The level of pathogens in poultry litter used for raising broiler chickens is critical to the overall health of a broiler chicken flock and food safety. Therefore, it is imperative that methods used for determining bacterial concentration in litter are accurate and reproducible across studies. In this perspective, we discuss the shortcomings associated with current methods used for bacterial quantification and detection from litter and assess the efficacy of one method for pathogen and commensal (Campylobacter, Salmonella, Escherichia coli, and Enterococcus spp.) recovery. The limit of quantitation and detection for this method differed between pathogens, and the recovery rate (∼138–208%) was higher for Salmonella, E. coli, and Enterococcus compared to Campylobacter (24%). Our results suggest that pathogen recovery from litter is highly variable and pathogen concentrations need to be reported in dry weight before comparisons can be made between studies.

Abstract The best known broiler chicken meat product in urban communities is Kentucky Fried Chicken (KFC). Seeing the business opportunity, entrepreneurs in Kendari City tried to make fried chicken similar to KFC products by labeling Kendari Fried Chicken (Kendari-FC) at a relatively affordable price of Rp 8.000 per piece compared to the KFC price of Rp 15.000 per piece. This study aims to analyze the marketing prospects of Kendari-FC entrepreneurs in Kendari City. The location of the research was determined purposively with the respondents of the study being kendari-FC entrepreneurs in kendari city who were determined by census. The results showed that the income of Kendari-FC entrepreneurs in Kendari City averaged Rp 5.066.458 per month or Rp 168.882 per day with an average income of Rp 36.276 per head. Kendari-FC's marketing prospects have the potential to be developed especially in West Kendari District because the average revenue from sales of each tail is Rp 48.105.40 per head. Melihat peluang bisnis tersebut wirausahawan di Kota Kendari berupaya membuat ayam goreng yang mirip produk KFC dengan memberi label Kendari Fried Chicken (Kendari-FC) dengan harga relatif terjangkau yaitu Rp 8.000 per potong dibandingkan harga KFC Rp 15.000 per potong. Prospek pemasaran Kendari-FC berpotensi dikembangkan terutama di Kecamatan Kendari Barat karena rata-rata pendapatan dari hasil penjualan setiap ekor sebesar Rp 48.105.40. Abstract This study aims to determine the effect of the microbiological quality of broiler chicken meat that is marinated using pineapple extracts with different storage times at refrigerator temperature (180C). The stages of this research consisted of 2 stages, namely the first stage of making pineapple extract from fresh pineapples and the second stage was the marination process in which the broiler chicken meat samples were marinated using pineapple extract with a concentration of 30%. The experimental design used in this study was a completely randomized design (CRD) with one treatment factor (0 days, 3 days, 6 days, 9 days and 12 days) with each treatment repeated 4 times, in order to obtain 5 x experimental units. 4 = 20 experimental units. The microbiological analysis observed was the inhibition zone analysis and Total Plate Count (TPC). Giving marination with pineapple extract to the storage time of chicken meat has a significant effect on the inhibition zone. The highest zone of inhibition was 3.23 mm (for 6 days) while the lowest zone of inhibition was 2.21 mm (for 0 days). Provision of pineapple extract marination on the storage time of broiler chicken has a significant effect on the TPC. The highest TPC was 2.29 (for 12 days) while the lowest TPC was 0.30 (for 0 days). Keywords: Broiler chicken; Marination; Microbiological quality; Pineapple extract.   Abstrak Penelitian ini bertujuan untuk mengetahui pengaruh kualitas mikrobiologi daging ayam broiler yang dimarinasi menggunakan ekstrak buah nenas dengan lama penyimpanan yang berbeda pada suhu refrigerator (180C). Tahapan penelitian ini terdiri dari 2 tahapan yaitu tahap pertama pembuatan ekstrak buah nenas yang berasal dari buah nenas segar dan tahap kedua adalah proses marinasi dimana sampel daging ayam broiler dimarinasi dengan menggunakan ekstrak buah nenas dengan konsentrasi 30%. Rancangan percobaan yang digunakan dalam penelitian ini adalah Rancangan Acak Lengkap (RAL) dengan satu faktor perlakuan (0 hari, 3 hari, 6 hari, 9 hari dan 12 hari) dengan masing-masing perlakuan diulang sebanyak 4 kali, sehingga diperoleh unit percobaan 5 x 4 = 20 unit percobaan. Analisis mikrobiologi yang diamati adalah analisis zona hambat dan Total Plate Count (TPC). Pemberian marinasi dengan ektrak buah nenas terhadap lama penyimpanan daging ayam berpengaruh nyata terhadap zona hambat. Zona hambat tertinggi 3,23 mm (selama 6 hari) sedangkan zona hambat terendah 2,21 mm (selama 0 hari). Pemberian marinasi ekstrak buah nenas terhadap lama penyimpanan daging ayam broiler berpengaruh nyata terhadap TPC. TPC tertinggi 2,29 (selama 12 hari) sedangkan TPC terendah 0,30 (selama 0 hari). One of the comestibles that have high nutritional value and are easy to obtain is chicken. The higher demand for chicken must be accompanied by an increase in production. It is important for the breeder of broiler chicken to choose high quality Day Old Chick (DOC) from the broiler breeder which also has high quality and productivity. The type of broiler breeder that is grown in PT. Karya Indah Pertiwi is Ross 308. Observations were made when the chickens were 18th to 21st weeks old in 6 henneries totaling about 10,000 chickens. The performance of broiler breeder observed were feed consumption, bodyweight gain, feed conversion ratio, and uniformity. Feed consumption of broiler breeder at 18th to 21st week was 659.4 g/chicken, 700,583 g/chicken, 742,116 g/chicken, 767.2 g/chicken. Bodyweight gain at 18th to 21st week was 143.51 g/chicken, 193.3 g/chicken, 63.43 g/chicken, 167.96 g/chicken. Feed conversion ratio at 18th to 21st week was 4.5, 3.6, 11.6, 4.5. The uniformity at 18th to 21st week was 77%, 81%, 81%, 81%. In conclusion, the value of feed consumption for broiler breeder at PT. Karya Indah Pertiwi was increasing every week. Bodyweight gain at 20th week was lower than 18th, 19th, and 21st week. The value of feed conversion ratio at 20th week was higher than at 18th, 19th, and 21st week. Chicken uniformity value at 18th week was not good it was at 77%, while at the 19th, 20th, and 21st week it was quite good at 81%.

