Metode pengawetan makanan dengan memodifikasi komposisi udara khususnya untuk kandungan oksigen dan karbondioksida  di ruang simpan atau disebut juga dengan Modified Atmosphere Packaging (MAS)  telah diterapkan untuk memperpanjang umur simpan dari buah-buhan dan sayuran. Modifikasi komposisi udara dalam ruang simpan MAS menggunakan injector tipe sparger dengan gas karbon dioksida. Kinerja sparger dinilai dari peningkatan jumlah kandungan gas oksigen dalam ruang simpan dan tingkat homogenitas di dalam sparger. Tujuan penelitian ini adalah melakukan pemilihan sparger berdasarkan variasi dimensi sudut keluar terhadap kinerja sparger dengan menggunakan simulasi ANSYS dan uji eksperimental. Lima varian sparger diuji tingkat homogenitas dan kadar oksigen yang terkandung dalam ruang simpan. Hasil simulasi dan eksperimetal untuk kelima sparger menunjukkan sparger varian 3 dengan material PVC dari gabungan dua reducer (diameter 44,4 mm dan 31,7 mm) dan dimensi sudut keluar 26,6° memiliki nilai Turbulance Kinetic Energy (TKE) rata-rata tertinggi yaitu 792,66 J/kg dan kadar oksigen dalam ruang simpan terendah yaitu  6,4%.  Model hubungan antara kadar gas karbon dioksida dengan oksigen dibuat dengan menerapkan metode least square menunjukkan tingkat signifikan sebesar 74,17%. Luaran dari penelitian ini adalah sparger varian 3 terpilih sebagai sparger yang akan digunakan dalam MAS karena mampu menurunkan kadar oksigen di bawah 10%.         Kata kunci: sparger, Turbulence Kinetic Energy (TKE), Modified Atmosphere Storage (MAS), least square

Background: Chickpea is an important pulse crop. The area, production and productivity of Kabuli chickpea are very low as compared to Desi type chickpea. While, worldwide chickpea production is predominated by Desi type (80%) compared to Kabuli type (20%). One of constraints limiting the Kabuli chickpea seed production is the fast seed deterioration process as, they possesses thin and fragile seed coat which makes it more susceptible to infestation of pulse beetle and storage fungi. In addition, the day by day increase in usage of chemical pesticides and increase in health awareness among the people and demand towards organic based products necessitate a new alternative method of seed storage than the routinely used storage methods. Modified atmosphere storage is an alternative method to avoid chemical fumigants, which are said to cause residual effect on seed material and development of resistance by storage pest against insecticides. Methods: The present investigation on modified atmosphere packaging (MAP) was carried out at the Department of Processing and Food Engineering, College of Agricultural Engineering, University of Agricultural Sciences, Raichur during March 2017. Further, its storage and seed quality assessment were conducted at Seed Quality and Research Laboratory of National Seed Project (Crops), Seed Unit, University of Agricultural Sciences, Dharwad during March 2017 to May 2018. Result: The results revealed that the Kabuli chickpea seeds stored in the gaseous atmosphere with the combination of CO2 (80%) + N2 (20%) + O2 (0%) [C2] have maintained the maximum germination (92%) followed by Vaccum Packaging [C5] by using 700 gauge polyethylene bag for 14 months under ambient conditions above the Indian Minimum Seed Certification Standards.

Healthy life style based on natural food consumption, has been implemented by the society to increase health quality. Minimally processed technology is used to slow down food decay time in the storage room. Minimally processed techology is consist of Controlled Atmosphere Storage (CAS), Modified Atmosphere Storage (MAS), Freeze Driying, and blansir. MAS is food storage technology by conditioning the air composition (especially oxygen level). Banana is an object of MAS implementation, due to its all session fruit and shorter life time. Previous MAS studies used long bean as the object and managed to improve the life time until 15 days.The purpose of this study is to implement MAS to lengthen banana life time. MAS design use Ulrich Eppinger method. Simulation of Turbulance Kinetic Energy (TKE) in the sparger and MAS installation use ANSYS 16.2. The experimental to test sparger and installation is conducted for 6 hours for the sparger and 24 hours for the installation. Afterward the correlation between parameter is calculated by using least square method. The outcome of this  research is MAS for banana in order to be used by SME with capacity of 4.77 m3, mixture time is 24 hours, TKE number in the sparger is 582.6448 J/kg, TKE number in the installation is 715.6 J/kg, oxygen level in the sparger is 5.7%, oxygen level in MAS installation is 8.5%, glucose of banana located in the storage room is 9.5%, and banana life time able to achiave 14 days.

Modified atmosphere packaging and storage of black pepper (var. Panniyur I) and turmeric (var. Prathiba) were studied for a period of 16 months under ambient storage conditions. Whole dry samples of black pepper and turmeric were packaged in three layered metalized polyester covers (12 μ polyester + 12 μ metalized polyester + 80 μ LDPE) under three modified storage atmospheres viz. 100% vacuum, 100% N2, 90% N2 + 10% CO2 and the control samples were stored in small size jute gunny bags. Results indicated that maximum retention of quality in terms of its essential oil and oleoresin contents of black pepper and turmeric was obtained when stored under nitrogen packaging (100% N2), followed by vacuum packaged (100% vacuum) and modified atmosphere storage of 90% N2 + 10% CO2. The essential oil content of stored black pepper reduced from 2.42% to 2.22% (dry weight basis, dwb) in all the three modified atmosphere storage with a loss of 8.26% while control recorded a loss of 16.53% during storage. The oleoresin content decreased from 7.79% to 7.44%, 7.38% and 7.32% in case of black pepper stored in 100% N2 packaged, 100% vacuum packaged and 90% N2 + 10% CO2 packaged storage atmospheres. The quality loss for turmeric in terms of essential oil, oleoresin and curcumin content at the end of storage, when packaged in 100% N2 atmosphere were 36.60%, 16.12% and 9.48%, respectively while the corresponding reduction in control samples were 40.49%, 20.27% and 19.39%.
