Changes in the fatty acid composition of the yolk and fry of developing brook trout (Salvelinus fontinalis) were analyzed. Palmitic (16:0) and docosahexaenoic (22:6) acids were characteristic of the fry and oleic (18: 1) and linoleic (18: 2) acids were selectively retained in the yolk.

With respect to human health, nutritional guidelines emphasise on increasing the ratio poly-unsaturated/saturated fatty acids (P/S) (> 0.7) and reducing the n-6/n-3 ratio (< 5). Beef is generally characterised by a low P/S ratio (0.1), while the n-6/n-3 ratio may vary between 2 and 10 depending on the feeding strategy. Hence, the provision of n-3 fatty acids by the diet is crucial for optimising the fatty acid composition of meat. However, PUFA are hydrolysed and subsequently hydrogenated in the rumen to more saturated fatty acids and intermediates that are absorbed from the intestinal tract and transported to the tissues. Lipolysis and hydrogenation may thus affect the meat fatty acid composition. For ruminants, important sources of linolenic acid (C18:3n-3) are linseed and fresh grass. Prior to use in animal nutrition, linseed needs physical treatment like extrusion or crushing. The aim of the present in vitro experiment was to study lipolysis and biohydrogenation of linoleic acid (C18:2n-6) and C18:3n-3 in fresh grass and extruded or crushed linseed products.

AbstractThe aim of this study was to investigate the possibility of improving the composition of goat meat, in terms of the fatty acid composition of the different fat deposits. For this purpose, we used two groups of 12 female goats each of which had recently undergone a double birth. The animals were maintained under semi-extensive conditions and trough-fed with a concentrate that was either non-supplemented or supplemented with 50 g/kg of polyunsaturated fatty acids (PUFA)-rich fat protected against ruminant metabolism. The kid goats born to each group were suckled by their dams and a representative sample of each was slaughtered at 45 days after birth. The milk produced by the dams receiving the fat-supplemented diet contained fat with a lower content of saturated fatty acids and a higher content of n-3 PUFA, trans-C18: 1 and CLA. The kid goats suckled by these dams grew faster and the legs of the carcasses presented greater muscular development compared with the non-fat-supplemented diet group. The cover, intermuscular and intramuscular fat presented a different fatty acid composition, with a higher proportion of n-3 PUFA, trans C18: 1 and CLA, while that of n-6 PUFA remained unchanged. The change in the lipid metabolism of the kid goats was made evident by the blood levels of certain biochemical parameters. We discuss the improvement in the quality of the meat obtained, taking into account the feeding strategy provided and the class of animal in question.

The objective of this study was to test the effect of feeding papaya leaf (PL) on rumen microbial population, fermentation characteristics, blood fatty acid composition and antioxidant activity in goats. Three rumen fistulated male goats were assigned in a 3×3 latin square design using three levels of PL: no addition of PL in basal diet (control, CON, 50% concentrate + 50% alfalfa hay), 25% of alfalfa hay in basal diet replaced by PL (medium PL, MPL) and 50% of alfalfa hay in basal diet replaced by PL (high PL, HPL). Rumen fluid and blood plasma were sampled from the animals at the end of feeding trial (third week). Papaya leaf treatments (MPL and HPL) showed significant differences (p<0.05) in terms of rumen fermentation parameters as compared to the CON group at different times of measurement. The concentration of methanogenic archaea (log10cell/L) decreased (p<0.05) in both PL treatment groups as compared with CON group at all sampling times. The concentration of α-linolenic acid and total conjugated linoleic acid (CLA) were also higher (p<0.05) in the blood of goats fed PL especially HPL, compared to the CON. Blood plasma malondialdehyde concentration (mM/mL) of PL treatment groups showed a significant reduction as compared with CON. Supplementation of PL allowed the modulation of rumen characteristics which might represent a feeding strategy to reduce methane emission by directly inhibiting methanogens while improving the health benefits of ruminant products.

SummaryPlatelet aggregation and its relation to fatty acid composition of platelets, plasma and adipose tissue was determined in 196 randomly selected, free-living, 40-49-year-old men in two regions of Finland (east and southwest) with a nearly twofold difference in the IHD rate.There were no significant east-southwest differences in platelet aggregation induced with ADP, thrombin or epinephrine. ADP-induced platelet secondary aggregation showed significant negative associations with all C20-C22 ω3-fatty acids in platelets (r = -0.26 - -0.40) and with the platelet 20: 5ω3/20: 4ω 6 and ω3/ ω6 ratios, but significant positive correlations with the contents of 18:2 in adipose tissue (r = 0.20) and plasma triglycerides (TG) (r = 0.29). Epinephrine-induced aggregation correlated negatively with 20: 5ω 3 in plasma cholesteryl esters (CE) (r = -0.23) and TG (r = -0.29), and positively with the total percentage of saturated fatty acids in platelets (r = 0.33), but had no significant correlations with any of the ω6-fatty acids. Thrombin-induced aggregation correlated negatively with the ω3/6ω ratio in adipose tissue (r = -0.25) and the 20: 3ω6/20: 4ω 6 ratio in plasma CE (r = -0.27) and free fatty acids (FFA) (r = -0.23), and positively with adipose tissue 18:2 (r = 0.23) and 20:4ω6 (r = 0.22) in plasma phospholipids (PL).The percentages of prostanoid precursors in platelet lipids, i. e. 20: 3ω 6, 20: 4ω 6 and 20 :5ω 3, correlated best with the same fatty acids in plasma CE (r = 0.32 - 0.77) and PL (r = 0.28 - 0.74). Platelet 20: 5ω 3 had highly significant negative correlations with the percentage of 18:2 in adipose tissue and all plasma lipid fractions (r = -0.35 - -0.44).These results suggest that, among a free-living population, relatively small changes in the fatty acid composition of plasma and platelets may be reflected in significant differences in platelet aggregation, and that an increase in linoleate-rich vegetable fat in the diet may not affect platelet function favourably unless it is accompanied by an adequate supply of ω3 fatty acids.
