Physiological changes in elderly individuals (EI) can contribute to nutritional deterioration and comorbidities that reduce their quality of life. Factors such as diet can modulate some of these effects. The aim was to evaluate the functionality of foods added with Brosimum alicastrum Sw. seed flour in EI. EI (n = 23) living in nursing home conditions agreed to participate. A control stage was carried out (30 days) and subsequently, an intervention stage (30 days) was realized in which a muffin and a beverage, designed for EI, were added to the participants’ their usual diet. In both stages, anthropometric parameters, body composition, nutritional status, dietary intake, sarcopenic status, cognitive and affective states, biometric parameters, and total phenolic compounds (TPC), and antioxidant capacity in foods and plasma of EI were determined. The results showed that the consumption of the foods improved the energy intake and preserved the muscle reserves of the EI. The EI gained body weight (+1.1 kg), increased their protein (+18.6 g/day; 1.5 g/kg BW/day), dietary fiber (+13.4 g/day), iron (+4.4 mg/day), zinc (+1.8 mg/day), folic acid (+83.4 µg/day) consumption while reducing their cholesterol (−66 mg/day) and sodium (−319.5 mg/day) consumption. LDL-C lipoproteins reduced (14.8%) and urea (33.1%) and BUN (33.3%) increased. The TPC increased (7.8%) in the plasma, particularly in women (10.7%). The foods improve the EI nutritional status, and this has a cardiovascular protective effect that can benefit the health of the EI.

AbstractExperimental techniques have provided an exciting breakthrough for the functional analysis of Maya chultuns. While deep cistern-like chultuns, common at certain sites in the northern lowlands, have been shown to be functional for water storage, smaller lateral-chambered chultuns characteristic of certain parts of the southern lowlands probably had a very different function. Excavation and examination of the latter features, in light of a whole range of possibilities, suggest that they were constructed to be used for food storage. Experimental studies, however, reveal them to be unsuitable for the storage of most traditional foods, including maize. At least one local food crop, the seed of the ramon (Brosimum alicastrum, Moraceae), appears to be ideally suited for long-term storage under these conditions. Chambers constructed beneath platforms in the northern lowlands may have been used for the storage of maize. A need for more experimental work is indicated.

Se obtienen tortillas a partir de harina de maíz nixtamalizado, al cual se le adicionaron diferentes proporciones de harina de B. alicastrum (0, 10, 20 y 30% p/p en base seca). Se analizan las tortillas en relación con la composición química, perfil de aminoácidos, com-puestos fenólicos, actividad antioxidante y propiedades físicas. La adición de harina de B. alicastrum en tortillas aumentó la actividad antioxidante, el contenido de minerales, fibra soluble, proteína, triptófano, compuestos fenólicos totales y flavonoides totales compa-rado con la tortilla control. Los resultados sugieren que la adición de harina de B. alicastrum (10 y 20%) a la harina de maíz mejoró el valor nutricional y funcional de tortillas sin afectar su calidad (rolabilidad, grado de inflado y pérdida por cocción).

Brosimum alicastrum seeds contain a high percentage of protein and essential amino acids that contribute to a proper nutrition. This tree is an alternative in the so-called crusade against hunger and its management does not involve the use of agrochemicals. The objective of this research was to evaluate the morphogenic response of foliar explants with two growth regulators, 6-Benzylaminopurine (BAP) and 2,4-Dichlorophenoxyacetic Acid (2,4-D) in the induction of calli. Results demonstrated that the combination of 1.5 mg L-1 BAP and 1 mg L-1 2,4-D (TM) and 1.5 mg L-1 BAP with 2 mg L-1 2,4-D (TN) favored callus growth in 100% of foliar explants. Calli were grown in a period of 20 d, in a culture room at 25 ± 4 °C, with 16 h of illumination. Under these conditions, calli remained in slow growth for four weeks. Those explants that generated callus were sub-cultured in fresh medium without activated charcoal. In TM and TN treatments, the multiplication of the cell mass was favored; in TN globular structures were formed. However, explants the same treatments TM and TN with activated charcoal, and under ambient 29 ± 4 °C conditions increased callus growth, but became friable at two weeks. Thus, TM and TN were the better treatments, but activated charcoal was determined to have a negative effect on callus growth.

Respecto a la especie Brosimum alicastrum (Ramón) existen diversas investigaciones sobre sus propiedades nutracéuticas para la alimentación animal y humana, usos medicinales e incluso sistemas de producción. Sin embargo, sigue siendo un taxón, fundamentalmente, silvestre y de nulo manejo silvícola. En virtud de ello, el objetivo del presente trabajo fue analizar algunos de los factores económico-sociales, fisiográficos y de producción que determinan la reconversión de terrenos a plantaciones con Ramón, en el estado de Campeche. Mediante un muestreo dirigido a las zonas con mayor abundancia de la especie, se encuestaron entre septiembre y noviembre de 2018 a 190 productores de los sectores agrícola (94), pecuario (58), forestal (17) y apícola (21). Los resultados indicaron que la edad, escolaridad e ingreso económico familiar que representan los sistemas actuales de producción, no condicionan la reconversión. Por el contrario, aquellos que más la restringen se asocian con la libertad de decisión sobre sus parcelas (tenencia de la tierra), el acceso a las áreas donde B. alicastrum se distribuye de manera natural, y la falta de paquetes tecnológicos para su producción y poscosecha. Los productores con mayor disposición a reconvertir sus tierras son los agrícolas y pecuarios; los primeros incentivados por el posible precio de venta del kilogramo de semilla ($23.00 MN), y los segundos por la obtención de forraje alterno de menor costo. En ambos casos, la asesoría y capacitación técnica ayudarían a minimizar los tiempos de adaptación a los nuevos sistemas de producción.

While leaf-cutter ants are thought to collect mainly vegetative plant material, they have also been observed collecting seeds or fruit parts on the forest floor (Alvarez-Buylla & Martínez-Ramos 1990, Kaspari 1996). For example, leaf-cutter ants have been observed carrying considerable numbers of Brosimum alicastrum Sw. and Cecropia spp. seeds into their nests (Wirth 1996) and Leal & Oliveira (1998; pers. comm.) found them foraging on the fruits and seeds of 19 different species of Brazilian cerrado vegetation, including six Miconia species. Under some circumstances, seed removal and relocation by leaf cutter ants might even be sufficient to affect local recruitment patterns of trees. For example, in Costa Rica, Atta cephalotes can remove all fallen fig fruit from beneath a Ficus hondurensis crown in a single night (Roberts & Heithaus 1986), while in Venezuela, seedling recruitment of the savanna tree Tapirira velutinifolia was positively associated with the seed harvesting and seed cleaning activities of the ant Atta laevigata (Farji Brenner & Silva 1996).
