The rising demand and cost of animal protein, food and feed insecurity, environmental and climatic challenges of livestock agriculture have made the option of insects as food sources a viable topic. This chapter presents existing information and research on edible insects, insect farms and value-added insect products and assesses insects as a potential source of food and feed. Mini livestock ranching where edible insect species are reared, can reduce some of the negative environmental effects of livestock agriculture as it will produce significantly less greenhouse gas emissions compared with traditional livestock and have similar nutritional profiles. Edible insect species also; have a much lower feed to meat ratio, require small areas of land and have an almost negligible water requirement. There is an untapped potential to increase access to this nutritious, climate-smart food via intensified semi-cultivation and raising insects in farming environments, developing value added products and also a potential for a significant source of income.

AbstractDietary deficiencies in Fe and Zn are globally widespread, causing serious health problems such as anaemia, poor pregnancy outcomes, increased risk of morbidity and mortality, stunted growth and impaired physical and cognitive development. Edible insects, of which a diversity of over 2000 species is available, are dietary components for about 2 billion individuals and are a valuable source of animal protein. In the present paper, we review the available information on Fe and Zn in edible insects and their potential as a source of these micronutrients for the rapidly growing human population. The levels of Fe and Zn present in eleven edible insect species that are mass-reared and six species that are collected from nature are similar to or higher than in other animal-based food sources. High protein levels in edible insect species are associated with high Fe and Zn levels. Fe and Zn levels are significantly positively correlated. Biochemically, Fe and Zn in insects occur predominantly in non-haem forms, bound to the proteins ferritin, transferrin and other transport and storage proteins. Knowledge gaps exist for bioavailability in the human alimentary tract, the effect of anti-nutritional factors in other dietary components such as grains on Fe and Zn absorption and the effect of food preparation methods. We conclude that edible insects present unique opportunities for improving the micronutrient status of both resource-poor and Western populations.

This paper discusses the current state and priorities of Kenya-based research and innovations on insects as food and feed with a view to establishing a vibrant insects’ value chain. The paper is divided into sections that focus on historical insect consumption, farming, utilisation and entrepreneurial priorities. The paper also introduces a new quadrat model for utilisation of edible insects which shows an interrelationship between edible insects, crops, animals and humans. The paper attempts to identify attempts on identifying social and psychological barriers to insects’ acceptance as food and feed since insects are intimately connected to strong cultural and regional values. We conclude with recommendations about the future priorities of edible insect field which include: tracking of production volumes, new innovations to support automation and industrial production, research on consumer attitudes and behaviour that is culturally sensitive, systematic, and large-scale; enactment of national and regional regulations to support the industry and unequivocal acknowledgment of the impacts of developments in the edible insect industry to national and regional development.

Farmed insects can provide an alternative protein source for humans, livestock, and fish, while supporting adaptation to climate change, generating income for smallholder farmers, and reducing the negative impacts of conventional food production, especially in the tropics. However, the quantity, nutritional quality and safety of insects greatly relies on their feed intake. Tropical forages (grasses and legumes) can provide a valuable and yet untapped source of feed for several farmed insect species. In this perspective paper, we provide a viewpoint of how tropical forages can support edible insect production. We also highlight the potential of tropical forage-based diets over those using organic agricultural or urban by-product substrates, due to their versatility, low cost, and lower risk of microbial and chemical hazards. The main bottlenecks relate to dependence on the small number of farmed insect species, and in public policy and market frameworks regarding the use of edible insects as food, feed and in industrial processes. This perspective will serve interested stakeholders in identifying urgent issues at the research, ethical, marketing and policy levels that can prevent the emergence of new, insect-based value chains and business models, and the nutritional, economic and environmental benefits they promise.

Based on high nutritional value and low production costs, edible insects are an excellent and sustainable source of animal proteins. However, completely replacing meat with edible insects requires a change in consumer mentality not only in Poland, but also in other European countries. In western countries, most people reject eating insects, mainly for cultural reasons. Concerning this, the objective of the study was to examine the knowledge, behavior, and attitudes of the Polish community about edible insects and to understand the main factors driving edible insect consumption. The study was held at the Wroclaw University of Economics and Business, Poland and consisted of two parts: The survey (among 464 students) and the tasting session (among 402 participants). The main findings suggest that there is low willingness to adopt edible insects as a meat substitute among Polish students due to the psychological barriers, such as neophobia and disgust. However, the willingness to eat processed insect food (bread, biscuit) is far higher than for unprocessed whole insects. Environmental benefits are the factors that least affected students’ willingness to try edible insects. Additionally, the tasting session of the bread with powdered insects was attended by the vast majority of participants, which indicates that a positive sensory experience can improve the acceptability of insects as food.

