Sodium and potassium intakes in a sample of students and employees in the University of Jordan aged (20-40 years) using 3-day food diaries

Purpose – This study aimed to estimate sodium and potassium intakes in a selected sample of Jordan University students and employees, to determine the main sources of sodium and potassium in their diets and to compare their intakes with adequate intake (AI), as sodium intakes were found to be high by household budget surveys in Jordan. Design/methodology/approach – A convenient sample of 200 subjects (100 students and 100 employees) from the University of Jordan with an age range of (20-40) years were recruited. The nutritional evaluation of sodium and potassium was done using three-day food records. Foods were analyzed for sodium and potassium using a food analysis program. Findings – Findings of the present study indicated that the intakes of sodium (5176 ± 2,841 mg) exceeded that of AI and that the intakes of potassium (2841 ± 990 mg) were below the AI. The main food sources for sodium were table salt, Jordanian bread and fast foods and sandwiches and for potassium were falafel, Kabsa and hummus. Originality/value – It is also clear that table salt, bread, fast foods were among the top food sources of sodium in Jordanian diet and any national strategy to lower sodium intake should take these into consideration together with upgrading of the educational level of the population.

ObjectivesTo examine sodium and potassium urinary excretion by socioeconomic status (SES), discretionary salt use habits and dietary sources of sodium and potassium in a sample of Australian schoolchildren.DesignCross-sectional study.SettingPrimary schools located in Victoria, Australia.Participants666 of 780 children aged 4–12 years who participated in the Salt and Other Nutrients in Children study returned a complete 24-hour urine collection.Primary and secondary outcome measures24-hour urine collection for the measurement of sodium and potassium excretion and 24-hour dietary recall for the assessment of food sources. Parent and child reported use of discretionary salt. SES defined by parental highest level of education.ResultsParticipants were 9.3 years (95% CI 9.0 to 9.6) of age and 55% were boys. Mean urinary sodium and potassium excretion was 103 (95% CI 99 to 108) mmol/day (salt equivalent 6.1 g/day) and 47 (95% CI 45 to 49) mmol/day, respectively. Mean molar Na:K ratio was 2.4 (95% CI 2.3 to 2.5). 72% of children exceeded the age-specific upper level for sodium intake. After adjustment for age, sex and day of urine collection, children from a low socioeconomic background excreted 10.0 (95% CI 17.8 to 2.1) mmol/day more sodium than those of high socioeconomic background (p=0.04). The major sources of sodium were bread (14.8%), mixed cereal-based dishes (9.9%) and processed meat (8.5%). The major sources of potassium were dairy milk (11.5%), potatoes (7.1%) and fruit/vegetable juice (5.4%). Core foods provided 55.3% of dietary sodium and 75.5% of potassium while discretionary foods provided 44.7% and 24.5%, respectively.ConclusionsFor most children, sodium intake exceeds dietary recommendations and there is some indication that children of lower socioeconomic background have the highest intakes. Children are consuming about two times more sodium than potassium. To improve sodium and potassium intakes in schoolchildren, product reformulation of lower salt core foods combined with strategies that seek to reduce the consumption of discretionary foods are required.

Low sodium and high potassium intakes in childhood protect against rises in blood pressure (BP) and risk of cardiovascular disease (CVD) later in life. Our aim was to pilot methods for collection of 24-h urine samples (gold standard) and diet recalls to assess sodium and potassium intakes and their food sources in 30 children aged 8–11 years at one New Zealand primary school. A diverse sample (n = 27) was recruited over a two-week period. All children provided a urine sample (71% complete) and interviewer-assisted 24-h diet recall (Intake24 software). Median (range) sodium intake was 2191 (1087 to 4786) mg/day (salt equivalent 5.5 g), potassium intake was 1776 (800–2981) mg/day, BP was 105 (84–129)/62 (53–89) mmHg, and sodium to potassium molar ratio was 2.0 (1.1–4.8). Frequent use of discretionary salt was uncommon. Major food sources of sodium were bread, pies and pastries, and bread and pasta-based dishes, and potassium were sauces and condiments, dairy products, and non-alcoholic beverages. Most participants provided adequate data and enjoyed taking part. A larger survey is warranted to confirm findings and inform a potential intervention(s). Small improvements to study procedures and resources should improve completeness of urine samples and quality of 24-h diet recall data.

