Abstract Sterol oxidation was evaluated in commercial meat- and fish-based homogenized baby foods containing vegetable oil. Gas chromatography coupled with mass spectrometry (GC/MS) was used for the analytical determination of 7-ketocholesterol and 7-ketositosterol, which were chosen as markers of sterol oxidation in lipids of animal origin and vegetable origin, respectively. Cholestanetriol was also quantified, because its negative effects on atherogenesis and other biological processes are well known. In meat-based samplesg/serving. The 7-ketocholesterol and 7-ketositosterol were 2289 and 1140 g/serving, respectively, whereas the 7-ketocholesterol/cholesterol percent ratio was and 11-40 g/serving, respectively, whereas the cholestanetriol levels were 738 g/serving. The 7-ketocholesterol/cholesterol percent ratio was characteristic of each kind of meat and related to the levels of unsaturated fatty acids of animal lipids. In fish-based samples, the cholestanetriol and 7-ketocholesterol levels per serving were significantly lower than in meat samples, but in fish fillets they were about 2025, instead of 40, of the ingredients. The values of the 7-ketocholesterol/ cholesterol percent ratio in fish-based products were close to the values computed for chicken or turkey-based products. The detected values of cholestanetriol showed that the addition of vegetable oil enhances the development of the indirect bimolecular pathway of cholesterol oxidation, which was even more favorable in fish-based products.

It has been proven that the trans-isomers of unsaturated fatty acids that are formed during the hydrogenation of vegetable oils have negative effects on human health. Therefore, it is important to control the content of trans fatty acids in foodstuffs. At present in Mongolia, there are no national policies on controlling and regulating the content of trans fatty acids in food. Our country imports 20 - 25 tones of animals and vegetable oils, annually. Since we have not had regulations for trans fatty acids content in the foodstuffs, their content is regulated or limited by the legislation of the importing countries.In the present study, we have determined the amount of the trans fatty acids contained in different food, by using a rapid FTIR spectroscopy method with attenuated total reflection (ATR-FTIR), of the absorption band at 966-968 cm-1 frequency range. Have analyzed and evaluated more than 30 samples and the content of trans fatty acids in the margarines were higher and varies between 2.3% to 10.9%. Humans need vitamin A and obtain essential vitamin A by conversion of plant foods rich in provitamin A and/or absorption of preformed vitamin A from foods of animal origin. The determination of the vitamin A value of plant foods rich in provitamin A is important but has challenges. The aim of this paper is to review the progress over last 80 years following the discovery on the conversion of β-carotene to vitamin A and the various techniques including stable isotope technologies that have been developed to determine vitamin A values of plant provitamin A (mainly β-carotene). These include applications from using radioactive β-carotene and vitamin A, depletion-repletion with vitamin A and β-carotene, and measuring postprandial chylomicron fractions after feeding a β-carotene rich diet, to using stable isotopes as tracers to follow the absorption and conversion of plant food provitamin A carotenoids (mainly β-carotene) in humans. These approaches have greatly promoted our understanding of the absorption and conversion of β-carotene to vitamin A. Stable isotope labeled plant foods are useful for determining the overall bioavailability of provitamin A carotenoids from specific foods. Locally obtained plant foods can provide vitamin A and prevent deficiency of vitamin A, a remaining worldwide concern.
