Agriculture has traditionally an important role in Hungarian economy and rural development. About 75 % of Hungary’s total territoryis under agricultural land use. Because of ecological conditions and production traditions cereals (wheat, maize etc) have the greatestimportance in Hungarian crop production. In the 1980’s the country-average yields of wheat were about 5,0-5,5 t ha-1 („industrial-like”crop production-model). In the 1990’s the yields of wheat dropped to 4,0 t ha-1 because of low input-using and wide application of the issuesof environmental protection and sustainability. Winter wheat production for quality has a decisive role in certain regions of Hungary(eastern and middle-parts).The quality of wheat is complex and different. Three major growing factor groups determine the quality of winter wheat: genotype,agroecological conditions and agrotechnical factors. In wheat production for quality the selection of the variety is the most importantelement. Our long-term experiments proved that the quality traits of a variety means the highest (maximum) limit of quality which could notbe exceeded in fact. During the vegetation period of wheat the different ecological and agrotechnical factors could help or on the contrarycould demage the quality parameters of wheat.The agrotechnical factors determining the baking quality of wheat can be divided into two groups: the first group means the factors withdirect effects on quality (fertilization, irrigation, harvest); the second group contains the elements with indirect effects on quality (croprotation, tillage, planting, crop protection).Appropriate fertilization could help to manifest the maximum of quality parameters of a wheat genotype and could reduce the qualityfluctuationin unfavourable ecological and agrotechnical conditions.

In sustainable (wheat) production plant nutrition supply and fertilization play decisive roles among the agrotechnical elements, because of their direct and indirect effects on other agronomical factors.In long-term experiments, we studied the roles of agroecological, genetic-biological and agrotechnical factors in the nutrient supply, fertilization and its efficiency in wheat production under continental climatic conditions (eastern part of Hungary, Trans-Tisza) on chernozem soil. Our results have proved that there are different (positive and negative) interactions among ecological, biological, and agrotechnical elements of wheat production. These interaction effects could modify the nutrient demand, fertilizer (mainly nitrogen) response of wheat varieties and efficiency of fertilization in wheat production.The optimum N-doses (+PK) of wheat varieties varied from 60 kg ha-1 (+PK) to 120 kg ha-1 (+PK) depending on cropyears, agrotechnical elements and genotypes. The winter wheat varieties could be classified into 4 groups according to their fertilizer demand, natural and fertilizer utilization, fertilizer response and yield capacity.Appropriate fertilization (mainly N) of wheat could affect both the quantity and quality of the yield. By using optimum N (+PK) fertilizer doses, we could manifest genetically- coded baking quality traits of winter wheat varieties and reduce quality fluctuation caused by ecological and other management factors. The efficiency of fertilization on different baking quality parameters (wet-gluten, valorigraph index etc) were variety specific (the changes depended on genotypes).Our long-term experiments proved that appropriate fertilization provides optimum yield, good yield stability and excellent yield quality in sustainable wheat production. We could this get better agronomic and economic fertilization efficiency with less harmful environmental effects.

The aim of our work was to assess the possibility of detecting the changes in the baking quality of winter wheat with different levels of Fusarium spp. contamination using a new rheological system Mixolab, and to determine the correlations between the Mixolab characteristics and other quality parameters of wheat flour and grain. The standard technological characteristics (crude protein, Zeleny sedimentation index, wet gluten, falling number), loaf volume, shape features of bread (height and diameter), Mixolab parameters, and mycotoxin deoxynivalenol (DON) content were determined in 3 winter wheat cultivars (Akteur – quality group E – elite; Eurofit – quality group A; Meritto – quality group B) with different levels of Fusarium spp. contamination (8 variants) in two years. Increasing intensity of Fusarium spp. contamination evidently worsened the rheological quality and its negative effects on protein and mainly on the starch part of the grain was obvious in Mixolab curves. High correlations were found between Mixolab characteristics and standard technological parameters, as well as between Mixolab parameters and the main baking criterion – loaf volume.

We studied the different mineral fertilizer rates effect on the baking quality of five different winter wheat genotypes (GK Öthalom, Lupus, KG Széphalom, GK Békés, Mv Mazurka) on chernozom soil in 2008.The bigger fertilizer doses increased the wet gluten content, gluten elasticity and the protein content. The high doses of fertilization has got a moderate effect on the valorigaph value, water absorption, and falling number. The optimum level of the fertilizer doses were the N90-120+PK.The Pearson’s correlation analysis proved strong relationships between the fertilization and gluten content, the quality of the gluten, a valorigraph value, and the protein content. The analysis verified a strong correlation between genotype and falling number, and the protein content.The variety Mv Mazurka has got the best baking quality parameters.

No real improvement in the technological quality of beet has been recorded over the last 15 years in Northern Italy. Among the possible explanations for the quality stagnation is that the traditional formulae cannot correctly differentiate between sugarbeet varieties which produce thick juice of very high purity. This seems to be connected with the role of potassium. The use of a standard purification procedure gives reliable and accurate data which is immediately comparable with the factory data. Research projects on medium/long term storage are currently being performed by Co.Pro.B., Italy, in cooperation with Syngenta and Beta. Up to now the results have shown that storage of sugarbeet in autumn time in northern Italy is possible provided that suitable varieties and proper handling of the roots are employed. Results obtained in the storage trials are reported. Correlations have been found between quality parameters (purity, color and lime salts) of the purified juice with the glucose content of the raw juice. An interesting correlation is reported between purified juice purity and raw juice purity.

The study presents the effects of fertilisation on selected quality parameters of the dried material obtained from plants of lovage and coriander. During the crop production process, the plants were treated with two fertilisers containing substances potentially acting as elicitors. The dried material was obtained in course of a drying process carried out in optimum conditions and based on the CD-VMFD method which combines convective pre-drying (CD) at a low temperature (40 °C) with vacuum-microwave finish drying with the use of 240 W microwaves (VMFD). The quality of the dried material was evaluated through measurement of the total contents of polyphenols, total antioxidant potential (ABTS and DPPH method), and the profile of volatile compounds (headspace-solid phase microextractio-HS-SPME) as well as assessment of the colour. It was found that by applying first fertilisation (with organic components) it is possible to significantly increase the contents of both bioactive compounds and volatile substances responsible for the aroma. It was determined that the higher content of bioactive compounds was related to the composition of the first fertiliser, presumably the extract from common nettle. The study showed that the application of the first fertiliser contributed to enhanced quality parameters of the raw material obtained.

Agri-environmental indicators such as nutrient balance may play a key role in soil and water quality monitoring, although short-term experiments might be unable to capture the sustainability of cropping systems. Therefore, the objectives of this study are: (i) to evaluate the reliability of long-term experimental N and P balance estimates to predict real field (RF) (i.e., short-term transitory) conditions; and (ii) to compare the sustainability of short- and long-term experiments. The LTE-based predictions showed that crops are generally over-fertilised in RF conditions, particularly maize. Nutrient balance predictions based on the LTE data tended to be more optimistic than those observed under RF conditions, which are often characterised by lower outputs; in particular, 13, 44, and 47% lower yields were observed for winter wheat, maize, and soybean, respectively, under organic management. The graphical evaluation of N and P use efficiency demonstrated the benefit of adopting crop rotation practices and the risk of nutrient loss when liquid organic fertiliser was applied on a long-term basis. In conclusion, LTE predictions may depend upon specific RF conditions, representing potential N and P use efficiencies that, in RF, may be reduced by crop yield-limiting factors and the specific implemented crop sequence.
