A new holistic conceptual framework for sustainability oriented hospitality innovation with triple bottom line perspective

Purpose The purpose of this study is to determine the dimensions for “sustainability-oriented hospitality service innovation (SOHSI)” in the context of food and beverage (F&B) industry. For this to be done, the relationship between service innovation dimensions and the triple bottom line (TBL) dimensions (including social, environmental and economic aspects of sustainability) is investigated. Design/methodology/approach In this study, primarily a detailed literature review was carried out to specify the dimensions of service innovation in hospitality industry and sustainability as well. Then, fuzzy decision-making trial and evaluation laboratory (DEMATEL), one of the multi-criteria decision-making (MCDM) methods, was used to reveal the causal relationship within these dimensions. Findings A framework is presented to help F&B organizations make their innovative services more sustainable. F&B servicing companies should focus especially on “environmental entrepreneurship,” “interior design” and “brand management” dimensions to get benefit underway to gain competitive advantage. Originality/value In hospitality industry where competition is increasing every day, it is necessary to create brand-new services or offer renowned services via diversified ways, to step forward from competitors. In this regard, it is important for companies to ensure that every innovative service should be sustainable. Until now, researchers have mostly studied environmental dimension of sustainable service innovation. However, there are no studies evaluating sustainability concept with the TBL approach. Therefore, this study contributes to the field of sustainability in hospitality service innovation.

Case overview The Indian Hotels Corporation limited known as the Taj Group was set up by JRD Tata in 1903. The company has undertaken a long journey since then. It is one of the most recognized hotel brands in luxury market segment of the hotel industry. Off late some micro- and macro-level changes in the business environment have not been in favor of the group. The strategy of international expansion in acquiring and refurbishing of assets has mounted the debt and the growing losses. What has compounded the growing troubles is the entry of aggressive multinational brands in the luxury segment of the hospitality industry. The group prioritizes to get its financials in order. It thereafter needs to rework on its competitive strategy and take advantage of the booming domestic hotel industry for profitable future growth. Research methodology The case is written using secondary data sources (namely, research documents, press information, journal articles and published interviews). Publicly declared company information has further been leveraged to augment case facts. All information sources have been duly acknowledged in the reference section. Case overview/synopsis The case is written in the backdrop of COVID-19 pandemic and its effect on the Indian retail industry, revolving around scenarios in which a multinational retailer has to decide on its long- and short-term strategy in such an economic crisis. The case story has been developed around Marks and Spencer’s retail venture in the Indian market. With the COVID-19 pandemic impacting business at various levels, with countries moving to lock down and economies shrinking to recessionary levels, one of the worst affected sectors is retail. The teaching case builds upon Mark and Spencer’s initial decision of not entering and extending its food/grocery business in India. While it remained a dominant player in Indian fashion retail for almost two decades, it needs to re-think its decision of entering food retail owing to a pandemic situation affecting its offline sales/store footfall and increasing competition from global fashion brands such as Zara and H&M that had flooded the Indian fashion retail sector. The case provides a context for students to perform environmental factor and competitor analysis for a sector, with special focus on decision making in a changing crisis scenario. Complexity academic level This case could be used in undergraduate and MBA classroom programme, across subjects such as retail management, marketing management, international business, international business environment and strategic business management. This case fits while discussing topics such as business environmental factors, competitor analysis, decision-making under crisis, market entry decision, omnichannel retail strategy, consumer behaviour and brand management.

Purpose This study aims to critically evaluate the factual triple bottom line (TBL) sustainability performance of commercial foodservices as featured in peer-reviewed academic publications. Design/methodology/approach The commercial foodservices’ sustainability performance-related articles were collected for a systematic review. An inductive thematic analysis was applied to the eligible articles. Findings The contribution of the commercial foodservice sector to the TBL sustainability is highlighted through eight themes: food waste management; food safety and hygiene; food allergy management; provision of healthy meals; local food use; employment of the disadvantaged; well-being of (non)managerial personnel; and noise level management. Originality/value The critical evaluation of the actual TBL sustainability measures adopted by commercial foodservice providers highlights the feasibility of the measures, thus calling for their broader industry uptake. Research gaps and issues for future investigations are accentuated for scholars to support the industry in its progress towards the goals of the TBL sustainability.

