The food system is a major contributor to climate change, biodiversity loss, eutrophication and deforestation. This article examines national dietary guidelines as a way to shift dietary patterns in the population toward diets that continue to promote health while being more ecologically sustainable. While some sustainability principles may be inherent in the 2007 Canada’s Food Guide (e.g., an emphasis on plant-based foods), these were not made explicit. As Health Canada undertakes a revision of its national dietary guidance, a unique opportunity exists to situate dietary guidelines within the broader context of Canada’s first-ever national food policy. Coherence between these two policies has the potential to position the role of diets as a core link between food systems and both human and ecological health. This paper explores the possibilities of advancing sustainability principles within Canadian national dietary guidelines by drawing on evidence-based literature and key sustainability messages within dietary guidelines from four countries that have integrated many of these principles. Lessons and perspectives from international experiences on incorporating environmental sustainability into dietary guidelines are described including: influence of the food industry; cross-sector collaboration and alliances; civil society participation; and “win-win” messages. Application of these lessons to Canada, followed by opportunities to advance the incorporation of sustainability principles within the country’s national dietary guidelines are then proposed.

Canadian federalism poses unique challenges for the development of a national food policy. Under the Constitution Act, 1867, the federal government and the provinces are granted powers to govern exclusively in certain areas and to share jurisdiction in others. Where one level of government has exclusive jurisdiction, the other level of government is not permitted to interfere. However, good food system governance requires addressing policy coherence and coordination horizontally, across sectors such as agriculture, trade, health, finance, environment, immigration, fisheries, social protection, and vertically between the federal government, the provinces, and international and transnational actors. The development of a national food policy for Canada offers an opportunity to harmonize law and policymaking, and clarify the key roles that all levels of government play in the development and governance of food systems. This will require identifying sites of conflict and overlap, but also spaces for collaboration, coordination, and innovation. A national food policy will necessarily have to work within the constraints of Canadian constitutional law, but federalism and the division of powers can be harnessed to create a more just, equitable, democratic and sustainable food system.

Policy plays significant role in defining the food system of any country, and a sustainable food system is necessary for food security. This chapter maps out the causal interactions between food systems, food security and policy, and the challenges in transition to a sustainable food system while respecting the rights of all people to have access to adequate food in Nigeria. Explicit, rigorous, and transparent literature search was undertaken and many articles were assessed and reviewed. Although the results established a mutual relationship between food system and food security, existing literature have widely failed to take interactions between food systems, food security and policy into account. While food production is used as an entry point to improving food system sustainability, the quest for food security are undermining transition towards sustainable food systems. It was found that without right policies in place, it may be difficult to have food systems that are sustainable and ensure food security. This chapter provides a useful contribution to policy, and research on transitions towards sustainable food system. Any policy intervention to address one part of the food systems will impact on other parts and will determine whether a country is food secure or not. Enabling policy environment is therefore essential in ensuring a sustainable food system and for the attainment of food security.

AbstractNational and global food systems are beset by intersecting and mutually reinforcing crises of public and ecological health. The locus of these crises resides primarily in the excessive concentration of corporate power and control. Deploying a Gramscian theory of politics as a contribution to the ongoing development of a critical food-based environmental education pedagogy, this article argues that transformative change requires the mass exercise of food citizenship directed towards the realisation of a socially just and ecologically sustainable food system, as contemplated by the principles of food sovereignty. The article argues further that food citizenship in turn presupposes levels of engagement and motivation that will only come from processes of transformative learning and critical consciousness-raising through an emerging form of environmental education: critical food systems literacy.

The World Food System Summer School is an innovative two-week course that seeks to develop the knowledge, skills and attitudes of the next generation of decision makers to build sustainable food systems. Meaningful learning, where the participant is able to relate new information to existing knowledge, is a critical part of education about complex systems and requires the integration of reflective approaches to teaching and learning. We adapted the rich picture method in three summer schools in Switzerland, South Africa and Côte d’Ivoire (74 participants with 29 nationalities) to support the reflection of participants on their knowledge gained on complex food systems. Coding and comparing 51 pairs of pre- and post-course pictures of food systems clearly demonstrated newly gained knowledge: The number of sub-categories drawn significantly increased from 11 to 19 in the post-course pictures, the largest increase occurred for environmental sustainability (57%). The rich picture method is a highly valuable and simple tool to gain insight into how participants’ knowledge changes and where there are gaps in meeting the learning objectives. This is particularly useful within a highly diverse participant cohort, as it allows participants to discuss and reflect on their own learning experience in a personalized way. Additionally, the rich picture method provides insights for faculty to improve their approaches to teaching on food systems.

AbstractFood systems must serve different societal, public health and individual nutrition, and environmental objectives and therefore face numerous challenges. Considering the integrated performances of food systems, this paper highlights five fundamental paradigm shifts that are required to overcome trade-offs and build synergies between health and nutrition, inclusive livelihoods, environmental sustainability and food system resilience. We focus on the challenges to raise policy ambitions, to harmonize production and consumption goals, to improve connectivity between them, to strengthen food system performance and to anchor the governance of food systems in inclusive policies and participatory institutions. Taken together, these shifts in paradigms shape a new discourse for food system transformation that will be capable to respond to current and future policy challenges.