Efforts to attain sustainable nutritional diets in sub-Saharan Africa (SSA) are still below par. The continent is envisaged to face more impending food crises. This review presents an overview of common edible insects in Africa, their nutritional composition, health benefits and utilization in connection with fermentation to enrich the inherent composition of insect-based products and offer foods related to existing and generally preferred culinary practice. Attempts to explore fermentation treatments involving insects showed fermentation affected secondary metabolites to induce antimicrobial, nutritional and therapeutic properties. Available value-added fermented edible insect products like paste, powder, sauces, and insect containing fermented foods have been developed with potential for more. Novel fermented edible insect-based products could effectively fit in the continent’s food mix and therefore mitigate ongoing food insecurity, as well as to balance nutrition with health risk concerns limiting edible insects’ product acceptability in SSA.

Insects have been used worldwide as a source of food, and edible species are eaten both as immature (eggs, larvae, pupae, and nymphs) and in some cases as adults. In this regard, several scholars and researchers seek to promote an alternative entomological trend and highlight the potential of insects as a high-quality nutritional option. The consumption of various edible species contributes to the nutritional health of indigenous, rural peoples, as well as those individuals who live in urban areas and use this kind of food resource, in accordance with insects’ seasonal abundance. Colombia, due to its sociocultural origin, stands out as one of the Latin American countries that have the habit of consuming insects by presenting both biological and ethnic diversity. However, the use and diversity of edible insects in the country have been little studied. This review summarises the current status related to the knowledge of insects as food resources, with emphasis on ethnic groups established in the country. In Colombia, 69 edible insect species are currently reported, distributed in 49 genera, 27 families and 10 orders, and ingested by approximately 13 ethnic groups belonging principally to the Amazon and Caribbean regions. Guidelines and protocols are provided to establish research priorities in the study and use of edible insects in Colombia. In this way, the proposal of a general framework for the study and conservation of edible insect species, integrating a bioecological, socio-economic and institutional approach, will provide new perspectives for food security in this era of world food scarcity, and can play an interdisciplinary role (forestry, traditional medicine, agriculture, livestock) in mitigating the current global food crisis.

The exploitation of non-timber forest products including edible insects plays an important role in the food habits of the Cameroon population and in particular those of the Adamawa and eastern regions. Although the consumption of insects in these areas is an ancient practice, there is a dearth of information concerning their diversity, availability and their modes of consumption. In order to develop the potential of insects as food and feed, a descriptive survey was carried out with 584 people in nine divisions of the two regions, to collect quantitative and qualitative information on their knowledge and different uses of insects. Thirty-one regularly consumed insect species belonging to the order of Isoptera (19.35%), Orthoptera (19.35%), Lepidoptera (54.90%) and Coleoptera (6.45%) were recorded. Inadequate harvesting practices such as slash-and-burn agriculture, destruction of termite mounds, logging and cutting down host trees when capturing caterpillars were recognised as the main causes of the scarcity of insects currently observed in these regions. The consumption of insects depends on religion and ethnic. It is a taboo among Muslims. Apart from 1.11% of insects consumed raw, boiling (15.74%), sun drying (17.79%), frying (29.95%), grilling (28.88%), roasting on coals (6.53%) are the different culinary treatments commonly used by women who constitute the main actors (75%) in this sector. This diversity of edible insects in these areas could be a potential to develop in the fight against malnutrition, but the harvesting techniques applied contribute to their gradual disappearance.

An overview is given of the special issue on edible insects covering a number of aspects along the value change. The articles presented cover topics about producing insects both as food for humans and feed for animals, ranging from environmental impact, facility design, (left-over) substrates, the role of microbes, genetics, diseases, nutrition, to insect welfare. Possible health benefits of insects for humans and animals are discussed as well as the potential dangers in terms of allergies and chemical/biological contaminants. Regulatory frameworks are examined and assessed for remaining obstacles. The technologies dealing with the processing and extraction of proteins, lipids, and chitin were also reviewed. Consumers’ perception of insect-derived food products is discussed as well. A unique aspect of this special issue within the ‘Journal of Insects as Food and Feed’ is a first attempt to discuss the economics of the industry. The special issue concludes with a discussion of policy and challenges facing the sector.

Western cultures currently struggle to have insects accepted as a human food. This barrier is not as high in many parts of the Asia Pacific region because entomophagy is (or was until recent times) a part of their accepted diets. The region is comprised of many different cultural groups and the degree to which they embraced entomophagy has been determined by dietary needs, cultural considerations, and the availability of insects. While entomophagy has decreased in westernised societies, the demand for edible insects has increased in parts of Asia in association with rising standards of living. An assessment of the use of insects as food and feed in the Asia Pacific region is provided and important knowledge gaps are identified. Edible insects are sourced by three main strategies: wild harvesting, semi-domestication of insects in the wild, and farming. Semi-domestication and farming have the potential to provide a more sustainable food supply, but globally 92% of species are wild harvested. The harvested insects come from all trophic levels, although most of the terrestrial edible insect species are herbivores and most species of edible aquatic species are predators. The increased demand for edible insects puts pressure on the source populations because new technologies are now used to harvest insects more efficiently and to store them safely for longer periods, facilitating the harvesting of greater amounts of insects. This, in combination with either loss of natural habitats or changes to the environment, puts even more pressure on insect populations. The over harvesting of edible insects from different trophic levels could have long term adverse implications for ecosystem processes in Asia Pacific and other regions.