Purpose – At present, financial agglomeration tendency in domestic and foreign countries is increasingly evident. Therefore, from a comparative perspective, this paper aims to assess and predict the financial agglomeration degree in central five cities. Design/methodology/approach – According to the diversity of evaluating indexes and the uncertainty of financial agglomeration, this paper constructs a set of indexes of evaluating the financial agglomeration degree, comprehensively evaluates the financial agglomeration degree of the five cities – Wuhan, Changsha, Zhengzhou, Nanchang and Hefei – in China's middle region from 2001 to 2010 by using the multiple dimension grey fuzzy decision-making model, and predicts their development tendency by using the GM (1, 1, β) model. Findings – The results show that the multiple dimension grey fuzzy decision-making pattern cannot only be used to determine the weights of evaluating indexes, but also get the fuzzy partition and ranking order of the financial agglomeration in central five cities. The grey prediction results can objectively reflect the development tendency of the financial agglomeration in central five cities. Practical implications – From the results, it is necessary for any competitive city to clarify their relative strengths and weaknesses in order for the accurate location and scientific development, and it also provides a reference for the government decision-making. Originality/value – The paper succeeds in using the multiple dimension grey fuzzy decision-making model to measure the financial agglomeration degree of the five central cities and the grey prediction model to predict future trends.

Purpose The purpose of this paper is to empirically investigate the impact of complexity on the triple bottom line by applying information-processing theory. Specifically, the paper assesses the impact of internal manufacturing complexity on environmental, social, and financial performance. Furthermore, the paper assesses the moderating role of connectivity and shared schema in reducing the potential negative impact of complexity on performance. Design/methodology/approach Multi-country survey data collected through the Global Manufacturing Research Group were utilized to test the hypotheses. The authors used structural equation modeling to test the measurement and initial structural model. Furthermore, to test the proposed moderating hypotheses, the authors applied the latent moderated structural equations approach. Findings The results indicate that while complexity has a negative impact on environmental and social performance, it does not significantly affect financial performance. Furthermore, this negative impact can be reduced, to some extent, through connectivity; however, shared schema does not significantly impact on the complexity-performance relationship. Originality/value This study presents a comprehensive analysis of the impact of complexity on sustainability. Furthermore, it provides managerial applications as it proposes specific tools to deal with the potential negative influences of complexity.

PurposeSelection of resilient suppliers has attracted the attention of researchers in the past one decade. The devastating effect of COVID-19 in emerging economies has provided great impetus to the selection of resilient suppliers. Under volatile and uncertain business scenarios, supplier selection is often done under imprecise and incomplete information, making the traditional decision-making methods ineffective. The purpose of this paper is to demonstrate the application of a fuzzy decision-making method for resilient supplier selection.Design/methodology/approachA group of three decision makers was considered for evaluating various alternatives (suppliers) based on their performance under different primary, sustainability and resilience criteria. Experts' opinion about each criterion and alternative was captured in linguistic terms and was modelled using fuzzy numbers. Then, an algorithm for solving resilient supplier selection problem based on the trapezoidal intuitionistic fuzzy technique for order preference by similarity to ideal solution (TrIFTOPSIS) was introduced and demonstrated through a case study.FindingsA closeness coefficient was used to rank the suppliers based on their distances from intuitionistic fuzzy positive-ideal solution and intuitionistic fuzzy negative-ideal solution. Finally, the proposed fuzzy decision making model was applied to a real problem of supplier selection in the clothing industry.Originality/valueThe presented TrIFTOPSIS model provides an effective route to prioritise and select resilient suppliers under imprecise and incomplete information. This is the first application of intuitionistic fuzzy multi-criteria decision-making for resilient supplier selection.

Purpose As a part of adaptive and complex system thinking, geographic information systems (GIS) are beneficial particularly for transportation projects, where uncertainty is frequent. Accordingly, this paper aims to examine the utilization of GIS in line with adaptive and complex system thinking, as the basis of the methodical formulation of perceived gaps within the integrated transportation planning (ITP) specifically for the mega transportation projects. Such a framework is undertaken, as the mega transportation projects although may seem straightforward, however, are problematic and require more consideration than the traditional triple bottom line factors. Using the Sydney Metro as the case study, the outcome demonstrates the significance of the fourth separate dimension of engineering into the aforementioned bottom-line factors. Design/methodology/approach The research examines the utilization of adaptive and complex system thinking, as the basis of the methodical formulation of perceived gaps within the ITP. The use of Sydney’s Metro project is a novel example of the proposed methodical formulation and its empirical assessment and provides a better understanding of the use of mapping and planning tools for mega transportation projects. Findings Aptly, using the developed conceptual framework, this research further validates the inclusion of a separate engineering dimension with the usual triple bottom line factors. Such inclusion is paramount in responding to the existing ITP gaps found within the current literature. Originality/value This research uses GIS and ITP process to support the aforementioned adaptive and complex system thinking. This, in turn, is used as the basis of a methodical formulation framework in dealing with mega rail transportation infrastructure. To support such a proposition, Sydney Metro is examined as the basis of a case study.