Background: In ovo supplementation of nutrients either amino acids or minerals in broiler chicken has been common more often individually or few nutrients with positive results. In view of the above, in ovo supplementation with combination of amino acids and minerals as a complete nutrient capsule for the gut and immune system development was tested for hatchability since the modern commercial broilers are very fragile to any changes in the internal environment. Methods: Four trials were conducted to study the response of in ovo supplementation of combinations of Lys, Met, Arg, Thr, Glu, Zn, Se and Cu on hatchability of broiler eggs. In trial I, the fertile eggs on day 18 were divided into five groups of 32 eggs in each group. Group I served as control without any amino acids and mineral supplementation. Group II, III, IV and V supplemented with Lys, Met, Arg, Thr, Glu, Zn, Se and Cu @ 2.2, 1, 2.5, 1.6, 2.5 mg, 80, 0.3, 16 µg; 4.4, 2, 5, 3.2, 5 mg, 80, 0.3, 16 µg; 11, 5, 12.5, 8, 12.5 mg, 80, 0.3, 16 µg and 22, 10, 25, 16, 25 mg, 80, 0.3, 18 µg respectively. In trial II, seventy fertile eggs were divided into seven groups, Group I served as control. Group II, III, IV, V, VI and VII were supplemented with graded levels (1x to 6x) of amino acids. The 1x consisted of Lys, Met, Arg, Thr and Glu @ 2.2, 1, 2.5, 1.6 and 2.5 mg, respectively. On day 18, 10 eggs per group were supplemented with graded levels of AA combination into the amniotic fluid. In trail III and IV it was similar to trial II but was without Lys and Met, respectively. Result: Results indicated that hatchability (Trial 1) in Group V, IV, III, II and I were 0, 18, 21.8, 71 and 90.6%, respectively. The Combination of five amino acids (Trial II) (Lys, Met, Thr, Arg, Glu) for in ovo supplementation reduced the hatchability, whereas, combination of four amino acids (Trial III) (Met, Thr, Arg, Glu) without Lys at lower doses resulted in good hatchability (86.6%). In ovo supplementation of amino acid or mineral-amino acid combinations in commercial broiler eggs should be restricted to few amino acids.

