Este trabalho teve como objetivo avaliar o potencial de maturação das cultivares Pinot Noir, Tempranillo, Merlot, Cabernet Sauvignon, Syrah, Chardonnay e Sauvignon Blanc submetidas ao regime de dupla poda, em Cordislândia, região cafeeira do sul de Minas Gerais. As plantas foram submetidas a dois ciclos de produção, um de primavera-verão, compreendido entre agosto e janeiro, e outro ciclo de outono-inverno, entre janeiro e julho. Como parâmetros de qualidade, foram avaliados os diâmetros transversal e longitudinal da baga, acidez, ácidos tartárico e málico, pH, sólidos solúveis, antocianinas, fenólicos totais e os teores de glicose, frutose e sacarose. Todas as variedades apresentaram maiores teores de pH, sólidos solúveis, açúcares, antocianinas e fenólicos totais, e redução nos diâmetros transversal e longitudinal na safra de inverno. A cultivar Syrah destacou-se das demais no conteúdo de antocianinas e fenólicos totais tanto no verão quanto no inverno, entretanto apresentou o menor conteúdo de açúcares. A alteração do ciclo de produção da videira através da técnica da dupla poda para colheita, no período de inverno, na região cafeeira de Minas Gerais, favorece a maturação dos frutos e melhora consideravelmente a qualidade das uvas para vinificação.

Wines are known for its high content of bioactive compounds that can be influenced by the region and climate where the grapes are produced. New regions of production are normally developed using techniques and standards for other traditional regions, but is important to characterize the wine profile, which is different according to the terroir, and can be important for future geographic indications. The aim of this study was to evaluate color, antioxidant activity, anthocyanin content and phenolic compounds profile in wines produced in Minas Gerais State, Brazil. Wines were produced in different wineries of the same region using the varieties Syrah, Merlot, Cabernet Sauvignon, Cabernet Franc (red), Chardonnay and Sauvignon Blanc (white) and Syrah (rose), from municipalities of Cordislândia, Boa Esperança and Três Corações, located in the south of Minas Gerais State, Brazil. Wines produced in Minas Gerais State presented contents of t-resveratrol, total phenolics, anthocyanins, flavonols, flavanols and phenolic acids consistent to the contents observed in wines from traditional regions of production. However, the terroir and the grape variety can result in a differentiation of compounds observed in wines. Syrah red wines produced in Boa Esperança stood out with higher amounts of anthocyanins (24.29 mg L-1), phenolic acids (123,19 mg L-1 ) and flavonols (35.55 mg L-1), when compared to wines from the same variety from other municipalities and other evaluated red wines. Sauvignon Blanc wines from Boa Esperança presented higher contents of phenolic acids and total flavonols, when compared to wines of the same variety produced in Cordislândia. Chardonay wines presented higher total phenolics content, when compared to ohther evaluated white wines.  Rose wine produced in the South of Minas Gerais presented the phenolic acids content of 36,33 mg L-1 and total flavonols content of 29,7 mg L-1. The highest antioxidant activity using the DPPH method, (% of free radicals scavenging - FRS) was observed for Syrah wines from Três Corações, (75.37%), but not different from Cabernet Sauvignon wines from Cordislândia (72.50%), values that can be correlated with the largest content of phenolics observed in wines as phenolic compounds (3009 mg L-1). No differences were observed in the contents of the antioxidant activity of white wines. This results indicate that the studied wines present the necessary nutritional and beneficial characteristics to compete in the supply of bioactive compounds during consumption, when compared to wines produced in traditional and different regions in Brazil and other countries.

