Polyunsaturated fatty acids from the omega 3 family are more and more often supplied to the diet in the form of supplements. The aim of the study was to characterize the lipid fractions of predatory freshwater fish, i.e., pike (Esox lucius L.), perch (Perca fluviatilis L.), and pike perch (Sander lucioperca L.), and omnivorous fish, i.e., bream (Abramis brama L.) and roach (Rutilus rutilus L.). Their technological usefulness in terms of the source of fish oil was determined, depending on the rate and degree of their oxidative changes. UV radiation (photooxidation test) was used as a factor accelerating lipid oxidation. Research has shown that selected species of freshwater fish are characterized by high lipid oxidative stability, due to the availability and speed of delivery to the processing plant. The initial level of lipid oxidation of their meat, expressed by the TOTOX index, in any species did not exceed the value of 7, while the acceptable value was 26. The oil obtained from the meat of omnivorous fish after the photooxidation process was characterized by significantly better oxidative stability compared to the oil from the meat of predatory fish. The oxidation resistance of omnivorous fish oil was shown to be higher than that of predatory fish.

The ichthyological biodiversity of Polish lakes is poorly understood, even in lakes not used for fishing and those under strict protection. With this in mind, the aim of this study was to conduct a comprehensive ichthyological survey of several lakes in the Wolin National Park (Poland). The study was conducted in Domysławskie and Gardno lakes and the anthropogenic Stara Kredownia reservoir. Each fishing exercise was conducted using benthic nets over a 12 h period. The fish caught were measured and weighed, and the species identified. Shannon-Wiener (H) and Simpson biodiversity indices were determined. The catch comprised a total of 4580 fish (of which 4391 were caught in Domysławskie Lake) belonging to 15 species, with a combined weight of 98,165 g. In general, the most prevalent species were non-predatory fish: roach (Rutilus rutilus), freshwater bream (Abramis brama), white bream (Blicca bioerkna), bleak (Alburnus alburnus), and rudd (Scardinius erythrophthalmus). Individually, perch (Perca fluviatilis) and roach (Rutilus rutilus) were the most abundant species. Ichthyofauna diversity varied greatly between the studied water bodies, with 15 species found in Domysławskie Lake and only 6 species in Gardno Lake. In Stara Kredownia Reservoir, no fish were caught, but amphibians were observed, such as great crested newts (Triturus cristatus) and common newts (Lissotriton vulgaris). Based on the results obtained, Lake Domysławskie had a higher species ichthyofauna diversity than the other ‘tench and pike’ lakes. Gardno Lake had a much lower biodiversity.

Abstract Introduction: The study examined the concentration of total mercury and correlation coefficients between fish size or FCF (condition factor) and the content of Hg in muscle tissue of six freshwater fish: bream (Abramis brama L.), roach (Rutilus rutilus L.), whitefish (Coregonus lavaretus L.), vendace (Coregonus albula L.), perch (Perca fluviatilis L.), and pike (Esox lucius L.). Material and Methods: The fish were caught from the Lake Pluszne located in the Olsztyn Lake District (Poland). Mercury was analysed by atomic absorption spectrometry using Milestone DMA-80 (with dual-cell). Results: The content of the element in the muscles of the examined fish was as follows: pike (0.197 mg/kg) ≈ perch (0.173 mg/kg) > vendace (0.114 mg/kg) ≈ roach (0.095 mg/kg) and roach ≈ whitefish (0.065 mg/kg), and whitefish ≈ bream (0.042 mg/kg) (p ≤ 0.05). In all cases, the content of mercury correlated positively with the body weight and total length of the fish. Only the correlation coefficients between mercury concentration and weight or length of bream were slightly higher (0.979 and 0.977 respectively, p ≤ 0.001). The length and weight relationship of the fish was also determined. Conclusion: The results showed that the levels of mercury were lower than the maximum acceptable limit established by the Commission Regulation (EC) No 629/2008 of 2 July 2008. Thus, they are safe from consumer health point of view.