Purpose Excessive high caloric and nutritional intake has been associated with weight gain which is linked to an increased prevalence of cardiovascular disease, type 2 diabetes and several types of cancers. The purpose of this paper is to characterize the nutritional intake pattern of the population in terms of energy, macro and micronutrients. Design/methodology/approach There were assessed 513 workers of the University of Porto (UP) randomly selected. The Food Processor Plus was used to convert foods into nutrients and, to assess nutritional intake adequacy. Data were compared to Dietary Reference Intakes and with recommended ranges by the World Health Organization. Findings The intake of most individuals was above recommendations for protein, carbohydrates and sodium. The average of energy intake observed in UP employees was lower than data available for Portuguese general population. The protein, carbohydrates, total fat and water intake, cholesterol, saturated, monounsaturated, polyunsaturated fatty acids and sodium intake were found to be significantly higher for men. Significant differences were found for vitamin D and calcium between age ranges; Carbohydrates, sugar, monounsaturated fatty acids, cholesterol, water and vitamin K was significantly different between teachers and non-teachers. Originality/value According to nutritional intake analysis, food consumption of this population was unbalanced, attending to high protein, carbohydrates and sodium intake.

Purpose This study sought to assess the process of initiating a sustainable recycling program at the University of Jordan. It illustrates the potentials of recycling, perceived awareness of recycling by the students and staff, as well as challenges to a sustainable waste recycling program. This study aims to identify the barriers and challenges that face a sustainable waste recycling program at the University of Jordan. Design/methodology/approach The study consisted of investigating waste recycling potential on campus, inspecting general environmental awareness toward recycling and running an experimental recycling study on part of the campus. A waste characterization study was conducted to assess the current waste status and recycling extent. A questionnaire survey was carried out to obtain information on the students’ and staffs’ awareness of waste recycling and management on campus. In the experimental recycling study, seventy units of waste segregation bins were distributed on campus. The recycling efficiency was evaluated at two schools; the School of Engineering and the School of Medicine. The administrative support and collaboration while running the recycling program were also observed. Findings Overall, waste recycling at the University of Jordan has an appreciable opportunity and potential. A substantial amount of waste can be diverted from going to the landfill. Data showed general positive recycling rates except for plastic. Also, the recycling rates show great potential for enhancing. The recycling at the University of Jordan faces several barriers and obstacles. The greatest barrier was identified as the lack of cooperation of the administrative system on campus. The administrative support for the recycling program was strong only at the initiation of the recycling program. Administrative support has a vital influence on the recycling program. It has the potential of boosting it or bringing it to halt. Future studies should focus on investigating recycling efficiency for the entire campus and focus more on increasing pro-environmental behavior among students and staff in higher education institutions. Originality/value The value of this research lies in it being conducted in a large campus university in a developing country. Also, the study used a diagnostic approach that is based on evaluating an environmental sustainability program as it evolves inside a higher education institution. The study illustrates the challenges that face universities in developing countries while adopting green campus initiatives.

Purpose This paper aims to examine some of the digitization projects at the library of the University of Jordan. As the library acts as the deposit centre for theses from the Arab world universities, an effective management policy for deposit, management and access is required. The paper illustrates some of the existing workflows and considers the challenges and possible improvements. Design/methodology/approach Interviews (n = 8) with library staff in the Information Division provided details about the methods used for the collection and management of print and electronic theses in the University of Jordan, in addition to some digitization projects. In addition, very recent unpublished brochure was collected from one member of staff in the computer applications and databases section to learn about theses deposit statistics from various countries in the Arab world. A business process modelling technique (Riva) (Ould, 2005) using role activity diagram illustrated some of the existing workflows, the challenges and possible improvements. Findings Some Arab universities do not send theses on regular basis; some do not collaborate at all. Workflows vary according to the format of the thesis. The number of digitized print theses has reached 77,885 titles, out of total of 84,043, but it is a slow process. All newly submitted theses from Jordanian universities come in print and on a CD, but other external institutions may use different methods (CD only by mail, or direct uploading to the webpage provided by the University of Jordan). The current online system for uploading theses was last updated in 2017. Deposit rates through the system are very low. Access to theses is relatively limited; print theses can be accessed within the library premises. The online theses repository provides full text and all academic staff; students and researchers can access these from any workstation within the university campus. Only registered users may access theses databases (read only) outside the network. Resourcing for digitization is limited, and the digitization itself is currently outsourced although other processes are done in-house. Practical implications The paper encourages the use of a practical online theses’ repository to deposit theses from the higher education within the Arab world. Social implications Establishing theses repository and ensuring proper and smooth deposit process by Arab universities libraries, would enhance communication and collaboration amongst them. Originality/value The paper supports the theme of the primacy of global access to information for learning and scholarship. The paper adds value in the context of theses access amongst Arab universities. As the library acts as the deposit centre for theses from the Arab world universities, an effective management policy for deposit, management, access and preservation is required. The paper provides a set of recommendations that would contribute to raise the visibility of research produced by Arab higher education, through a single source of access to theses.