Aim: This study evaluate the agronomic and quality characteristics of grape (Vitis vinifera L.) varieties in a non-traditional region of the Agreste of Pernambuco States. Study Design: The experiment was conducted in a randomized block design with five replications and eight plants per plot. Place and Duration of Study: Was carried out in the municipality of Brejão, PE, at the Experimental Station of the Agronomic Institute of the Pernambuco. The vines were implanted on September, 2013, whose pruning was performed on August and harvesting began on December, 2016 to January, 2017. Methodology: Ten treatments represented by the varieties of European vines: Cabernet Sauvignon, Malbec, Merlot Noir, Petit Verdot, Pinot Noir and Syrah for producing of red wines and Chardonnay, Muscat Petit Grain, Sauvignon Blanc and Viogner for producing of white wines, grafted on the Paulsen 1103 rootstock were evaluated. The vineyard was conducted in espalier vine-tying system in double short pruning type, with spacing 3 m x 1 m. The characterization of the phenological stages was made using as reference the phenological scale. The thermal requirement of the crop per period was estimated. Agronomic characteristics were also evaluated, such as: fertility of gems, budding (%), production, productivity, number of bunches per plant, length and width of bunch, bunch weight, soluble solids, titratable acidity, hydrogen ionic potential, SS / TA ratio, volume of 100 berries, yield of must, mass of the husks and seeds. The data were submitted to two selection indices: Classic Index and Distance Genotype-Ideotype Index. Results: Sprouting varied from 13.68% (Petit Verdot) to 81.6% (Sauvignon Blanc) and the fertility of gems from 0.1 bunch.bud-1 (Chardonnay) to 0.67 bunch.bud-1 (Sauvignon Blanc). The pruning cycle and Day Degrees (DD) cumulated ranged from 133 days and 1,684 DD (Muscat Petit Grain) to 167 days and 2,070 DD (Merlot Noir). The number of bunches ranged from five (Merlot Noir) to 29 bunches.plant-1 (Sauvignon Blanc). Muscat Petit Grain stood out for bunch weight, not differing from Syrah and Malbec. The varieties showed no difference in length and width of bunches. In the volume of 100 berries, Muscat Petit Grain (213.6 ml) and Malbec (216.0 ml) stood out. For the yield of must, Sauvignon Blanc (70.87%) stood out, not differing from Malbec (64.31%), Viognier (69.79%), Muscat Petit Grain (70.22%). Muscat Petit Grain, Sauvignon Blanc and Viognier (white wine), Cabernet Sauvignon, Malbec, Merlot Noir and Syrah obtained acceptable values for soluble solids (SS), titratable acidity (TA), SS/TA ratio and pH. From the selection index analyzes, the Muscat Petit Grain, Cabernet Sauvignon and Syrah varieties were indicated for the selection by the highest Mulamba and Mock index and by the Genotype-Ideotype distance index. Conclusion: The cycle of grapevine varieties evaluated in the Garanhuns, PE, Microregion is longer than that observed in the sub Medio of the São Francisco Valley, similar to those in the South Region of Brazil. In the evaluated cycle the varieties produced grapes with characteristics suitable for the production of quality fine wines, showing to be promising for this non-traditional microregion in the production of fine grapes. From the selection index analyzes, the Muscat Petit Grain, Syrah and Cabernet Sauvignon varieties were indicated for selection by the highest Mulamba and Mock index and Genotype-Ideotype distance index.

A produção de uvas viníferas nas regiões de elevada altitude do estado de Santa Catarina é recente e há poucas informações disponíveis a respeito das características fenológicas e das exigências térmicas para as variedades utilizadas. O objetivo deste trabalho foi caracterizar o comportamento fenológico e determinar as exigências térmicas das variedades Chardonnay, Sauvignon Blanc, Cabernet Sauvignon, Merlot, Pinot Noir, Cabernet Franc e Sangiovese. A área experimental foi instalada na Estação Experimental da EPAGRI, localizada em São Joaquim (28°17'39"S; 49°55'56"W, altitude 1.415m). Os estádios fenológicos avaliados foram início da brotação, floração, mudança de cor das bagas e maturidade nos ciclos produtivos de 2004/05, 2005/06 e 2006/07. A exigência térmica das variedades foi calculada empregando-se o somatório de graus-dia, considerando-se temperatura-base para a videira de 10°C. Na colheita, a maturação tecnológica foi determinada através das análises de sólidos solúveis totais, acidez titulável e pH. O ciclo das variedades viníferas avaliadas na região de São de Joaquim é mais longo do que o observado em outras regiões produtoras do Brasil. A duração térmica é um bom indicador de desenvolvimento das fases do ciclo da videira. Para as regiões com altitude acima de 1.300m, deve-se dar preferência para o plantio de variedades com ciclos entre 15 de setembro até 15 de abril.

AbstractThe objective of the present work was to adapt the Prussian Blue reaction for the determination of ascorbic acid. The procedure was successfully applied for the determination of ascorbic acid in red and white grapes (Vitis vinifera L.) just previous ingathering. In the present work was used the red and white grapes from Murfatlar vineyard: Mamaia, Cabernet Sauvignon, Merlot, Pinot Noir, Chardonnay, Sauvignon, Muscat Ottonel and Riesling Italian. The results were situated in the range of 0.67 - 1.79 mg vitamin C/100g product for red grapes and respectively 0.50 - 1.49 mg vitamin C/100g for white grapes.

