Sodium Concentration of Homemade Baby Foods

Ingestion of excess salt may be an important factor in the development of hypertension in individuals who are predisposed to this disease genetically or through environmental factors. Some physicians and consumer groups have encouraged mothers to prepare their own baby foods, in part because of their concern that the physiologically unnecessary salt that is added by some commercial baby food manufacturers may lead to hypertension in adult life. This study presents data on the sodium concentration in 70 samples of homemade baby foods prepared by 36 mothers. The mean estimated amount of added salt was 0.41%/ weight—64% higher than the maximum recommended by the Food and Nutrition Board of the National Academy of Sciences. Home-prepared foods had a sodium concentration 1,005% higher than similar baby food products made by Heinz and Beech-Nut and 24% higher than products made by Gerber. The data suggest that advice to parents to prepare their own baby food or to feed their infant food from the table should be tempered with the knowledge that these foods may contain higher salt concentrations than the commercial baby foods.

Discute-se o conjunto dos recentes relatórios do Institute of Medicine e Food and Nutrition Board da US National Academy of Sciences, publicados entre 1998 e 2000, dando-se particular ênfase ao livro das propostas de Ingestão Alimentar de Referência para os denominados antioxidantes alimentares. O conceito das DRI engloba os já conhecidos valores de Recomendações de Cotas ou Doses Alimentares (RDA), os novos valores de Ingestão Adequada, Ingestão Máxima Tolerável e as Estimativas Médias dos Requerimentos. O termo RDA continua em uso, e é reservado para a recomendação mais apurada de um determinado nutriente, da qual se tenha informação. Na tabela da Ingestão Alimentar de Referência, encontram-se as Recomendações de Doses Alimentares atualizadas e complementadas com valores de Ingestão Recomendada de Nutrientes canadenses, ou completadas com valores de Ingestão Adequada. Valores de Ingestão Máxima Tolerável para os antioxidantes, exceto os carotenóides, são fornecidos em separado.

This book represents an interesting and very useful compilation of the proceedings of an international conference on the subject, held in Washington, August 21-24, 1960, under the auspices of the Committee on Protein Malnutrition of the Food and Nutrition Board and the Nutrition Study Section of the National Institutes of Health. The book contains all the original papers presented as well as the discussion following each presentation. Participants were those co-operating in the world-wide program conducted by the Committee on Protein Malnutrition in order to develop protein products from indigenous sources, which could be inexpensive and meet the needs of infants.

The world's population has two major food problems. One relates to the lack of quantity of the world's food supply and the other relates to the quality of the diet selection. Guidelines are given for wise food selections. There has been a major debate since the Senate's Committee on Nutrition and Human Needs announced the dietary goals for the United States. It supports a low cholesterol, low saturated-high polyunsaturated and high fiber diet for all healthy Americans. This discussion shares the recent stance of the Food and Nutrition Board of the National Academy of Sciences. It encourages further research before hardline decision are made. It reserves major diet modifications for individuals with adnormal clinical findings.