Purpose: This study aimed to improve the pharmacokinetic behavior of polyunsaturated fatty acids (PUFAs) oxidation to enhance oxidative stability for inhibiting formation of toxic hydroperoxides, develops off-flavors and shortens shelf-life. Methods: Nanostructured lipid carrier (NLC) co-encapsulating omega-3 fish oil and α-tocopherol was successfully prepared by melt blending and hot sonication method to enhance the oxidative stability of the fish oil. Encapsulation efficiency (EE) and in vitro release, the oxidative stability of prepared nanoparticles (NPs) were measured using detection of peroxide value (PV) and thiobarbituric acid (TBA) during 40 days. Results: Electron microscopy and particle size analysis showed dispersed and homogenous NPs with an average diameter of 119 nm. Sustained oil release at a physiologic pH, and longterm stability in terms of the size, zeta, and dispersity of NPs was achieved after 75 days of storage. The omega-3 fish oil co-encapsulated with α-tocopherol in the NLC possessed better oxidative stability compared with the all other formulations. Also, it was found that the NLC as an encapsulation method was more successful to inhibit the formation of the primary oxidation products than the secondary oxidation products. Conclusion: Generally, these findings indicated that co-encapsulation of fish oil and α-tocopherol within the NLC can be a suitable delivery system in order to enrich foodstuffs, in particular clear beverages.

Abstract. Background: Elevated homocysteine levels and malnutrition are frequently detected in hemodialysis patients and are believed to exacerbate cardiovascular comorbidities. Omega-3 fatty acids have been postulated to lower homocysteine levels by up-regulating metabolic enzymes and improving substrate availability for homocysteine degradation. Additionally, it has been suggested that prevention of folate depletion by vitamin E consumption decreases homocysteine levels. However, data on the effect of omega-3 fatty acids and/or vitamin E on homocysteine levels and nutritional status have been inconclusive. Therefore, this study was planned to examine the effect of combined supplementation of fish oil, as a source of omega-3 fatty acids, with wheat germ oil, as a source of vitamin E, on homocysteine and nutritional indices in hemodialysis patients. Methods: This study was a randomized, double-blind, placebo-controlled trial. Forty-six hemodialysis patients were randomly assigned to two equally-sized groups; a supplemented group who received 3000 mg/day of fish oil [1053 mg omega-3 fatty acids] plus 300 mg/day of wheat germ oil [0.765 mg vitamin E], and a matched placebo group who received placebo capsules for 4 months. Serum homocysteine and different nutritional indices were measured before and after the intervention. Results: Twenty patients in each group completed the study. At the end of the study, there were no significant changes in homocysteine levels and in the nutritional indices neither in the supplemented nor in the placebo-control groups (p > 0.05). Conclusions: Fish oil and wheat germ oil combination did not produce significant effects on serum homocysteine levels and nutritional indices of hemodialysis patients.

The authors of the article have studied the content of the elements of anti-oxidant system (malondialdehyde, catalase, selenium) in tissues of the internal organs (gills, intestine, muscles, liver, swimbladder, scales) in some species of predatory fish (pike Esox lucius (L., 1758), perch Perca fluviatilis (L., 1758), pike-perch Sander lucioperca (L., 1758), catfish Silurus glanis ) widespread in the basin of the Volga river in the Saratov region. The lowest concentration of malondialdehyde in organisms of the studied fish species is observed in fall and winter; the highest - in spring and summer. Catalase activity in gills tissue of a pike raised in 11.8%, cat-fish - 9.1%, pike-perch - 7.5%, perch - 7.8%. In fall (compared to winter) enzyme activity lowering in gonads of pike-perch makes 16.3%, in gonads of perch - 14.4%. In other tissues there were not observed any evident changes of catalase activity. Fish species under consideration are listed according to the average value of selenium concentration in organisms, µg/g: pike (0.208) > catfish (0.207) > pike-perch (0.196) > perch (0.178). According to the average value of the selenium accumulation in the body in different season all the studied species can be placed in the following order, µg/g: winter-pike (0.132) > pike-perch (0.136) > perch and catfish (0.142); spring - pike-perch (0.190) > perch (0.191) > pike (0.208) > catfish (0.209); summer - perch (0.186) > pike-perch (0.190) > catfish and pike (0.203); autumn - perch (0.193) > pike-perch (0.268) > > catfish (0.274) > pike (0.289).
