Mycotoxins contamination in animal feed is harmful to livestock and leads to residues, such as aflatoxin and its metabolites (aflatoxin M1, aflatoxicol, aflatoxin Q1 and aflatoxin P1) which are deposited in meat, milk, and eggs. The existence of mycotoxins has been widespread; and mycotoxin is the most important contaminant in the food chain because it has implications for human health. Mold growth and mycotoxin production mainly depend on the weather, such as warm temperatures (28-31°C) and high humidity (60-90%). Some types of mold can produce more than one type of mycotoxin and some mycotoxins can be produced by more than one species of fungi. Mycotoxins, especially aflatoxin, fumonisin, zearalenone, ochratoxin, deoxynivalenol, and T2 toxin present in feed and feedstuffs that have to be controlled. Mycotoxins are not only harmful to the health of consumers, but will also reduce the quality of the product that is contaminated, and cause economic losses. The risk of mycotoxin contamination in animal feed could be reduced by inhibiting the mould growth and toxin production, through crop rotation, using proper fungicides, and applying regulation of mycotoxins maximum limit in feed and food in order to prevent any danger to public health.

Cadmium (Cd) is a non-essential toxic heavy metal which is added to soil in phosphorous fertilizers and sewage sludge. Cd enters the human food chain via animals fed on crops from these soils, food of vegetable origin and smoking. In chronic exposure situations Cd accumulates in the liver and kidney of animals and man. Intake resulting in a Cd concentration of over 200μg/g wet weight in the kidney cortex results in kidney damage in humans (Friberg et al., 1974). With the prohibition of disposal of sewage sludge at sea in 1998, it is likely that more Cd will be deposited on soils. Current limits for Cd in animal feed are intended to prevent food from animal origin from exceeding legal Cd limits. This work examines the behaviour of Cd in the ovine body and models organ Cd from given intakes to investigate whether current limits in feed are safe and result in animal products fit for human consumption.

In temperate areas, the main limitation to the use of maize in the food chain is its contamination by B-series fumonisins (FBs) during cultivation. Since the content of this group of mycotoxins may be distributed unevenly after milling, the aim of this study was to compare the distribution of FBs in maize fractions derived from two industrial dry-milling processes, that is, a dry-degermination (DD) system and a tempering-degermination (TD) system. Grain cleaning reduces FBs by about 42%. The germ of the two degermination processes showed a similar FB content of kernel after cleaning. Conversely, an animal feed flour resulted in a FB content that was two times higher than whole grain before cleaning. A significant FB reduction was observed in the milling fractions in both processes, with a higher reduction in the TD system than in the DD one. The average decontamination respect to uncleaned kernels in the DD process was 50%, 83% and 87%, for maize flour, break meal and pearl meal, respectively, while it was 78%, 88% and 94% in the TD process for small, medium and flaking grits, respectively. Among the milling fractions, the flaking grits with the highest particle size resulted in the highest FB reduction.
