The aryicle presents the results of a comparative study of the biochemical composition of earthworms of dendrobene and prospector rocks, the peculiarities of their cultivation and their use for feeding when growing juvenile tilapia and clary catfish. The experience of cultivating earthworms of two breeds using the improved methods of foreign authors is described. The results of a study of the biochemical composition of cultivated objects that determine their nutritional value for feeding fish are presented. The fish-breeding and biological indicators of juvenile tilapia and clary catfish, obtained during the cultivation of dendrobene and prospector in fish farming in the Almaty region (VI fish-breeding zone) during worm feeding, are analyzed. A comprehensive analysis of the studied indicators made it possible to assign a certain rating place to each worm breed in relation to its use as fish feed.

The sea cucumber or holothurian is a marine species which has been prized in some Asian coun­tries for its nutritional qualities. The purpose of this work was to study the biochemical composition and free radical scavenging and antioxidant activities of Holothuria tubulosa tegument from the Bizerta lagoon in north­ern Tunisia. The obtained data demonstrated that the extract of sea cucumber teguments exhibited high bio­chemical levels (such as moisture 80.77%, protein 7.07%, lipids 10.21%, energy value 13.64 Kcal/g ww), and an important nutritional value (including n-3/n-6: 2.11, EPA+DHA: 20.96, AI: 1.38 and TI: 0.54). High anti­oxidant activities were recorded in the integument by the radical scavenging tests of ABTS and DPPH as well as by the total antioxidant capacity and the FRAP in comparison with the BHT standard. Our results showed that H. Tubulosa tegument has high nutritional value with high antioxidant activities and could be considered a nutraceutical product.

Relevance. Currently, the environmental situation in many regions of our country leaves much to be desired. It is known that proper nutrition is the foundation of health. Products intended for a healthy diet can only be made from environmentally friendly raw materials. In this regard, the regions of Siberia are of particular interest - they are rich in forests located far from settlements, where it is possible to collect and harvest large quantities of ecologically clean wild-growing raw materials for the production of functional food products.Materials and methods. The authors of the article analyzed the nutritional value and biochemical composition of wild-growing raw materials growing in the southern part of Eastern Siberia (Irkutsk region) on the basis of literature sources. The following raw materials were considered: blueberries (Vaccinium uliginosum), wild garlic: bear onions (Allium ursinum L.), forest mushrooms, pine nut cake and spicy-aromatic herbs – sagan-daila (Rhododendron Adamsii) and thyme (Thymus vulg?ris). Information about their nutritional value and biochemical composition is given. Based on the results of this analysis, a conclusion was made on the promising use of this raw material for the production of functional food products.Results. The article presents the results of scientific research related to the development of functional canned food based on wild-growing raw materials growing in the southern part of Eastern Siberia (Irkutsk region). Formulations of functional sauces have been developed, information on nutritional value and data on the content of the main functional ingredients in canned food are provided.

The biomass, proximal composition and fatty acid profile of Isochrysis sp., Chaetoceros muelleri and their mixture, grown under greenhouse conditions, were evaluated. The nutritional value of both species supplied as the monoalgal (Chaetoceros muelleri: Diet I, and Isochrysis sp. Diet II) and mixed diet (Diet III) for larval Litopenaeus vannamei was also assessed on the basis of the development and biochemical composition of the larvae. The highest protein levels were obtained in Diets I and II (40% and 35%, respectively). No significant differences in larval survival were found among the diets; however, larvae fed on Diet II had the lowest mean larval length.
