The photoluminescence of carbon quantum dots synthesized from natural honey and mixtures of honey and sugar has been studied. An increase in the sugar content leads to a decrease in the photoluminescence intensity without changing the shape of the luminescence spectrum of these quantum dots aqueous solutions, which is associated with a decrease in the yield of their synthesis in the sugar presence. The discovered effect can be used to detect sugar in honey. When examining five different market samples of flower honey using this method, two of them showed a significant decrease in the photoluminescence intensity. A laboratory test for compliance with GOST 19792-2017 Standard requirements established an excess of the sucrose content in these samples. Luminescent determination of sugar in honey does not require complicated equipment and can be used to develop a new analytical method for determining the sugar content in counterfeit natural honey.


One of the most important aspects of endemic populations conservation of modern honeybee breeds of is study in the field of drones morphological features identification in the apiaries, as the assessment of Queen bees’ purity breed and the potential for recovery of the populations. In this regard, studies of the honeybee drones’ breed in the Chuvash Republic (Chuvashia) are relevant and have scientific and prac-tical value. The raw material was a sample collection of drones (126000 pcs. from 4200 of the bee fami-lies) from 21 districts, which are covering all natural honey gathering zones of the Chuvash Republic: forest-steppe, forest and steppe. Three characteristics are identified: colour of the hairs on a scale of Gotze, cubital index and the length of the proboscis. The binocular microscope MBS-10 was used in the work. In the process of research, biogenetic potential of the Chuvash population of Central Russian breed (Apis mellifera mellifera) is established, in the conditions of hybridization, with the observed trend of an annual increase. Five subpopulation structures or administrative districts (Morgaushsky, Kras-noarmeysky, Krasnochetaysky, Shumerlinsky and Batyrevsky) are registered, where, the territory of "pure" breeding is stored and gradually created thanks to the selection-breeding works. The obtained re-sults prove the effectiveness of implemented local and regional programs and activities of breeding and distribution of Central Russian breed bees in the Chuvash Republic.

Abstract Enzymatic hydrolysis of flaxseed protein (FP) was carried out using trypsin in order to obtain flaxseed protein hydrolysates possessing better antioxidative property and modified rheological properties. The antioxidative properties of hydrolysates were much higher than the unhydrolyzed flaxseed protein. The hydrolysis also significantly reduced the hydrodynamic diameter of the magnitude of zeta potential of the dispersions. The gelling point of the hydrolysates occurred earlier than the unhydrolyzed sample while the duration of hydrolysis (30–120 min) did not affect gelling point of the hydrolysates. Considerable decrease in the gel strength and the frequency dependence of gel strength were observed in gels produced using hydrolyzed flaxseed protein. The above findings indicate that hydrolysates possessing high degree of antioxidative properties. The gels produces from these hydrolysates will have fast gelling property and will produce gels with reasonable strength. Thus, flaxseed protein hydrolysates obtained from trypsin hydrolysis can be used in applications that require proteins with higher antioxidative properties but softer texture.

Honey as a food has long been used in human nutrition and is still popular. Honey is important because of its therapeutic, prophylactic and strengthening value. Pollen is one of the most decisive components that ensure the quality and type of honey. Modern society becomes more and more sensitive to airborne pollen. Therefore, it is crucial to determine the composition of allergenic plant pollen in natural honey. For this purpose, we studied and compared pollen abundance in honey and air samples collected in Lithuania. Standard methods for pollen investigation in air and honey were used in this study. The botanical diversity of pollen identified in honey and air samples indicates 10 morphotypes: 8 of woody plants and 2 of herbaceous plants, in both the honey and air samples. <em>Salix</em> pollen counts in the honey were found to be highest among airborne pollen from May to September. The anemophilous allergenic pollen constituted 44 % of the total pollen detected in the honey.
