THE DISTRIBUTION OF TRYPSIN AND CHYMOTRYPSIN INHIBITORS IN POTATO TUBERS

Potato peel contains trypsin and chymotrypsin inhibitors at levels similar to those in other parts of the tuber. The levels of these inhibitors differ among potato cultivars (P < 0.01).
