Slaughtering cattle at lighter weights to produce leaner meat might be expected to improve efficiency of production. An earlier experiment with Hereford x Friesian steers (Thomas, Kay, Hamilton and Fisher, 1987) showed no significant effect on feed efficiency when cattle were slaughtered at three different EC fat classes. An experiment was subsequently carried out to examine the effect on performance, carcass characteristics and meat quality of two breeds of cattle slaughtered at three different levels of fatness. In this experiment backfat depth was used as the criterion for slaughter.Thirty Hereford x Friesian/Holstein steers (initial weight 326 kg) and 30 Limousin x Holstein/Friesian steers (initial weight 340 kg) were used in the experiment.

This study evaluated the effects of including meal from glyphosate-tolerant (Roundup-Ready®) canola (RRC) in barley-based diets for lambs on apparent digestibility of the diets, growth performance of the lambs, and carcass quality and composition. Four isonitrogenous diets were prepared that included canola meal [6.5%, dry matter (DM) basis] from four different sources (two commercially available canola blends, COM1 and COM2; a transgenic line, RRC and the parental non-transgenic line from which RRC was derived, PAR). Apparent digestibilities of the four diets were determined using eight mature wethers (67.8 ± 2.3 kg) in a replicated Latin square with four 21-d periods. No aspect of digestibility (DM, fibre, or nitrogen balance) was influenced by canola source. The growth trial involved 60 early-weaned Arcott lambs (30 ewes; 30 wethers; initial age approximately 2 mo; initial weight 21.5 ± 1.0 kg). The lambs were blocked by weight and gender for assignment to treatments, and fed the diets until reaching or exceeding 45 kg body weight. Intake of DM was similar among lambs fed COM1, COM2 and PAR diets, and between PAR and RRC (COM1, COM2 > RRC, P < 0.05). Diet did not affect (P > 0.05) average daily gain or feed efficiency. Carcass yield grade was higher (P < 0.05) for COM1 and COM2 diets than for PAR or RRC, although carcass composition did not differ (P > 0.05) between PAR and RRC. Canola source did not affect (P > 0.05) meat tenderness, as determined by shear force, drip loss or intramuscular fat content. Meat colour o f RRC-fed lambs did not differ from that of all other treatment groups. In this study, including canola meal prepared from glyphosate-tolerant canola did not alter diet digestibility, feed efficiency, growth performance, carcass characteristics or meat quality of lambs. This experiment was conducted to determine the effect of methionine and lysine supplementation on growth performance, meat quality and rumen fermentation parameters in growing goats. Twenty Xiangdong black goats with initial body weights of 18.1 ± 2.07 kg were used and randomly assigned into four treatments including: no additive (Control), 1.27% Methionine (T1), 2.45% Lysine-HCl (T2), 1.27% Methionine plus 2.45% Lysine-HCl (T3). After 28 days of feeding, the goats were slaughtered and samples were collected for the study. Supplementation of methionine and lysine had no effect on growth performance, meat quality, tissue chemical composition and rumen fermentation parameters. These findings suggest that the mode of supplementation of methionine and lysine used failed to detect the variation.

The objective of this study was to evaluate the effects of dietary energy levels on growth performance, rumen fermentation and bacterial community, and meat quality of Holstein-Friesians bulls slaughtered at different ages. Thirty-six Holstein-Friesians bulls (17 months of age) were divided into a 3 × 3 factorial experiment with three energy levels (LE, ME and HE; metabolizable energy is 10.12, 10.90 and 11.68 MJ/kg, respectively) of diets, and three slaughter ages (20, 23 and 26 months). Results indicated that bulls fed with ME and HE diets had higher dry matter intake, average daily gain, and dressing percentage at 23 or 26 months of age. The ME and HE diets also reduced bacterial diversity, altered relative abundances of bacteria and produced lower concentrations of acetate, but higher butyrate and valerate concentrations in rumen fluid. Increasing in dietary energy and slaughter age increased the intramuscular fat (IMF) and water holding capacity. In summary, Holstein-Friesians bulls fed with ME and HE diets, slaughtered at 23 and 26 months of age could be a good choice to produce beef with high IMF. Slaughter age may have less influence than dietary energy in altering fermentation by increasing amylolytic bacteria and decreasing cellulolytic bacteria, and thus, further affecting meat quality.

Abstract Four hundred and thirty-two beef steers (346.3 ± 63.7 kg BW) were used to determine the effects of Zn source on feedlot cattle fed ractopamine hydrochloride. Cattle were blocked in groups of 54 by BW and housed in 48 pens containing 9 steers per pen. Pens within a weight block were randomly assigned to treatments in a 2 x 3 factorial arrangement, with factors being: 1) 0 or 30.1 mg of ractopamine HCl/kg DM fed during the final 29 days on feed; and 2) Zn source: 90 mg of supplemental Zn/kg DM from ZnSO4; Zn sulfate (67%) + Zn methionine (33%); and Zn from Zn hydroxychloride, fed through the entire feeding period. Cattle were fed a high concentrate finishing diet for 154 d and slaughtered at a commercial abattoir. Average daily gain, DMI, feed efficiency and carcass characteristics were determined after slaughter. Zinc source had no impact on live animal performance. Cattle fed ractopamine HCl had greater (P &lt; 0.01) final BW, greater (P &lt; 0.001) ADG, improved (P &lt; 0.001) G:F, heavier (P &lt; 0.01) HCW, and larger (P &lt; 0.05) longissimus muscle compared to non-ractopamine supplemented steers. There was a Zn source by ractopamine interaction (P &lt; 0.01) for dressing percentage. Cattle receiving ractopamine HCl with Zn hydroxychloride had a greater dressing percentage (P &lt; 0.05) when compared to ractopamine HCl cattle fed other Zn sources. Cattle receiving ractopamine HCl with Zn sulfate had a lesser dressing percentage (P &lt; 0.05) when compared to ractopamine HCl cattle fed other Zn sources. Additional Zn source by ractopamine HCl interactions were not significant. These data indicate that Zn source has minimal impacts on feedlot steer performance and carcass characteristics when supplemented to cattle receiving 0.0 or 30.1 mg of ractopamine HCl/kg DM.
