e., total phenolic acids, total flavonoids, and total phytosterols, as well as determination of the qualitative and quantitative profile of phenolic acids, flavonoids, and phytosterols in various food products, the basic ingredient of which was sorghum grain. It was found that antioxidant activity is related to the total phenolic compounds content. The ABTS•+ ranged from 319 to 885 µmol TROLOX/kg. However, white sorghum grain flour contained almost two times more polyphenols than red sorghum grain flour. The FPA ranged from 224 in raw pasta to 689 mgGAE/100 g in white sorghum grain. During this study, the quantitative profile of selected polyphenols in grain flour, wafers, pasta, and cookies containing sorghum grain was also investigated, as well as the content of 11 selected phenolic acids. Total content of the latter ranged from 445 to 2850 mg/kg. Phytosterols such as beta-sitosterol, campesterol, and stigmasterol were found in all the analyzed products. Based on this research, it was investigated that the products containing sorghum grains can be classified as functional food.

To meet consumers’ demand for natural foods, edible oil producers and food processing industries are searching for alternatives to synthetic antioxidants to protect oils against oxidation. Antioxidant compounds extracted from different plant parts (e.g., flowers, leaves, roots, and seeds) or sourced from agri-food industries, including residues left after food processing, attract consumers for their health properties and natural origins. This review, starting from a literature research analysis, highlights the role of natural antioxidants in the protection of edible oils against oxidation, with an emphasis on the emerging and sustainable strategies to preserve oils against oxidative damage. Sustainability and health are the main concerns of food processing industries. In this context, the aim of this review is to highlight the emerging strategies for the enrichment of edible oils with biomolecules or extracts recovered from plant sources. The use of extracts obtained from vegetable wastes and by-products and the blending with oils extracted from various oil-bearing seeds is also pointed out as a sustainable approach. The safety concerns linked to the use of natural antioxidants for human health are also discussed. This review, using a multidisciplinary approach, provides an updated overview of the chemical, technological, sustainability, and safety aspects linked to oil protection.

The supply of nutrients, such as antioxidant agents, to fish cells still represents a challenge in aquaculture. In this context, we investigated solid lipid nanoparticles (SLN) composed of a combination of Gelucire® 50/13 and Precirol® ATO5 to administer a grape seed extract (GSE) mixture containing several antioxidant compounds. The combination of the two lipids for the SLN formation resulted in colloids exhibiting mean particle sizes in the range 139–283 nm and zeta potential values in the range +25.6–43.4 mV. Raman spectra and X-ray diffraction evidenced structural differences between the free GSE and GSE-loaded SLN, leading to the conclusion that GSE alters the structure of the lipid nanocarriers. From a biological viewpoint, cell lines from gilthead seabream and European sea bass were exposed to different concentrations of GSE-SLN for 24 h. In general, at appropriate concentrations, GSE-SLN increased the viability of the fish cells. Furthermore, regarding the gene expression in those cells, the expression of antioxidant genes was upregulated, whereas the expression of hsp70 and other genes related to the cytoskeleton was downregulated. Hence, an SLN formulation containing Gelucire® 50/13/Precirol® ATO5 and GSE may represent a compelling platform for improving the viability and antioxidant properties of fish cells.

AbstractPurple waxy corn is a good source of antioxidant compounds such as anthocyanins and polyphenols. Promotion of its use requires an appropriate assay to determine antioxidant activity. The aim of this study is to verify compatibility of the antioxidant activity assays by comparing five different assays in daily kernel samples of the fresh purple waxy corn during grain filling. The levels of antioxidants measured by 2,2-diphenyl-1-picrylhydrazyl, ferric reducing antioxidant power, and chemiluminescence showed significant positive correlations with the levels measured by the other assays (r = 0.761–0.893; p < 0.01) and with anthocyanin content (r = 0.798–0.924; p < 0.01). Reducing capacity of 2,2ʹ-azinobis (3-ethylbenzothiazoline-6-sulfonic acid) and total phenolic content also showed significant correlations (r = 0.764; p < 0.01). However, during late grain filling, the levels of antioxidants measured by all methods showed strong correlations with each other (r > 0.699; p < 0.05). The inconsistencies among the measurements are largely dependent on the developmental stage of the corn kernel. The combination of at least two assays is required to ensure reliable antioxidant activity estimates, especially for early grain-filling stages. These results will inform efforts to promote fresh purple corn as a source of antioxidants.

Covid-19 pandemic could increase forms of malnutrition such as overweight and micronutrient deficiencies. Fruits and vegetables are the best sources of vitamins and minerals. The content of vitamins and minerals can act as antioxidant compounds. The method used in this service activity consists of the planning stage, the implementation of the activity, and ends with an evaluation as a measure of the level of success. Health education is carried out by means of lectures and question and answer sessions, educational media using leaflets and PowerPoint Presentations. Results: the evaluation shows that the activities have been carried out well in accordance with the results indicators and criteria on the Evaluation Sheet instrument. The sheet is based on five dimensions, namely Punctuality and Duration, Participation, Knowledge, Job Description and Problem Solving. The content of the evaluation is carried out by two independent observers.
