Abstract The U.S. Food and Drug Administration (FDA) conducts Total Diet Studies to determine the dietary intake of selected pesticides, industrial chemicals, and elements (including radionuclides). These studies involve the retail purchase and analysis of foods representative of the diets of infants, toddlers, and adults. The individual food items are separated into a number of food groups, each of which is analyzed as a composite. This report summarizes the results for adult Total Diet samples collected in 20 cities between October 1978 and September 1979. The average concentration, range of concentrations, and calculated average daily intake of each chemical found are presented by food group. The average daily intakes of the chemicals are similar to those found in the several preceding years and are within acceptable limits. The results for samples collected during the same period that represent the diets of infants and toddlers are reported separately.

The present study provides the dietary intakes of macro elements (Ca, Mg, Na, K, P) and trace elements (Fe, Zn, Cu, Se) from the Italian total diet. The contribution of the most representative food groups of the total diet (cereals and cereal products, vegetables, fruit, milk and dairy products, meat and meat products, fish) to the daily intakes of these nutrients was also evaluated. The Italian total diet was formulated following the ‘market-basket’ approach. Cereals represented the primary sources of Cu (35 %), Fe (30 %) and Mg (27 %). About 89 % of the total daily intake of Fe was derived from plant foods. The vegetables food group was the main source of dietary K (27 %). Most of the Ca (59 %) and P (27 %) was derived from the milk-and-dairy food group. Of the dietary Zn, 41 % was provided by meat, which, together with the fish food group, was the primary source of Se (20 %). The adequacy of the Italian total diet with respect to nutritional elements was assessed by comparing the daily intakes with the average requirement values of the Italian recommended dietary allowances. The present findings indicated that the dietary patterns of the Italian total diet were generally consistent with current Italian dietary recommendations for both macro and trace elements. The major concern was for Ca, for which daily intake was 76 % of the average recommendation for the Italian population. It should not be ruled out that there could be a potential risk of inadequate Fe intake in some segments of the population.

Passage of the Federal Water Pollution Control Act in 1972 has caused a huge increase in the amount of sewage sludge for disposal. The Food and Drug Administration has worked with the Environmental Protection Agency and other agencies to recommend proper management of the application of sludges to food and feed crops to ensure the safety and wholesomeness of the food supply. FDA's concerns about contamination of food by pathogenic microorganisms, heavy metals, persistent pesticides and industrial chemicals such as polychlorinated biphenyls (PCBs) are described. The reasons for special concern about direct application of sludge onto growing food and feed crops are discussed. The estimated daily intake of lead and cadmium, as compared to the proposed tolerable daily intakes, is presented, together with FDA's program to develop sufficient data on the natural background levels of these metals in raw agricultural products. Limitations recommended to prevent hazardous cadmium, lead, PCB and pathogen contaminations of food and feeds by sludge are presented.

Abstract The U.S. Food and Drug Administration conducts the Total Diet Study to determine dietary intakes of selected pesticides, industrial chemicals, and elements (including radionuclides). This paper reports results for the sampling period July 1986 to April 1991. The study involves retail purchase of foods representative of the "total diet" of the U.S. population, preparation for "table-ready" consumption, and individual analyses of 234 items making up the diets of 8 population groups. The diets were based on 2 nationwide food consumption surveys. The data presented represent 21 food collections (also termed "market baskets") in regional metropolitan areas during the 5-year period. Dietary intakes of nearly 120 analytes are presented for 8 population groups, which range from infants to elderly adults. Intakes of selected population groups are compared with representative findings from earlier Total Diet Study sampling periods. As reported previously, average daily intakes are well below acceptable limits.

AbstractObjective:To use cognitive interviewing and pilot testing to develop a survey instrument feasible for administering in the food pantry setting to assess daily intake frequency from several major food groups and dietary correlates (e.g. fruit and vegetable barriers) – the FRESH Foods Survey.Design:New and existing survey items were adapted and refined following cognitive interviews. After piloting the survey with food pantry users in the USA, preliminary psychometric and construct validity analyses were performed.Setting:Three US food banks and accompanying food pantries in Atlanta, GA, San Diego, CA, and Buffalo, NY.Participants:Food pantry clients (n 246), mostly female (68 %), mean age 54·5 (sd 14·7) years.Results:Measures of dietary correlates performed well psychometrically: Cronbach’s α range 0·71–0·90, slope (α) parameter range 1·26–6·36, and threshold parameters (β) indicated variability in the ‘difficulty’ of the items. Additionally, all scales had only one eigenvalue above 1·0 (range 2·07–4·71), indicating unidimensionality. Average (median, Q1–Q3) daily intakes (times/d) across six dietary groups were: fruits and vegetables (2·87, 1·87–4·58); junk foods (1·16, 0·58–2·16); fast foods and similar entrées (1·45, 0·58–2·03); whole-grain foods (0·87, 0·58–1·71); sugar-sweetened beverages (0·58, 0·29–1·29); milk and milk alternatives (0·71, 0·29–1·29). Significant correlations between dietary groups and dietary correlates were largely in the directions expected based on the literature, giving initial indication of convergent and discriminant validity.Conclusions:The FRESH Foods Survey is efficient, tailored to food pantry populations, can be used to monitor dietary behaviours and may be useful to measure intervention impact.

Daily intakes of 17 metals (boron, aluminium, chromium, manganese, nickel, copper, zinc, arsenic, selenium, molybdenum, cadmium, antimony, lead, uranium, magnesium, calcium, and iron) via drinking water and total diet were investigated in six cities in Japan. The daily metal intakes were estimated and compared with tolerable daily intake (TDI) values proposed by the WHO or Joint FAO/WHO Expert Committee on Food Additives for toxic metals and with recommended dietary allowances (RDAs) or adequate intake (AI) values proposed for essential metals by the Japanese Ministry of Health, Labour and Welfare. Among the 13 toxic metals, mean dietary intakes of 10 (except arsenic, selenium, and molybdenum) were less than 50% of TDI, suggesting that for these 10 metals the allocation of intake to drinking water in establishing guidelines or standards could possibly be increased from the normal allocation of 10–20% of TDI. For the 13 toxic metals, the contribution of drinking water to TDI was 2% or less in all six cities. Mean dietary intakes of the essential elements magnesium, calcium, and iron were less than the RDA or AI values. Drinking water did not contribute much to essential metal intake, accounting for less than 10% of RDA or AI.
