Aim of study: The effects of hunting season (autumn vs. winter) on carcass characteristics and meat quality of Iberian wild red deer were assessed.Area of study: A total of 100 males of wild red deer of Iberian genetic line (Cervus elaphus) were hunted on Ciudad Real (south central Spain).Material and methods: Yields for shoulder (with bone), neck, backbone, loin, tenderloin, leg (with bone), short plate and flank were determined. In addition, samples of Longissimus thoracis et lumborum and Rectus abdominis muscles were collected. Then, pH48, colour measurements, chemical composition, cooking loss, Warner Bratzler shear blade, fatty acid and amino acid profiles and mineral content were analyzed.Main results: Deer hunted in autumn (n=50) had higher (p<0.01) yields of shoulder, backbone and short plate and higher contents of intramuscular fat (IMF), cholesterol and K, Fe and Mn but lower (p<0.001) pH48 and Na, Mg, Zn and Cu contents than deer hunted in winter (n=50). Shear force tended (p=0.05) to be lower for meat collected in autumn than for meat collected in winter. However, loin yield was 59.2% higher (p<0.001) for winter than for autumn carcasses. Deer hunted in winter had higher α-linoleic acid (p<0.05) and long chain n-3 polyunsaturated (p<0.001) percentages than deer hunted in autumn.Research highlights: Autumn hunting is recommended to obtain carcasses with higher yields of shoulder, backbone and short plate and meat with higher IMF. Conversely, winter hunting is advisable for higher loin yield and for a profile richer in polyunsaturated fatty acids.

The aim of this study was to investigate the prevalence of lungworms and gastrointestinal parasites in wild roe deer (Capreolus capreolus L.) and red deer (Cervus elaphus L.) from Strzałowo Forest Inspectorate (Puszcza Piska) in different study periods and in animals of different ages. Fecal samples were collected during autumn and winter hunting (2011-2013). A total of 173 fecal samples were analyzed by coproscopic techniques: 47 from roe deer and 126 from red deer. First-stage larvae (L1) of pulmonary nematodes were found in 4 samples from roe deer and in 86 samples from red deer. The prevalence of the Eimeria genus was 19.2 % in roe deer and 25.4 % in red deer. The prevalence of the Moniezia genus in red deer was 1.6 %, whereas no Moniezia eggs were found in roe deer. No fluke eggs were detected in either red deer or roe deer. The prevalence of gastrointestinal parasites was 53.2 % in roe deer and 58.7 % in red deer. Coinvasion by endoparasites was detected in 69.8 % of red deer and in 57.4 % of roe deer. There were no significant differences between the prevalence of parasites in wild deer (Cervidae) in different study periods. This may suggest that the prevalence of endoparasites among roe deer and red deer in Strzałowo Forest Inspectorate remains stable.]

Abstract. Red deer (Cervus elaphus) hinds (n=3×10) of identical initial body weight (BW, ca. 68 kg) were reared on a monocotyledonous grass (G group), on a grass–papilionaceous (GP group) or on pure papilionaceous pasture each of 2 ha (P group) for 219 d. At the end of the experiment carcass tissue composition was assessed by means of computer tomography, slaughter value and meat quality were characterized and tissue – longissimus thoracis et lumborum (LTL), thigh and liver – samples were taken for fatty acid composition analysis. The primary aim was to assess nutrition-driven differences. Hinds of group P provided higher final BW (101 kg vs. 90 and 91.9 kg in groups G and GP, respectively) and higher BW gain (32.6 kg during the total period vs. 22.4 and 22.1 kg). The carcass weight exceeded those of the other groups significantly (68.8 kg vs. 59.3 and 63.2 kg), while there was no difference among groups in the perirenal fat weight and red color tone (a*) of the LTL. Groups G and P differed significantly in the LTL weight (highest in P), its dripping loss (lowest in G), lightness (L; highest in P) and yellow color tone (b*). In the thigh muscle, LTL and liver the highest proportion of fatty acid CLA9c11t was reached on the G pasture, and the same trend was true for docosahexaenoic acid (DHA , C22:6 n3) in the muscles. The n6 ∕ n3 fatty acid ratio was the highest on the P pasture in the liver and both muscles. The liver incorporated the highest proportion of linoleic acid (C18:2 n6) and converted it rather effectively to arachidonic acid (C20:4 n6), coupled with the lowest α-linolenic acid presence. In conclusion, concerning muscle mass production, group P proved to be the most advantageous pasture; meanwhile LTL meat quality factors (dripping loss, DHA proportion, pH, color) were more favorable on the G pasture.

During the nineteenth century, scientific literature and official reports recorded the occurrence of a population of red deer, Cervus elaphus, on the island of Lampedusa (Pelagian Archipelago, Italy). Osteological specimens collected by the zoologist Enrico Hillier Giglioli towards the end of the century confirmed these references. Since cervids are not found among the fossil fauna of the island, the red deer must have been introduced by man although we do not yet know precisely when. The former existence of the species on Lampedusa is discussed by comparison of literary material and bone evidence. The population's probable origins and its taxonomic relationships with other Mediterranean red deer populations are also analysed.

The role of interferon in early pregnancy in red deer was investigated by (a) measuring production of interferon by the conceptus, (b) testing the anti-luteolytic effect of recombinant interferon-tau in non-pregnant hinds, and (c) treatment of hinds with interferon after asynchronous embryo transfer. Blastocysts were collected from 34 hinds by uterine flushing 14 (n = 2), 16 (n = 2), 18 (n = 8), 20 (n = 13) or 22 (n = 9) days after synchronization of oestrus with progesterone withdrawal. Interferon anti-viral activity was detectable in uterine flushings from day 16 to day 22, and increased with duration of gestation (P < 0.01) and developmental stage (P < 0.01). When interferon-tau was administered daily between day 14 and day 20 to non-pregnant hinds to mimic natural blastocyst production, luteolysis was delayed by a dose of 0.2 mg day(-1) (27.3 +/- 1.3 days after synchronization, n = 4 versus 21 +/- 0 days in control hinds, n = 3; P < 0.05). Interferon-tau was administered to hinds after asynchronous embryo transfer to determine whether it protects the conceptus against early pregnancy loss. Embryos (n = 24) collected on day 6 from naturally mated, superovulated donors (n = 15) were transferred into synchronized recipients on day 10 or day 11. Interferon-tau treatment (0.2 mg daily from day 14 to 20) increased calving rate from 0 to 64% in all recipients (0/11 versus 7/11, P < 0.005), and from 0 to 67% in day 10 recipients (0/8 versus 6/9, P < 0.01). The increased success rate of asynchronous embryo transfer after interferon-tau treatment in cervids may be of benefit where mismatched embryo-maternal signalling leads to failure in the establishment of pregnancy.
