Polyphenols have a significant impact on the quality of the red wine grape varieties. Certain amphelotechnical measures and technological pro­cesses affect directly the content of polyphenols in grapes and wine. The aim of the study was to investigate the influence of different crop load of the vine and length of maceration of grape pomace on polyphenolic content and sensory properties of Vranac cultivar which represents the leading red variety in the Republic of Macedonia. Studied the different crop load of the vine (control, variant 1 with a 25% reduction of the yield, variant 2 - 35% reduction of the yield and a variant of 3- 50% reduction of the yield) as well as different times of maceration (7days and 14 days) on the phenolic composition of wine. Test results showed a positive correlation between the crop load and the content of total polyphenols, ie, reducing the number of bunches per vine comes to an increase in the content of total polyphenols in wine as well as length of maceration achieves the same correlation.

In order to evaluate the microbial quality of human wastes and effluents from treatment processes, the microbial flora of samples was examined. Total coliforms, fecal coliforms and fecal streptococci were used as indicator micro-organisms, and Vibrio cholerae non O-1, Salmonella, Staphylococcus aureus and Welchii (Clostridium perfrigens) were selected as pathogenic organisms. Salmonella was detected in only the water samples from the night soil treatment plant, while Staphylococcus aureus was detected in the night soil and the samples from the night soil purification tanks. Vibrio cholerae non 0-1 was not detected in any samples, but Welchii existed in almost all samples. Generally, the density levels and distribution patterns of the indicator micro-organisms were similar to those in the raw wastewaters. The microbial flora was not changed remarkably after the primary sedimentation process and the biological treatment process. After the chlorination process, total colonies, spore-forming bacteria, Welchii, moulds and fecal streptococci could survive, and spore-forming bacteria formed the majority of the total colonies in the well-chlorinated effluents. Welchii at the level of 103/100 ml can be used as the indicator micro-organism to ensure a sanitary safe discharge, because it can survive at the level of 103−104/100 ml even if other indicators and pathogenic micro-organisms are inactivated completely by the chlorination process.

Проведена сравнительная оценка эффективности антиоксидантного и гепатопротекторного действия пищевых добавок, полученных из выжимки винограда белых сортов по различным технологиям, в экспериментах на лабораторных животных. Установлено, что пищевая добавка «Порошок виноградный» (ПВ), полученная из выжимки винограда белых сортов по разработанной технологии, позволяет, по сравнению с контрольным образцом пищевой добавки, в большей степени снизить в сыворотке крови содержание продуктов перекисного окисления липидов – малонового диальдегида, диеновых коньюгатов и кетодиенов, что свидетельствует о более высокой эффективности антиоксидантного действия ПВ на организм животных, обусловленной большим содержанием микронутриентов с антиоксидантными свойствами. Добавка ПВ проявляет более высокую эффективность гепатопротекторного действия, заключающуюся в значительном снижении уровня активности аланинаминотрансферазы в сыворотке крови, по сравнению с контрольным образцом добавки. Comparative evaluation of the effectiveness of antioxidant and hepatoprotective action of food additives which obtained from grape pomace white varieties for various technologies, was carried out in experiments on laboratory animals. It is established that the food additive “Grape Powder” (GP), obtained from the pomace of white grape varieties by the developed technology, allows, in comparison with the control sample of the food additive, to reduce the content of lipid peroxidation products in the serum to a greater extent – Malon dialdehyde, diene conjugates and ketodienes, which indicates a higher efficiency of antioxidant action of GP on the organism of animals, due to the high content of micronutrients with antioxidant properties. The additive GP shows a higher efficiency of hepatoprotective action, which consists in a significant reduction in the level of alanine aminotransferase activity in the blood serum, compared to the control sample of the additive.
