The objectives of this study were to produce complementary foods from locally available, underutilized and inexpensive food materials (breadfruit and soybean), to assess their nutrients value and evaluate their sensory acceptability. Breadfruit and soybean flours were mixed in ratios 100:0, 90:10, 80:20, 70:30 and 60:40 (w/w) respectively. Proximate and mineral compositions of the blends were determined using standard analytical methods; energy value was estimated using the Atwater factor. The blends were prepared for sensory evaluation by cooking with the addition of vegetable oil and sucrose and then subjected to sensory evaluation using a commercial complementary food as control. The crude protein, crude fat, ash and crude fiber contents increased significantly with increased inclusion of soybean flour from 5.36 to 22.02 g/100 g, 1.03 to 6.03 g/100 g, 1.06 to 2.55 g/100 g and 4.77 to 5.86 g/100 g respectively while carbohydrate content reduced from 81.81 to 55.24 g/100 g. The energy value ranged from 357.97 to 363.31 kcal/100 g. The samples contained 66.74 - 76.50 mg/100 g sodium, 687.43 – 725.65 mg/100 g potassium, 64.00 – 103.04 mg/100 g calcium, 145.76 – 242.51 mg/100 g phosphorus, 4.80 – 9.98 mg/100 g iron and 3.18 – 4.61 mg/100 g zinc. The result of the sensory evaluation showed that 70:30 complementary food was the most preferred and acceptable in terms of all the sensory attributes evaluated and it compared favourably with the control. This sample also showed a promising capacity to meet the Recommended Dietary Allowances (RDAs) of protein, carbohydrate, potassium, phosphorus, iron and zinc for infants (7 -12 months). This study has shown that complementary food produced from breadfruit and soybean flour has appreciable nutritional density in terms of proximate and mineral compositions and could be used as a substitute for expensive commercial complementary foods especially among families with low income in Nigeria and other developing countries of the world.

The present study was conducted to evaluate the effect of physicochemical and phytonutients qualities of aloevera gel fortified yoghurt. Three different concentration of yoghurt were developed with 10, 15 and 20 percent of aloevera gel addition. Based on sensory evaluation,the sample AY2 has scored higher in the overall acceptance among the samples. On the other hand, the pH and titratable acidity were found to be inversely proportional to the concentration of alovera gel addition in yoghurt. In theresults offat content that all the experimental samples were shown gradual decreasing effect when compared with the control sample. As per the result of protein, Vitamin C and minerals of experimental samples have foundconstant effect when compared to control sample.The content of fiber was absent in control whereas in the aloevera gel concentrated samples AY1, AY2 and AY3 contains 0.19, 0.23 and 0.26 respectively. On the qualities of phytonutrients of steroids, saponins, phlabotannin and anthroquinone were founde in all the samples except control.

This study was conducted on five kinds of local soybean seeds (Ibaa, Hawija, Taqa.2, Lee74 and Hassan). The chemical analysis results showed that Hawija soybean has the highest percent of protein which was 38-08%, The amino acid percent was also higher than the other kinds(lysine, Thereonine and Tryptopham), and being 389,250,81 mg/gm nitrogen respectively Both amino acids were important for child nutrition. Hawija was selected, being the best for proteins and basic amino acids, and was utilized in preparation of the adjunct baby food formula. Eighteen formulas had been prepared by using soybean flour kind(Hawija), wheat flour kind (Abu gharib) and full fat powder milk (NIDO). Each formula contained 20% protein as recommended by F.A.O, W.H.O and Iraqi standard. The chemical analysis results showed that formulas had low moisture content(3.18-3.60%) and high carbohydrate content (59.10-60.12%), The protein and fat content was 19.23-20.81 and 14-4.35% respectively. The content of ash of the formulas were(2.50-3.23%),the calorie value was 430.17-432.42 K.cal /100 gm sample.the sensory evaluation showed that, the formulas with high contain in whole cream powder of milk or wheat flour, obtained higher sensory evaluation grades.

Background: Protein deficiency and micronutrient deficiencies lead to growth problems, mental and physical development. To tackle these deficiencies issue, fortification is the best tool which improves public health and best suited for present lifestyle. So, aim of this research paper is to develop soy and water chestnut flour fortified cookies and to examined influence of soy and water chestnut flour on physical, chemical and sensory properties of cookies.Methods: To develop cookies with improved nutrition, flat cookies were prepared using soy and water chestnut flour blends replacing wheat flour at different proportions i.e. 20%, 25%, 30%, 35% and 40%. Physical, chemical and sensory evaluation was done to analyze the acceptability of cookies. Cookies were prepared with these blends and analyzed for physical properties such as diameter, thickness and spread ratio. To study the nutritional improvement in fortified cookies, chemical analysis was performed for protein content, fat content, ash and moisture values. Furthermore, sensory evaluation was done for crispiness, taste, colour and overall acceptability.Result: In this research work, it was found that increasing percentage of soy and water chestnut blends in wheat flour, improved the nutritional quality. Cookies baked with soy and water chestnut flour blends were higher in protein and micro nutrients. Cookies prepared with 30% blend of soy and water chestnut flour were observed the most acceptable with improved nutritional quality and better taste.

<p><em>Functional properties of sausage rolls made from cocoyam and wheat flour enriched with soybean flour was studied. Cocoyam cormels and soybean were processed into flour, which were later used to formulate composite flour blends, with wheat flour in the ratio of: 90:10:0 (control 1), 80:10:10, 70:10:20, 60:10:40, 50:10:30, respectively, while 0:10:90 served as control 2. The result of the functional properties showed variation in behavior. There were no significant difference (p?0.05) in pH, bulk density, swelling index, foam capacity and emulsion capacity of the flour samples while significant difference (p?0.05) existed in water absorption capacity, oil absorption capacity and wettability.</em></p>
