The Application of Carbon Footprint in Agri-Food Supply Chain Management: Case Study on Milk Products

In the process of supply chain management, the environmental impact is one important concern. Carbon footprint is a popular metric to quantify a products greenhouse gas (GHG) emissions, and assist supply chain management. In this paper, carbon footprints were calculated for three common milk products, 180 g Yogurt, 250 mL Fluid milk and 400g Skim milk powder (SMP) at the product brand level (YiYi®). The results demonstrated the well comprehensiveness and practicality of carbon footprint as streamlined indicator in supply chain management for agri-food products. The carbon footprints were compared among different life cycle stages as well as different products, and possible mitigation strategies were put forward for GHGs reductions. The relative contributions that different phases over the supply chain make were highlighted. On-farm emissions from cropping and livestock subsystems made up the majority of the carbon footprint, which deserved special attention in agri-food sector.

This paper reviews the supply chain management literature to summarize best-practice guidelines for mitigating supply problems. Very few studies in the extant literature focused on matching a strategy for both the supply and demand perspective. Case studies of supply chain management have traditionally focused on single companies, and especially on successful organizations rather than on the demand-supply-chain relationships (which involve at least two companies). Therefore, this study considers the experiences of the author, and researchers several well-known profitable fortune 1000 supply chain companies, to determine which supply chain mitigation strategies work best in complex situations.

In the last two decades the term sustainable supply chain management (SSCM) has become quite popular. Organizations are working on sustainability of their supply chain (SC). Sustainability covers environmental, social, and economic aspects of different supply chain management activities. Organizations are continuously working in the direction of making their processes and product green. On the environmental front, use of renewable source of energy, reducing waste of energy, reducing carbon footprints is important. Simultaneously, reuse of products, re-cycling, and following environmental standards while disposing off is also recommended. In this chapter, the author has identified 13 issues and challenges of SSCM from literature review and expert opinion. Simultaneously, the author has also identified nine new technologies of modern time used in industries. Further, the author has tried to analyze the linkage between the challenges of sustainability and intelligent technologies by Jaccard's similarity coefficient methodology.

The beverage industry is one of the leading national industries with high growth and a very tight level of competition. The risk supply chain management approach is one of the driving factors for the sustainability of the industrial supply chain. The purpose of this study is to analyze the risk supply chain management to support the sustainability of the beverage industry supply chain in the case of fruit juice beverage products. The data used in this study consisted of primary data and secondary data. Primary data obtained from distributing questionnaires, interviews and field observations. The respondents of this research are the beverage industry supply chain stakeholders. This research combines qualitative and semi-quantitative approaches. Qualitative analysis is conducted to describe activities and risks in the beverage industry supply chain. Risk analysis is carried out using a semi-quantitative approach. The risk evaluation in the supply chain of the fruit juice beverage industry combines the SCOR-FMEA method. The risks that are classified as High and Priority are then analyzed by using the Fishbone Diagram as a reference for formulating risk mitigation strategies for the sustainability of the supply chain for the juice beverage industry.

During the past two decades, environments surrounding supply chains (SC) have faced many changes, which require SC managers to deal proactively with unknown situations and new risks. Therefore, one of the most important issues in supply chain management is managing uncertainties of a SC and mitigating negative effects of SC risks. In this chapter, an overview of supply chain risk management (SCRM) is given. First, fundamental concepts in SCRM are introduced. Next, sources of SC risks, SCRM and its process, and some robust SC risk mitigation strategies are introduced. Finally, an introduction to several mathematical models for SCRM is given.