There has been an increasing focus on the potential of city-based initiatives to address the negative impacts of the global food system. Adopting a meso-level policy perspective, this study aimed to explore whether, how, and why the UK non-government organisation led Sustainable Food Cities (SFC) programme has influenced this food agenda at the level of city governance. The research fills a gap in our understanding of the detailed processes through which trans-local food networks influence the capacity of local food partnerships to effect change, sustain themselves, and through a collective effort, to shape the attention of national and international decision-makers. Based on documentary evidence from 29 of the most active member cities and interviews with a purposive selection of stakeholders, the analysis suggests that SFC provided a point of origin for solutions and inspiration on a major and complex issue. However, the absence of a national sustainable food policy framework and little formal national-government recognition of local food governance together with the paucity of funding opportunities threatens the long-term viability of local food partnerships and ultimately places significant constraints on the ability of the programme to effect long-lasting, systemic change.

Farming cooperatives are organisations fundamentally based on social capital. However, the neoliberal and globalisation turn in the food system have led to the economisation of agricultural cooperatives as their main objective and criteria for evaluating their performance, and to a retreat from their participation in the wider cooperative movement. Nevertheless, new models of cooperation may provide a method to divert from this neoliberalisation trend by promoting social capital and mutual learning amongst different actors committed to a transition to sustainable food systems. This paper applies the anthropological concept of third spaces to examine the case of multistakeholder cooperatives. This type of food and farming cooperatives are composed of a diverse membership groups (e.g., producers, consumers, coordinators, buyers, etc). A nuanced analysis of these cooperatives’ capacity to generate social capital, and more specifically to blur the boundaries between bonding, bridging, and linking social capital, is presented. Evidence from five case studies suggests that multistakeholder cooperatives that remain at the border of their game, operating in both real and symbolic third spaces, are more likely to be based on and reproduce different types of social capital as well as social and environmental sustainability, while in turn reducing the risk of co-optation of their transformative practices.

Purpose The sustainability of the global food system hinges on its environmental resiliency and safety, including the health and well-being of its labor force. Single disciplinary courses in liberal arts or science often fail to highlight the overlap between environmental and social vulnerabilities that lead to food insecurity and diminish the sustainability of food systems. This paper aims to present the design and delivery of a successfully co-taught, interdisciplinary module on agricultural labor and sustainable food systems as a case study. Design/methodology/approach The authors designed a co-taught module in which they joined each other’s respective history and science class sessions at the undergraduate business college where they teach. Innovating the cross-disciplinary content of food security, immigration status, labor exploitation and pesticide exposure, they approached sustainability from the disciplinary perspectives of labor history and environmental science to show how these elements had both unique and overlapping impacts across food systems levels. Comparisons between pre- and post-module survey responses, alongside assessments of a co-authored exam question, measured the effectiveness of this module is changing students’ perspectives as food consumers and as citizens. Findings This module altered students’ understanding and perspectives around issues of food systems sustainability. Assessments indicated that students increased their awareness of agricultural workers at the front end of the food system, during production; students also gained awareness beyond consumption as they came to see the connections between workforce invisibility and ecosystem degradation. Originality/value These insights are valuable to educators at all institutional levels who seek to collaborate on sustainability initiatives and teaching, both in the singular, robust modules and in building modules that will lead to the development of entire courses focused on sustainability. The module described here builds on previous demonstrations of the value, significance and effectiveness of cross-disciplinary collaborations; it pioneers the use of the food system as the link between social and environmental sustainability education.

AbstractConcerns are growing over the ability of the modern food system to simultaneously achieve food security and environmental sustainability in the face of global change. Yet, the dominant tendency within university settings to conceptualize and address diverse food system challenges as separate, disconnected issues is a key barrier to food system transformation. To address this fragmented approach, educators in North American institutes of higher education have begun new degree programs, specializations and certificates related to food systems. These programs, which we term sustainable food system education (SFSE) programs, have a common goal: to support post-secondary students across a range of disciplines in developing the knowledge, skills and dispositions to effectively address complex challenges in the food system. Graduates of these programs will be able to engage in collective action towards transforming the food system. As educators participating in flagship SFSE programs, we identify common pedagogical themes evident in SFSE programs, including our own. We then propose a signature pedagogy (SP) for sustainable food systems education. Signature pedagogies are conceptual models that identify the primary elements by which professional education in a specific field is designed, structured and implemented. On the basis of our analysis of SFSE programs, we identified systems thinking, multi-, inter- and trans-disciplinarity, use of experiential learning approaches and participation in collective action projects as central themes within a SFSE SP. By making these themes and their function explicit within a pedagogical framework, we seek to spur critical and creative thought regarding challenges of professional education in the field of sustainable food systems. Scholars and practitioners are encouraged to review, critique and implement our framework to advance the dialogue on SFSE theory and practice.

The conventional dominant global agri-food system is a main driver in the Anthropocene: food production entails profound global environmental changes from greenhouse gas emissions to biodiversity loss, and shifting diets further impact planetary and human health. Innovative approaches are needed to shift towards more sustainable, equitable and healthy agri-food systems. Building on the increasing recognition of the relevance of traditional agroecological knowledge (TAeK) in sustainable food systems, this paper aims to describe innovative agri-food initiatives and explore how the use and valorization of TAeK may transform conventional agri-food systems. It employs a case-study approach in Spain, where we conducted semi-structured interviews with 12 representatives of alternative agri-food initiatives. We found that, to promote sustainable agri-food systems, TAeK has to span from farm-to-fork. Innovative agroecological practices and knowledge help to safeguard biocultural diversity, while gastronomic knowledge among consumers on how to process and prepare local varieties and species is crucial for the implementation of shorter value chains. We discuss how TAeK enhances the success of conventional systems of innovation, challenging dominant epistemological frameworks. By scaling deep (changing values), scaling out (dissemination, reproduction) and scaling up (changing institutions), the agri-food initiatives may act on leverage points to enable broader transformation of the Spanish agri-food system.
