Abstract Background In order to enhance the antibacterial activity and reduce the toxicity of Zn2+, novel complexes of Zn(II) were synthesized. Results A water-soluble zinc-glucose-citrate complex (ZnGC) with antibacterial activity was synthesized at pH 6.5. The structure, morphology, characterization, acute toxicity, antibacterial and antioxidant activities, and in situ intestinal absorption were investigated. The results showed that zinc ion was linked with citrate by coordinate bond while the glucose was linked with it through intermolecular hydrogen bonding. The higher the molecular weight of sugar is, the more favorable it is to inhibit the formation of zinc citrate precipitation. Compared with ZnCl2, ZnGC complex presented better antibacterial activity against Staphylococcus aureus (S. aureus, Gram-positive) and Escherichia coli (E. coli, Gram-negative). Conclusions The results of acute toxicity showed no obvious toxicity in this test and in situ intestinal absorption study, suggesting that ZnGC complex could be used as a potential zinc supplement for zinc deficiency.

A water-soluble oligosaccharide termed EMOS-1a was prepared by enzymatic hydrolysis of polysaccharides purified from mulberries by column chromatography. The chemical structure of the purified fraction was investigated by ultraviolet spectroscopy, Fourier-transform infrared spectroscopy, and gas chromatography–mass spectrometry, which indicated that galactose was the main constituent of EMOS-1a. Chemical analyses showed that the uronic acid and sulfate content of EMOS-1a were 5.6% and 8.35%, respectively, while gel permeation chromatography showed that EMOS-1a had an average molecular weight of 987 Da. The antioxidant activities of EMOS-1a were next investigated, and EMOS-1a exhibited concentration-dependent 1,1-diphenyl-2-picrylhydrazyl radical scavenging activity, Trolox equivalent antioxidant capacity, and ferric reducing antioxidant power. The level of proliferation of Lactobacillus rhamnosus reached 1420 ± 16% when 4% (w/v) EMOS-1a was added, where the number of colonies in MRS (de Man, Rogosa, and Sharpe) medium with no added oligosaccharide was defined as 100% proliferation. These results indicate that the oligosaccharide EMOS-1a could be used as a natural antioxidant in prebiotic preparations.

This study aims to evaluate the antioxidative activities of water and alkaline solution pH=8, 50% ethanolic (APP1 or SAPP1), 75% ethanolic (APP2 or SAPP2) and 100% ethanolic (APP3 or SAPP3) extracts of A. auricular. The antioxidant activities, including the ABTS, superoxide anion radical-scavenging effect, hydrogen peroxide radical-scavenging effect and chelating ability on ferrous ions were studied in vitro. A comparison of the 50% effective concentration (EC50) values of different antioxidative reactions revealed that SAPP3 was more effective in scavenging ABTS, hydrogen peroxide and chelating ability on ferrous ions.SAPP2 showed a higher superoxide radical-scavenging activity. The alkali-soluble polysaccharides extracts showed higher radical-scavenging effect than water-soluble polysaccharides.

Seaweed oligosaccharides have attracted attention in food, agricultural, and medical applications recently. Compared to red and brown seaweeds, fewer studies have focused on the biological activity of green seaweed’s oligosaccharides. This study aimed to produce bioactive ulvan oligosaccharides via enzymatic hydrolysis from green seaweed Ulva lactuca. Ulvan, a water-soluble polysaccharide, was obtained by hot water extraction. Two isolated marine bacteria, Pseudomonas vesicularis MA103 and Aeromonas salmonicida MAEF108, were used to produce multiple hydrolases, such as ulvanolytic enzymes, amylase, cellulase, and xylanase, to degrade the ulvan extract. An ultrafiltration system was used to separate the enzymatic hydrolysate to acquire the ulvan oligosaccharides (UOS). The characteristics of the ulvan extract and the UOS were determined by yield, reducing sugar, uronic acid, sulfate group, and total phenols. The FT-IR spectrum indicated that the ulvan extract and the UOS presented the bands associated with O-H, C=O, C-O, and S=O stretching. Angiotensin I converting enzyme (ACE) inhibition and antioxidant activities in vitro were evaluated in the ulvan extract and the UOS. These results provide a practical approach to producing bioactive UOS by microbial enzymatic hydrolysis that can benefit the development of seaweed-based products at the industrial scale.
