The effect of chitosan coating containing antioxidant of bamboo leaves (AOB) on the shelf life extension of silver carp (Hypophthalmicthys molitrix) was evaluated at refrigerated temperature (4 ± 1°C). Microbiological changes (total viable count – TVC), physicochemical changes (water loss, pH, total volatile nitrogen – TVB-N, trimethylamine – TMA-N, and 2-thiobarbituric acid – TBA), and sensory changes were determined during chilled storage. The results indicated that the coating treatments could effectively retard the water loss, inhibit the growth of total viable counts, reduce chemical spoilage, which reflected itself in TVB-N, pH, TMA-N, and TBA, and increase the overall sensory quality of silver carp in comparison with the control sample. The study suggests that chitosan coating containing AOB can be a promising candidate for extending the shelf life of silver carp during chilled storage.

After being caught and filleted, fresh rice field eel fillets were impregnate with chitosan coating solutions, and then stored in modified atmosphere package (MAP) (60%CO2 + 40%N2) at 2 °C for up to 25 days to determine the chemical, biochemical and physical changes. Fillets were left untreated (CN), or were treated with chitosan coating (CC), or combined chitosan coating with MAP (CCM). Total plate count (TPC), trimethylamine (TMA-N), total volatile bases (TVB-N), pH, colour, water loss, colour changes and hardness were monitored periodically. The results indicated that coating and MAP treatments retard the decay of fish compared to untreated samples. CCM more efficiently inhibited the growth of TPC (2-2.6 Log reductions during Astorage) than did CN and CC. CCM treatments predominantly reduced chemical spoilage, reflected in TVB-N, pH, and TMA-N, retarded water loss and maintained colour and hardness.

The present study studied the effect of chitosan coating with antibrowning agents, including naphthylacetate and cinnamon oil, and modified atmosphere packaging (MAP) on browning of sweet persimmons stored at - 0.3 ~ 0 °C for 3 months. The browning on the surface of sweet persimmons was effectively inhibited by chitosan - based coating and MAP treatment. After 3 months’ storage, samples coated + MAP exerted the lowest browning index(BI), polyphenol oxidase (PPO) activity and malondialdehyde (MDA) content, which indicated that the coated + MAP treatment could offer an excellent inhibitory effect on the browning. Both edible coating and MAP treatment cause changes in respiration rate of sweet persimmons. This research could be valuable for the development of application to edible coating and MAP for improving the shelf - life properties of sweet persimmons.
