The evaluation of nutritional quality of Chinese cabbage and the effects of cultivar, weed incidence, plant density and growing season were observed in integrated cultivation system. Mean contents of analysed compounds were as follows: 6% of dry matter, 10% of crude fibre, (in mg/kg of f.m.): 2,199 mg K, 289 mg Ca, 146 mg Mg, 111 mg Na, and 316 mg of vitamin C. Mean content of nitrates reached the value of 647 mg/kg. A significant effect of cultivar on the content of all observed substances in cabbage heads excluding magnesium was thus confirmed; however, a decrease of nitrates was found in the treatment with higher plant density. Weed cultivation caused slightly (insignificantly) higher nitrates content in cabbage heads by 100 mg/kg. Growing season showed a significant effect on content of some evaluated compounds. Integrated cultivation of Chinese cabbage could be an adequate approach to ensure nutritionally valuable products with low nitrates content.

AbstractThis study examines the effect of irradiance level produced by solid-state light-emitting diodes (LEDs) on the growth, nutritional quality and antioxidant properties of Brassicaceae family microgreens. Kohlrabi (Brassica oleracea var. gongylodes, ‘Delicacy Purple’) mustard (Brassica juncea L., ‘Red Lion’), red pak choi (Brassica rapa var. chinensis, ‘Rubi F1’) and tatsoi (Brassica rapa var. rosularis) were grown using peat substrate in controlled-environment chambers until harvest time (10 days, 21/17°C, 16 h). A system of five lighting modules with 455, 638, 665 and 731 nm LEDs at a total photosynthetic photon flux densities (PPFD) of 545, 440, 330, 220 and 110 µmol m−2s−1 respectively were used. Insufficient levels of photosynthetically active photon flux (110 µmol m−2 s−1) suppressed normal growth and diminished the nutritional value of the Brassica microgreens studied. In general, the most suitable conditions for growth and nutritional quality of the microgreens was 330–440 µmol m−2 s−1 irradiation, which resulted in a larger leaf surface area, lower content of nitrates and higher total anthocyanins, total phenols and 2,2-diphenyl-1-picrylhydrazyl (DPPH) free-radical scavenging capacity. High light levels (545 µmol m−2 s−1), which was expected to induce mild photostress, had no significant positive impact for most of investigated parameters.

Effect of ammonium and nitrate ratios (0:100, 25:75, 50:50 and 75:25) on nutritional quality of flowering Chinese cabbage (Brassica campestris L. ssp. chinensis var. utilis Tsen et Lee) with 3 cultivars were studied in hydroponics. The results indicated that, with the increasing of ammonium proportion in nutrient solution, the soluble sugar content in product organ of flowering Chinese cabbage increased gradually, but Vc content decreased gradually. Enhancement of ammonium by 25% or 50% in nutrient solution increased the soluble protein content in leaf significantly, while it increased gradually in stalk with the increasing of ammonium proportion. Free amino acids in product organ of flowering Chinese cabbage were improved significantly by enhancement of ammonium in nutrient solution. Integrated nutritional quality of flowering Chinese cabbage in 25% ammonium enhancement treatment was better than others under hydroponics condition.

AbstractBanana-based weaning food mixes were developed from the Nendran variety to study the nutritional quality of the mixes and feasibility of marketing on a commercial scale. Chemical composition viz., moisture, acid, pH, reducing and total sugars, protein and β-carotene of the developed banana-based weaning mixes were analysed. The trypsin inhibitor activity reduced during cooking, and the flatus compound could not be measured due to its very meagre gas production. The α-amylase activity and in vitro protein and carbohydrate digestibilities were also analysed. A feeding trial of the developed mixes was conducted in infants as a supplement to study the nutritional quality of the developed banana-based weaning food mixes. Results showed an increase in all the anthropometric measurements during the feeding period, and the developed mixes can be prepared on a commercial scale to prevent malnutrition and undernutrition during the rapid growing period of infants.
