Large increases in the number of cases of human food-poisoning caused by salmonella have occurred in several countries in recent years. In England and Wales the annual number of bacteriologically confirmed cases rose from 10665 in 1981 to 30112 in 1990 and it is generally accepted that these figures are underestimates. The reasons for the unprecedented increase are largely unknown but may include increases in the consumption of convenience foods, poultry, and poultry products, together with a dramatic increase inSalmonella enteritidisinfections in poultry.S. enteritidisandS. typhimuriumare now the predominant serotypes both in human disease and in poultry.

The association of salmonella infections with the consumption of poultry products and the fact that in the live bird the Salmonella carriage is mainly asyptomatic have led to a demand for finding ways of preventing infection of commercially reared poultry and product contamination (Revolledo et al., 2006). One approach is the use of probiotics. The probiotic properties of lactic acid bacteria have been widely studied. Their capacity for adhesion to mucus, ability to autoaggregate and potential for coaggregation with pathogenic bacteria are potential mechanisms for providing a competitive advantage in the intestinal microbiota (Ghadban et al, 2002) and forming a barrier that prevents colonization of pathogenic microorganisms (Kos et al, 2003). In this study, a total of 53 lactic acid bacteria (LAB) were isolated from the contents of the crop, caecum and small intestine, and from the mucosa of the crop, jejunum and ileum of three organically farmed chickens, were examined for autoaggregation and coaggregation with Salmonella enteritidis.

The Salmonella Enterica subsp. Enterica serovar Enteritidis is one of main serovars isolated from human patients with food poisoning and poultry without clinical signs. Consumption of poultry products contaminated with Salmonella Enteritidis is a common source of human salmonellosis; 82 Salmonella spp. were isolated from 291 samples of retail chicken meat, 201 one-day-old chicks, 30 internal organs of chickens, 156 chicken eggs, 100 duck eggs, 38 straw bedding samples, 18 samples of retail duck meat, and 19 swab samples from slaughterhouses in 2019 and 2020. An antibiotic susceptibility test was performed for all isolates, revealing 33 multidrug-resistant (MDR) strains. The whole genome of 33 MDR strains isolated in 2019 and 2020 and 10 strains isolated in 2011, 2012, and 2017 was sequenced using the MinION sequencing protocol. Within these 43 samples, 5 serovars were identified: S. Enteritidis, S. Agona, S. Virchow, S. Albany, and S. Bareilly. The most common serovar was S. Enteritidis (26/43), which showed the highest resistance to ampicillin (100%), followed by nalidixic acid (90%) and colistin (83%). Core genome multilocus sequence typing analysis showed that the S. Enteritidis strains isolated from different sources and in different years were clustered together. In addition, the S. Enteritidis strains isolated since 2011 consistently harbored the same antibiotic resistance patterns.

272 isolates of Salmonella Enteritidis (111 isolated from frozen broiler chicken carcasses, 126 from human food and other biological materials involved in food poisoning outbreaks and 35 from different poultry materials) were selected for phage typing. From these, 111 were phage typed, 57.65% being classified as phage type 4, 32.43% as phage type 4a, 3.60% as phage type 6a and 0.90% as phage type 7, whereas 5.40% samples were not phage typeable. The predominance of phage type 4 is in agreement with the results published worldwide, and reinforces the need for studies related to the epidemiological meaning of these findings.

Following the recently published report from England and Wales [1], we report a 60% reduction of Salmonella Enteritidis infections in Luxembourg in 2005 compared with the average annual number of cases in the period 2000-2004
