Food composition data (FCD) comprises the description and identification of foods, as well as their nutrient content, other constituents, and food properties. FCD are required for a range of purposes including food labeling, supporting health claims, nutritional and clinical management, consumer information, and research. There have been differences within and beyond Europe in the way FCD are expressed with respect to food description, definition of nutrients and other food properties, and the methods used to generate data. One of the major goals of the EuroFIR NoE project (2005 - 10) was to provide tools to overcome existing differences among member states and parties with respect to documentation and interchange of FCD. The establishment of the CEN’s (European Committee for Standardisation) TC 387 project committee on Food Composition Data, led by the Swedish Standards Institute, and the preparation of the draft Food Data Standard, has addressed these deficiencies by enabling unambiguous identification and description of FCD and their quality, for dissemination and data interchange. Another major achievement of the EuroFIR NoE project was the development and dissemination of a single, authoritative source of FCD in Europe enabling the interchange and update of data between countries, and also giving access to users of FCD.

AbstractObjectives:To share experience on the development of national and regional food composition tables (FCTs) and the issues and problems involved.Design:Food composition data analysed at national and regional levels were compiled. Systematic development of FCTs detailing specific criteria and characteristics following the INFOODS and ASEANFOODS guidelines was conducted.Setting:The national FCT was developed using the Thai FCT as a study model. For the regional level, the Association of South East Asian Nations (ASEAN) FCT was developed.Subjects:About 3000 analysed datasets of about 1000 food items on proximate composition, minerals, vitamins and other available components from various sources in Thailand and about 4500 analysed datasets of 1700 food items on the same components from various countries in ASEAN were compiled. The national and regional FCTs were then developed systematically. Results:The developed Thai FCT contains 24 nutrients of 1055 food items and the ASEAN FCT contains 21 nutrients of about 1740 food items. Issues and problems regarding the development and use of national and regional food composition data are listed. Conclusion:Food composition databases have become increasingly important in the international health arena. Systematic compilation of the data is necessary and the use of INFOODS tag names is strongly recommended. This is to indicate the methods of nutrient analysis and calculation, and to facilitate international and regional data interchange. Users are also recommended to read the Explanatory Notes and Information to the Users. Collaboration among data generators, users and compilers at national and regional levels, as well as support from international organisations, is essential.

In a nutshellHistorical food composition data and the growing of archived seeds suggest that the average content of some nutrients in many foods has decreased over the last century.Although the changes are small in comparison with other factors affecting nutritional status, we might benefit if agriculture were to place greater focus on nutrient content, rather than just yield.