PurposeThis research paper aims to analyze the critical barriers to implementing digitalization in the Indian construction industry as Indian construction companies are lagging in the implementation of digital technologies in the work environment.Design/methodology/approachIn this research paper, a qualitative research approach is adopted, and multiple detailed interviews are conducted with industry and academic experts. Further, multi-criteria decision-making (MCDM) techniques are used to finalize the prioritization among various alternatives. The fuzzy-decision-making trial and evaluation laboratory (Fuzzy-DEMATEL) and interpretive structural modeling (ISM) techniques are employed to find the exact relationship among the identified alternatives.FindingsThis study identifies 14 critical barriers from an extensive literature review and multiple interviews with industry professionals, and further driving and critical barriers are identified.Research limitations/implicationsIn this research paper, an exploratory study with a limited number of respondents from a large Indian construction company is carried out. Further, a detailed longitudinal analysis can be done to assess the subjectivity of the participants with more advanced statistical tools. However, this research discusses several points pertaining to the implementation of digitalization in the construction industry. The research further identifies the critical barriers to digitalization in the Indian construction industry.Practical implicationsThe finding of the study has two-pronged implications. First, it provides a road-map to the construction industry by highlighting the engagement of top management as the key focus area for successful digitalization. Second, the finding also shows similarity of the digitalization process to the adoption of process improvement techniques like lean and total quality management (TQM), wherein the top management plays a crucial role in ushering in the implementation of a disruptive change.Originality/valueThe research is unique in two ways. First, this is one of the very few attempts to understand digitalization in the Indian context. Second, the research also demonstrates that the combination of fuzzy DEMATEL and ISM techniques can be successfully employed in the emerging field of construction digitalization research.

PurposeThis research aims to investigate and define the eight wastes of lean philosophy in higher education institutions (HEIs) by proposing a multi-stage model.Design/methodology/approachThe authors have used a specific multi-criteria decision-making method, fuzzy decision-making trial and evaluation laboratory, to investigate the cause–effect relationships and importance order between criteria for wastes in HEIs. In total, 22 criteria were categorized under eight wastes of lean. The study was implemented in a business school with the participation of faculty members from different departments.FindingsThe results showed that the most important wastes in the business school selected were repeated tasks, unnecessary bureaucracy, errors because of misunderstanding/communication problems, excessive number of academic units and creation of an excessive amount of information. Another important result was that all the sub-wastes of talent were in the causes group, while motion and transportation wastes were in the effect group.Practical implicationsA road map to guide lean transformation for HEIs is proposed with a multi-stage model and potential areas for improvement in HEIs were presented.Originality/valueThis study proposes a multi-stage structure by applying multi-criteria decision-making to HEIs, focussing on wastes from a lean perspective.

Purpose The purpose of this paper is to develop a virtual reality (VR)-based and user-oriented decision support system for interior design and decoration. The four-phase decision-making process of the system is verified through a case study of an office building. Design/methodology/approach Different “spatial layouts” are presented by VR for users to decide their preference (Phase 1). According to the selected spatial layout, a “spatial scene” is constructed by VR and Technique for Order Preference by Similarity to an Ideal Solution (TOPSIS) is used to determine the spatial scene preference (Phase 2). Based on the binary integer programming method, the system provides the optimal preliminary solution under a limited decoration budget (Phase 3). Finally, the consistency between the overall color scheme and pattern is fine-tuned by VR in order to obtain the final solution (Phase 4). Findings The questionnaire survey results show that decision makers generally affirm the operation and application of VR, and especially recognize the advantages in the improvement of VR-based interior design feasibility, communication efficiency and design decision-making speed. The optimization of the costs and benefits enables decision makers to effectively evaluate the impact of design decisions on subsequent project implementation during the preliminary design process. Originality/value The VR-based decision support system for interior design retains the original immersive experience of VR, and offers a systematic multiple criteria decision- making and operations research optimization method, thus, providing more complete decision-making assistance. Compared with traditional design communication, it can significantly reduce cognitive differences and improve decision-making quality and speed.