During the Covid-19 pandemic, the government issued a policy through Large-Scale Social Restrictions and the impact was felt on the unsustainable availability of various food commodities, one of which was broiler chicken meat. Broiler chicken is one of the animal protein food products that is favored by people from various circles because it has a relatively cheaper price compared to other meat commodities that provide animal protein, is easy to obtain, and has good organoleptic quality. The purchasing power of the people of the Special Region of Yogyakarta (DIY) is also increasing due to increased nutritional awareness related to the fulfillment of animal protein. The broiler production process contains uncertainty because it is seasonal. This causes a fluctuating price change. Fluctuations in broiler prices are not a new phenomenon in the DIY. Price fluctuations usually occur at certain times such as during religious holidays and this phenomenon occurs repeatedly every year. So we need a broiler supply chain research to maintain price stability using a dynamic simulation system model of the broiler chicken supply chain in DIY. This study develops a Causal Loop Diagram (CLD) and Stock and Flow Diagram (SFD) of system dynamic model of the broiler supply chain in the DIY and simulates the model using Powersim Studio 10 software. The simulation is confirmed verified and valid, therefore for the next research model can be used to solve the problem by generating policy scenario.

Aspergillus flavus contamination of agriculture in Indonesia can cause problems to animal health and productivity. Some factors can support the appearance of contamination in feed, especially temperature and humidity. The main objective of this research was to investigate potency of Rhizopus spp. on inhibit A. flavus FNCC6109 in broiler chicken concentrate feed. The experiments were conducted dual culture method and the inhibition test of the Rhizopus spp. filtrate culture was incubated for 3, 4 and 5 days on in vitro. The in vivo test was directly applied in broiler chicken concentrate feed which added Rhizopus spp. filtrate culture concentration at 10% (v/v), 20% (v/v), 30% (v/v), 40% (v/v), dan 50% (v/v). The results showed that the Rhizopus spp. filtrate culture significantly (P?0,05) to inhibit the growth of A. flavus FNCC6109 both in vitro and in vivo. The percentage inhibition of Rhizopus spp. filtrate culture incubated for 5 days showed 67,47±2,10% relatively better results than 3 and 4 days, and therefore was used in the in vivo. Application of 50% (v/v) Rhizopus spp. filtrate culture to the broiler chicken concentrate feed significantly reduced 82% population of A. flavus FNCC6109 after 15 days incubated relative to that of negative control (concentrate feed without addition Rhizopus spp. filtrate culture and A. flavus FNCC6109).

The experiment was conducted to study the effect of chicory root powder on the gut performance of broilers. For this purpose, two hundred commercial male broiler chicks were randomly divided into 5 treatment groups with 8 replications of 5 birds each and reared in battery brooders up to 42 days of age. The experimental design consisted of; T1 basal diet (BD) without antibiotic, T2: BD + antibiotic (BMD at 500 gm/ton), T3: BD + chicory root powder (0.5%), T4: BD + chicory root powder (1.0%), T5: BD + chicory root powder (1.5%). The results revealed that supplementation of 1.0% chicory root powder recorded significantly (P<0.05) higher body weight gain, feed intake and better feed conversion ratio (FCR) compared to antibiotic, control and 0.5 & 1.5% chicory powder at 42 days of age. Supplementation of various levels of chicory root powder significantly (P<0.05) lowered (P<0.05) the pH in duodenum, jejunum, ileum and caecum compared to control. Supplementation of chicory root powder (0.5, 1.0 & 1.5%) significantly (P<0.05) decreased the E. coli and Salmonella counts and (P<0.05) increased the Lactobacilli counts in ileum when compared to control and antibiotic groups. Supplementation of chicory (1.0% and 1.5%) groups significantly (P<0.05) increased the villus height (VH), crypt depth (CD), VH:CD ratio and villus width (VW) in the duodenum, ileum and jejunum at 42 d of age. Supplementation of chicory 1.0% and 1.5% groups significantly (P<0.05) increased the goblet cell number in duodenum, jejunum and ileum of broilers. Therefore, chicory root powder (1.0 and 1.5%) can be used as an alternative to antibiotic for improving gut performance of broiler chicken.