AbstractThe direction and magnitude of the association between sodium and potassium excretion and blood pressure (BP) may differ depending on the characteristics of the study participant or the intake assessment method. Our objective was to assess the relationship between BP, hypertension and 24-h urinary sodium and potassium excretion among Chinese adults. A total of 1424 provincially representative Chinese residents aged 18 to 69 years participated in a cross-sectional survey in 2017 that included demographic data, physical measurements and 24-h urine collection. In this study, the average 24-h urinary sodium and potassium excretion and sodium-to-potassium ratio were 3811.4 mg/day, 1449.3 mg/day, and 4.9, respectively. After multivariable adjustment, each 1000 mg difference in 24-h urinary sodium excretion was significantly associated with systolic BP (0.64 mm Hg; 95% confidence interval [CI] 0.05–1.24) and diastolic BP (0.45 mm Hg; 95% CI 0.08–0.81), and each 1000 mg difference in 24-h urinary potassium excretion was inversely associated with systolic BP (− 3.07 mm Hg; 95% CI − 4.57 to − 1.57) and diastolic BP (− 0.94 mm Hg; 95% CI − 1.87 to − 0.02). The sodium-to-potassium ratio was significantly associated with systolic BP (0.78 mm Hg; 95% CI 0.42–1.13) and diastolic BP (0.31 mm Hg; 95% CI 0.10–0.53) per 1-unit increase. These associations were mainly driven by the hypertensive group. Those with a sodium intake above about 4900 mg/24 h or with a potassium intake below about 1000 mg/24 h had a higher risk of hypertension. At higher but not lower levels of 24-h urinary sodium excretion, potassium can better blunt the sodium-BP relationship. The adjusted odds ratios (ORs) of hypertension in the highest quartile compared with the lowest quartile of excretion were 0.54 (95% CI 0.35–0.84) for potassium and 1.71 (95% CI 1.16–2.51) for the sodium-to-potassium ratio, while the corresponding OR for sodium was not significant (OR, 1.28; 95% CI 0.83–1.98). Our results showed that the sodium intake was significantly associated with BP among hypertensive patients and the inverse association between potassium intake and BP was stronger and involved a larger fraction of the population, especially those with a potassium intake below 1000 mg/24 h should probably increase their potassium intake.

Purpose – The purpose of this paper is to discuss the challenges and obstacles encountered in the implementation of a mentoring program for Master of Business Administration (MBA) students at the University of South Australia (UniSA) Business School. The paper starts with an exploration into the need for a mentoring program, the trial and subsequent four years of implementation. The paper also explores the network model of mentoring and the reasons why this, rather than a more traditional model, was chosen for the program’s implementation. Design/methodology/approach – This exploratory case study uses data from over 600 students and their alumni mentors over a five-year period to evaluate and improve the program as well as cultivating a critical community of adult learners. Findings – Feedback from students indicates that the mentoring program is regarded by most as a value-added feature of their early learning as it offers support, if and when it is required, from those who have been there before. Research limitations/implications – Results are limited to one institution. However, as research into mentoring for higher education students is thin on the ground, this study contributes to our understanding of the positive impacts of mentoring on student success. Practical implications – This paper emphasizes the importance of business leaders giving back to their alma mater through mentoring current MBA students. It shows how mentoring can support learning and management development. Originality/value – This is an original study which explores ways to increase the learning of higher education students for positive social outcomes.

The identification of sodium and potassium intake in youths is an important step to preventing the increase of blood pressure in childhood. We examined food intake and estimated mineral intake using a brief-type self-administered diet history questionnaire (BDHQ) to test its validity as a comparison with urinary excretion in Japanese youths. The subjects were 5th and 8th graders (n = 2377), who completed the BDHQ and permitted the use of their overnight urine specimens. Sodium intake was poorly associated with sodium excretion (Rho = 0.048), and the coefficients of dietary potassium and a sodium-to-potassium molar ratio were 0.091–0.130. Higher soybean paste (miso) intake and pickles were significantly associated with higher sodium excretion (p ≤ 0.005). However, these foods were positively associated with potassium excretion (p = 0.002–0.012), and not associated with an excreted sodium-to-potassium ratio. Fruits and dairy products were positively associated (p ≤ 0.048), whereas beverages were negatively associated with potassium excretion (p ≤ 0.004). The association of the sodium-to-potassium ratio was opposite to that of potassium (p ≤ 0.001). The choice of foods, potassium, and the sodium-to-potassium ratio assessed using the BDHQ are available as part of health education for youths, but the assessment of sodium intake in population levels should be carefully conducted.