The control of leaf to fruit ratio by the practice of entire clusters removal from the vine upon berry set has been used in traditional vineyards in order to regulate yield and to improve chemical composition of the berries. Although this practice has been settled in temperate zones, little is known about grapevines behavior in tropical growing areas. The aim of this work was to evaluate the biochemical and agronomical responses of two Vitis vinifera cultivars (Merlot and Cabernet Sauvignon) grown in Caldas, Minas Gerais, Brazil, a new winegrape region. Grapevines were submitted to cluster thinning (0%, 50% and 75% of cluster removal) and trimming treatments (trimmed and untrimmed) imposed at pea size stage. The source-sink alteration by fruit removal and shoot trimming had impact on yield, leaf sugar metabolism and grape composition. Although there was an improvement in color intensity of the berries with reduction of fruit load, the cluster thinning practice should be avoided in vineyards grown in the south of Minas Gerais State without impairment of wine grape quality. On the other hand, shoot trimming practice should be recommended only for Merlot in order to improve sugar grapes from vines with no cluster removal.

The purpose of this paper was to establish the sensory characteristics of wines made from old and newly introduced red grape varieties. To attain this objective, 16 Brazilian red varietal wines were evaluated by a sensory panel of enologists who assessed wines according to their aroma and flavor descriptors. A 90 mm unstructured scale was used to quantify the intensity of 26 descriptors, which were analyzed by means of the Principal Component Analysis (PCA). The PCA showed that three important components represented 74.11% of the total variation. PC 1 discriminated Tempranillo, Marselan and Ruby Cabernet wines, with Tempranillo being characterized by its equilibrium, quality, harmony, persistence and body, as well as by, fruity, spicy and oaky characters. The other two varietals were defined by vegetal, oaky and salty characteristics; PC 2 discriminated Pinot Noir, Sangiovese, Cabernet Sauvignon and Arinarnoa, where Pinot Noir was characterized by its floral flavor; PC 3 discriminated only Malbec, which had weak, floral and fruity characteristics. The other varietal wines did not show important discriminating effects.

No Sul e Sudeste brasileiros, o excesso de chuvas durante o período de maturação afeta negativamente a qualidade dos vinhos tintos. Por outro lado, estas regiões possuem potencial para a elaboração de espumantes, uma vez que, para a elaboração desta bebida, a uva é colhida antes de completar o amadurecimento. No Estado de Minas Gerais, as condições de verão chuvoso estão presentes em todas as regiões de potencial vitícola, e a variação de altitude entre elas pode exercer influência na composição das uvas. Desta forma, este estudo buscou avaliar o potencial de maturação de uvas 'Chardonnay' e 'Pinot Noir' destinadas à elaboração de espumantes em dois locais de Minas Gerais: Cordislândia (873m) e Caldas (1.150m). As plantas foram enxertadas sobre 1.103 Paulsen e conduzidas em espaldeira. Foram avaliados os teores de sólidos solúveis totais, acidez total, ácidos málico e tartárico, e pH do mosto, tamanho e massa das bagas, compostos fenólicos nas cascas e sementes, antocianinas na casca e açúcares solúveis nas bagas, em duas safras consecutivas. As bagas apresentaram maior tamanho e massa quando cultivadas em Caldas. As uvas colhidas em Cordislândia apresentaram maior grau de maturação, sendo observados maior pH, maiores teores de glicose e frutose, e quantidade inferior de acidez e fenólicos totais nas sementes. Os maiores teores de ácido málico presentes nas uvas provenientes de Caldas sugerem que esta região pode ser mais indicada à produção de uvas para elaboração de vinhos espumantes.

HSSPME-GC/MS method was used to investigate the volatile compounds responsible for varietal character in the aroma of wine distillates made from 16 different red wine grape cultivars: Andre, Blue Frankish, Merlot, Cabernet Moravia, Rubinet, Pinot Noir, Ariana, Alibernet, Laurot, Dornfelder, Blauer Portugieser, Agni, Neronet, Zweigeltrebe, Cabernet Sauvignon, and Domina. The grapes were all grown in the same vineyard in South Moravia, an important viticultural region in the south of the Czech Republic bordering Austria. The isometric log-ratio transformation was used to compute variances prior to statistical analysis, and a compositional biplot was used to interpret the data and identify the main chemical markers. A comparison of the key terpenoids present in the aroma profiles indicated that these were consistent with the known relationships between the cultivars based on their parentage. There were similarities in the terpenoid elements of the aroma profiles of Blue Frankish and its relatives Andre, Laurot, Agni, and Zweigeltrebe, which are dominated by (Z)-linalool oxide, linalool, isoborneol, terpinen-4-ol and α-terpineol. On the other hand, the aroma profiles of Pinot Noir, Blauer Portugieser, Cabernet Sauvignon and their related hybrids are dominated by o-cymene, limonene, (E)-sabinyl acetate, and (E)-calamenene.
